1 quart canola oil
2 large eggs
1/4 cup milk
3/4 cup panko breadcrumbs
3/4 cup Italian breadcrumbs
8 egg roll or spring roll wrappers
16 thin salami slices, 2 1/2 inches in diameter
8 1-ounce individually wrapped string-cheese sticks
Marinara sauce, for dipping
Grated parmesan cheese and chopped parsley, for garnish (optional)

Steps:

  • In a medium saucepan, heat the oil to 325 degrees F. Line a plate with paper towels.
  • In a shallow bowl, whisk the eggs and milk thoroughly. In another shallow bowl, combine the panko and Italian breadcrumbs.
  • Dredge 1 side of an egg roll wrapper in the egg wash. Place the wrapper egg wash-side up on a work surface and put 2 salami slices in the center of the wrapper, toward the edge closest to you. Place 1 cheese stick on top of the salami. Roll the wrapper edge closest to you over the filling. Tuck in the ends and continue to roll until you have an egg roll shape.
  • Dredge the rolled wrapper in the egg wash again and thoroughly coat in the breadcrumb mixture. Repeat with the remaining ingredients. (The rolls can be frozen for future use at this point.)
  • Add 1 or 2 rolls to the oil at a time and cook 2 to 3 minutes, until golden brown. Be careful not to overcook them or cook them on too high a temperature, as the wraps may explode. Transfer the fried cheese rolls to the paper towel-lined plate and serve immediately with marinara sauce. Garnish with parmesan and parsley, if desired.

This fried cheese is such a treat. There's a delicious mixture of cheeses that give these little cheese bites great flavor and a gooey texture. Dipped in marinara they make a great party appetizer or treat for game day.

1/2 c part-skim ricotta cheese
3-4 oz shredded mozzarella cheese
1 oz Asiago cheese, freshly grated
3 Tbsp Parmesan cheese, freshly grated
1 large egg, lightly beaten
1/2 c Italian bread crumbs
1/2 c Panko bread crumbs
1 tsp Italian seasoning
oil, for frying
warm marinara sauce, optional

Steps:

  • 1. In a large mixing bowl, combine ricotta, mozzarella, Asiago, and Parmesan cheeses.
  • 2. Add the egg and Italian seasoning. Mix well with clean hands.
  • 3. In a medium-sized skillet, heat oil over medium-high heat.
  • 4. While the oil is heating, take tablespoonfuls of the ricotta mixture and form into a 1 to 2-inch balls.
  • 5. Lightly roll the cheese balls into the Italian bread crumbs and then lightly into the Panko bread crumbs.
  • 6. Carefully place the cheese balls into the oil in small batches. Do not overcrowd the skillet.
  • 7. Let cook for about 1 to 2 minutes, then carefully flip the cheese balls over with a slotted metal spoon.
  • 8. Once the cheese balls have a golden brown color, remove them using the slotted spoon.
  • 9. Place on a paper-towel-lined plate to drain excess grease. Serve warm with warm marinara sauce.

Home-Fried Cheese Sticks image

These is an easy, cost-efficient way to make home-made fried cheese sticks. Taste just wonderful, light crispiness. More for your dollar and easily stored in the freezer for when you have a craving. I make 2 batches, one for the 'now' and one for later. Serve with your favorite dipping sauce.

24 (1 ounce) sticks string cheese
5 eggs, beaten
3 cups Italian seasoned bread crumbs
1 quart vegetable oil for frying, or as needed

Steps:

  • Remove string cheese sticks from plastic wrappings and cut the strings in half crosswise.
  • Line a baking sheet with parchment paper. Place eggs in a bowl and bread crumbs into a large shallow bowl.
  • Dip cheese stick halves into egg and roll in bread crumbs to completely coat the sticks; place breaded cheese sticks onto the prepared baking sheet. Allow cheese sticks to stand at room temperature for about 5 minutes to set, and repeat dipping in egg and bread crumbs to form a thick coating. Freeze breaded cheese sticks for at least 2 hours.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Deep fry cheese sticks, a few at a time, until the coating is golden brown and crisp and the cheese is soft, 5 to 8 minutes. Let sticks drain on paper towels; cool slightly and serve warm.
