Italian Turkey Burgers image

Seasoned with oregano and Parmesan cheese, these plump burgers are a delicious change-of-pace entree. I like to serve them on crusty Italian bread with warmed spaghetti sauce, but you can also use hamburger buns. -Mary Tallman, Arbor Vitae, Wisconsin

1/4 cup canned crushed tomatoes
2 tablespoons grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound ground turkey
8 slices Italian bread, toasted
1/2 cup meatless spaghetti sauce, warmed

Steps:

  • In a large bowl, combine the first 6 ingredients. Crumble turkey over mixture and mix well. Shape into four 3/4-in.-thick oval-shaped patties. , Grill patties on an oiled rack, uncovered, over medium heat or broil 4 in. from the heat on each side until a thermometer reaches 165° and juices run clear, 6-8 minutes. , Place a patty on each of 4 slices of bread. Drizzle with spaghetti sauce; top with remaining bread.

This is a great slow-cooker recipe and something different for a family gathering. This tastes like thanksgiving dinner anytime of year.

5 1/2 lbs bone-in skinless turkey breast
1/2 cup chopped green pepper
1 medium onion, chopped
1/4 cup chili sauce
3 tablespoons white vinegar
2 tablespoons dried oregano or 2 tablespoons italian seasoning
4 teaspoons beef bouillon granules
11 kaiser rolls or 11 hard sandwich buns, split

Steps:

  • Place the turkey breast, green pepper and onion in a 5-qt. slow cooker coated with nonstick cooking spray.
  • Combine the chili sauce, vinegar, oregano and bouillon; pour over turkey and vegetables.
  • Cover and cook on low for 5-6 hours or until meat juices run clear and vegetables are tender.
  • Remove turkey with a slotted spoon, reserving cooking liquid.
  • Shred the turkey with two forks; return to cooking juices.
  • Spoon 1/2 cup onto each roll.

1 cup plain breadcrumbs
1/2 cup finely grated Parmesan, plus more for serving
1/4 cup chopped fresh basil
1/4 cup chopped fresh Italian parsley
1/4 cup whole milk, at room temperature
1 tablespoon ketchup, optional
1 tablespoon tomato paste
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 large eggs, at room temperature
2 cloves garlic, minced
1 small onion, finely chopped
1 pound ground dark turkey meat
1 pound spicy Italian turkey sausage links, casings removed
Extra-virgin olive oil, for drizzling
1/4 cup extra-virgin olive oil
3 large cloves garlic, smashed and peeled
1 large onion, finely chopped 1 teaspoon kosher salt, plus more to season
1/2 teaspoon freshly ground black pepper, plus more to season
3/4 cup chopped fresh basil
2 teaspoons finely ground fennel seeds
2 teaspoons dried oregano
Two 28-ounce cans crushed tomatoes
1/2 cup low-sodium chicken broth, optional

Steps:

  • Preheat the oven to 400 degrees F.
  • For the meatballs: In a large bowl, combine the breadcrumbs, Parmesan, basil, parsley, milk, ketchup if using, tomato paste, salt, pepper, eggs, garlic and onions. Using a wooden spoon, stir to blend. Add the ground turkey and sausage meat. Using fingers, gently mix all the ingredients until thoroughly combined.
  • Using a 1-ounce cookie scoop or a small ice cream scoop, form the meat mixture into 1 1/2-inch balls (22 to 24 meatballs). Place the meatballs on a heavy nonstick baking sheet, spacing apart. Drizzle with olive oil and bake until cooked through, 15 minutes.
  • For the tomato sauce: Heat the olive oil in a large deep skillet with 2-inch-high sides over medium-high heat. Add the garlic, onions, salt and pepper. Cook for 5 to 6 minutes. Add 1/2 cup of the basil, the fennel, oregano and crushed tomatoes. Bring to a simmer. Cook over medium heat until the sauce thickens slightly, stirring occasionally, 15 to 20 minutes. Stir in the remaining 1/4 cup basil. Adjust the seasoning with more salt and pepper if desired.
  • Add the meatballs to the tomato sauce and simmer until the meatballs are heated through, about 10 minutes. Thin the sauce with chicken stock, 1/4 cup at a time, if needed.
  • Serve with grated Parmesan alongside.

1 lb ground turkey (I use frozen, thawed)
2 tablespoons yellow onions, finely diced
2 tablespoons fresh parsley, chopped and packed
2 garlic cloves, minced
1 slice whole wheat bread, made into crumbs
1 tablespoon dried Italian seasoning
1 egg, lightly beaten
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 tablespoon olive oil (for frying)

Steps:

  • In a large mixing bowl, thoroughly combine ground turkey, finely diced yellow onion, chopped parsley, minced garlic, whole wheat bread crumbs, Italian seasoning, egg, salt, and freshly ground black pepper.
  • Shape turkey mixture into four patties.
  • Heat a large skillet over medium heat, and add olive oil. When oil is hot, add turkey patties and cook (adjusting heat if necessary) until they are nicely browned and cooked through--about 4 to 6 minutes per side.
  • Serve hot.

1 pound lean ground turkey
⅓ cup chopped fresh basil
3 cloves garlic, crushed, or more to taste
2 teaspoons salt
1 teaspoon freshly ground black pepper
4 slices provolone cheese
4 ciabatta rolls
¼ cup mayonnaise
⅛ cup prepared pesto
½ red onion, sliced
4 leaves romaine lettuce

Steps:

  • Combine turkey, basil, garlic, salt, and pepper in a bowl. Divide into 4 equal portions and form into hamburger patties.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Grill patties for about 4 minutes per side. Place provolone slices on the patties; continue to cook until cheese melts. Place ciabatta rolls on the grill and cook until browned to your liking, 2 to 3 minutes.
  • Mix mayonnaise and pesto in a small bowl until thoroughly combined. Spread onto the rolls. Place the turkey patties on the rolls and top with sliced red onion and lettuce.

3 tablespoons mayonnaise
1 clove garlic, finely chopped
8 ounces ground turkey
12 ounces sweet Italian turkey sausage, removed from casings
2 teaspoons extra-virgin olive oil
8 thin slices pancetta
4 ounces sliced Italian fontina cheese
Four 3-by-3-by-1/2-inch squares focaccia, split and lightly toasted
1 plum tomato, sliced
1 cup baby arugula

Steps:

  • Mix the mayonnaise with the garlic in a small bowl and set aside. Using your hands, mix together the turkey and turkey sausage in a large bowl until just combined. Form this mixture into four 1-inch-thick patties.
  • Preheat a large skillet over medium heat. Add the olive oil and pancetta slices and cook the pancetta on both sides until crisp, about 3 minutes. Drain on paper towels and reserve.
  • Place the same skillet over medium-high heat and add the burgers. Cook, turning once, until cooked all the way through, about 5 minutes per side. Top with the fontina and cook until just melted.
  • To serve, place the burgers on the focaccia bottoms. Top with tomato slices, pancetta and arugula. Spread the focaccia tops with garlic mayonnaise, set on top of the burgers and serve.
