Maurice Salad image

A famous department store's salad. I believe it was Macy's but not positive. My mother used to go there as a child and loved this salad. It's really good! Note: if you've never heard of onion juice as I hadn't, you can find it in the spice isle of the grocery.

14 ounces ham, cut into strips
14 ounces cooked turkey breast, cut into strips
14 ounces swiss cheese, cut into strips
1/2 cup slivered sweet gherkin
1 head iceberg lettuce, shredded
12 -16 pimento stuffed olives (or more to taste)
2 teaspoons white vinegar
1 1/2 teaspoons lemon juice
1 1/2 teaspoons onion juice
1 1/2 teaspoons sugar
1 1/2 teaspoons Dijon mustard
1/4 teaspoon dry mustard
1 cup mayonnaise
2 tablespoons chopped fresh parsley
1 hard-boiled egg, diced
salt

Steps:

  • To make the dressing combine vinegar, lemon juice, sugar, and mustards.
  • Stir to dissolve sugar.
  • Add mayonnaise, parsley, egg, and salt.
  • Mix well.
  • Combine ham, turkey, cheese, and pickles in a large bowl.
  • Toss in dressing.
  • Divide lettuce among plates.
  • Top with salad and garnish each plate with two olives.

This is a great main-dish salad! J.L.Hudson's in Detroit serves it as a signature dish and this is much like their recipe. (Or use the dressing on another salad if you wish) Enjoy!

2 tablespoons tarragon wine vinegar
1 tablespoon grated onion
1 cup mayonnaise
1 cup Miracle Whip
3 tablespoons parsley flakes
2 tablespoons chopped hard-boiled eggs
1 tablespoon minced chives
1 teaspoon sugar
mixed salad green
2 cups fully-cooked ham
2 cups swiss cheese
2 cups cooked chicken, cut into matchstick strips

Steps:

  • In a cup or small bowl, combine vinegar and grated onion and set aside to marinate.
  • Meanwhile, in medium bowl, combine mayonnaise, Miracle Whip, parsley flakes, eggs, chives, and sugar; stir until well mixed.
  • Add vinegar-onion mixture and mix thoroughly.
  • Chill until use.
  • Makes 2 cups dressing.
  • Line salad bowl with fresh salad greens.
  • Combine strips of ham, Swiss cheese, and chicken and turn into the middle of the bowl.
  • Cover with prepared dressing;according to taste.

  • Dressing ... Mix all the ingredients in a small bowl or measuring cup until well combined. The original recipe uses only onion juice; I prefer to use a fine grated white onion. And, do this right over the bowl to get all the juice. I like to refrigerate at least 1 hour before serving.
  • Salad ... As I mentioned, don't get fancy with the ingredients. Classic iceberg, ham and turkey, swiss (no baby swiss), etc. And, this is the secret to me ... the salad was always ice cold which is what made it so good. I add the pickles and olives to the bottom of the bowl, then the meat and cheese, and finish with the lettuce. Cover and refrigerate for at least 30 minutes, just so it is nice and cold.
  • Finish and Serve ... Add the dressing to your salad and toss to combine. I tend to dress my salads a bit on the 'light side,' But you can add as much dressing as needed. I even love to serve it on a cold salad or dinner plate; it is so good that way.
  • This can be served as a side salad with a bowl of soup, a lunch salad; or, a full dinner salad which I love. Serve with a basket of fresh dinner rolls for a delicious dinner. ENJOY!
