ITALIAN (TURKEY) SAUSAGE SOUP



Italian (Turkey) Sausage Soup image

Great for those busy mornings or too-hot-to-cook days. Sometimes I use half the package of sausage to stretch the budget and it's still great. I've also doubled the seasonings for an extra kick. *NOTE* The recipe should say "pepper jack cheese" in the toppings.

Number Of Ingredients 12

2 medium potatoes, peeled and cut into 1-inch chunks
1 medium onion, cut into wedges
1 (1 1/2 lb) package Italian turkey sausage, cut into 1/2-inch slices
1 (28 ounce) can diced tomatoes, undrained
1 (14 ounce) can low sodium chicken broth
1/4 teaspoon oregano
1/4 teaspoon basil
1/4 teaspoon crushed red pepper flakes (or sweet red pepper flakes)
1/4 teaspoon garlic powder
monterey jack pepper cheese
parmesan cheese
crumbled cracker

Steps:

  • Place vegetables, broth, tomatoes, and meat in crockpot.
  • Stir in spices.
  • Cover and cook on low heat for 5-6 hours until veggies are tender.
  • Ladle into bowls and sprinkle with desired toppings.
  • *For stove-top method* Remove sausage from casings, dice onions, and chop potatoes into bite-sized chunks.
  • Drizzle a tablespoon or two of oil (I use extra virgin olive oil) into a large pot. Over med to med-hi heat, add in meat, using wooden spoon to help break it up into smaller pieces.
  • Once sausage has browned, add in onions (if desired, use some freshly minced garlic and add here). Saute' for a few minutes until softened.
  • Pour in tomatoes, broth, and stir in the seasonings (omit garlic powder if using fresh garlic). After liquid comes to a bubble, drop in the potatoes, reduce heat, and cook until potatoes are at desired tenderness.
  • Ladle into bowls and sprinkle with desired toppings.

During a winter storm last night I was trying to come up with something warm and hearty. This turned out very good so I thought I would share. Enjoy!

3 sweet Italian sausage links, cut in 1-inch slices
1 cup chopped onion
1 cup water
2 cups cooked turkey, cubed
turkey stock, to cover
4 -5 small red potatoes, cut in quarters
1 cup frozen chopped spinach
1 cup frozen cut green beans
salt and pepper (to taste)
1 pinch red pepper flakes (to taste)
1/4 teaspoon coriander
1/2 teaspoon thyme
1/2 teaspoon celery salt

Steps:

  • Saute the sausage and onions til brown and onions soft.
  • Add the rest of the ingredients and simmer for an hour.
  • Serve with a good crusty bread.

8 ounces hot Italian turkey sausage or 8 ounces sweet Italian turkey sausage
2 cups fat free chicken broth
1 (14 1/2 ounce) can diced tomatoes with basil oregano and garlic
1/2 cup uncooked small shell pasta
2 cups bagged baby spinach leaves
2 tablespoons grated fresh parmesan cheese or 2 tablespoons romano cheese
2 tablespoons chopped fresh basil

Steps:

  • Heat a large saucepan over medium heat.
  • Remove casings from sausage.
  • Add sausage to pan, and cook about 5 minutes or until browned, stirring to crumble.
  • Drain, return to pan.
  • Add broth, tomatoes and pasta to pan, bring to a boil over high heat.
  • Cover, reduce heat and simmer 10 minutes or until pasta is done.
  • Remove from heat, stir in spinach until wilted.
  • Sprinkle each serving with cheese and basil.

This is a low calorie soup with a lot of greens and veggies. It's a bit spicy from the sausage, but you can substitute plain ground turkey for the sausage. This recipe changes every time I make it - I put a lot of leftovers into the pot, but it always turns out delicious. Serve a big bowl with focaccia bread as a meal, as a starter, or as a quick lunch. This soup freezes and reheats well.

1 lb ground turkey (Italian sausage style)
2 large carrots, shredded (to cook faster)
4 cups kale, chopped
3 cups chard leaves, chopped
1 onion, chopped
1 cup sliced mushrooms
1 large fennel bulb, chopped
4 -6 cups broth (I use chicken or vegetable)
1 (16 ounce) can garbanzo beans
1 (16 ounce) can chopped tomatoes (optional)
4 cups fresh spinach

Steps:

  • -Brown ground meat in large sauce pot (6 quart with a lid).
  • -Turn heat to low and layer the following vegetables on top of meat according to cooking time: carrots, onions, fennel, kale, chard, mushrooms.
  • -Place the lid on the pan and allow vegetables to steam for about 20 minutes; then, fill up the pot with enough broth to completely cover the vegetables, you can add tomatoes at this time.
  • -Cook until the carrots and fennel are tender, then add rinsed and drained garbanzo beans.
  • -Place the fresh spinach in the bottom of your serving bowl and spoon the soup on top. The spinach should stay green and be simply wilted. This gives the soup a fresher taste.

1 package (19-1/2 ounces) Italian turkey sausage links, casings removed
3 large tomatoes, chopped
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
3 medium carrots, thinly sliced
1-1/2 cups cut fresh green beans (1-inch pieces)
1 medium zucchini, quartered lengthwise and sliced
1 large sweet red or green pepper, chopped
8 green onions, chopped
4 cups chicken stock
1 can (12 ounces) tomato paste
1/2 teaspoon seasoned salt
1/3 cup minced fresh basil

Steps:

  • In a large skillet, cook sausage over medium heat 8-10 minutes or until no longer pink, breaking into crumbles; drain and transfer to a 6-qt. slow cooker., Add tomatoes, beans, carrots, green beans, zucchini, pepper and green onions. In a large bowl, whisk stock, tomato paste and seasoned salt; pour over vegetables., Cook, covered, on low 6-8 hours or until vegetables are tender. Just before serving, stir in basil. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add stock if necessary.

1 lb sweet Italian turkey sausage links

9 ounces three-cheese tortellini
0.5 (8 ounce) bag Baby Spinach
1 tablespoon fennel seed
garlic powder (to taste)
basil (to taste)
salt (to taste)
pepper (to taste)
oregano (to taste)

Steps:

  • Remove sausage casings, brown sausage and drain. Add sausage to soup pot along w/ onion, garlic diced tomatoes, broth, fennel seeds and spices simmer for at least 1 hour.
  • 15 mins before eating, bring to a rapid boil and add spinach and tortellini.
  • serve w/ a sprinkle of parm cheese, salad and crusty rolls -- soooo yummy!
