- In a large bowl, combine the first 6 ingredients. Crumble turkey over mixture and mix well. Shape into four 3/4-in.-thick oval-shaped patties. , Grill patties on an oiled rack, uncovered, over medium heat or broil 4 in. from the heat on each side until a thermometer reaches 165° and juices run clear, 6-8 minutes. , Place a patty on each of 4 slices of bread. Drizzle with spaghetti sauce; top with remaining bread.

- Place the turkey breast, green pepper and onion in a 5-qt. slow cooker coated with nonstick cooking spray.
- Combine the chili sauce, vinegar, oregano and bouillon; pour over turkey and vegetables.
- Cover and cook on low for 5-6 hours or until meat juices run clear and vegetables are tender.
- Remove turkey with a slotted spoon, reserving cooking liquid.
- Shred the turkey with two forks; return to cooking juices.
- Spoon 1/2 cup onto each roll.

CLASSIC ITALIAN TURKEY MEATBALLS

- Preheat the oven to 400 degrees F.
- For the meatballs: In a large bowl, combine the breadcrumbs, Parmesan, basil, parsley, milk, ketchup if using, tomato paste, salt, pepper, eggs, garlic and onions. Using a wooden spoon, stir to blend. Add the ground turkey and sausage meat. Using fingers, gently mix all the ingredients until thoroughly combined.
- Using a 1-ounce cookie scoop or a small ice cream scoop, form the meat mixture into 1 1/2-inch balls (22 to 24 meatballs). Place the meatballs on a heavy nonstick baking sheet, spacing apart. Drizzle with olive oil and bake until cooked through, 15 minutes.
- For the tomato sauce: Heat the olive oil in a large deep skillet with 2-inch-high sides over medium-high heat. Add the garlic, onions, salt and pepper. Cook for 5 to 6 minutes. Add 1/2 cup of the basil, the fennel, oregano and crushed tomatoes. Bring to a simmer. Cook over medium heat until the sauce thickens slightly, stirring occasionally, 15 to 20 minutes. Stir in the remaining 1/4 cup basil. Adjust the seasoning with more salt and pepper if desired.
- Add the meatballs to the tomato sauce and simmer until the meatballs are heated through, about 10 minutes. Thin the sauce with chicken stock, 1/4 cup at a time, if needed.
- Serve with grated Parmesan alongside.
ITALIAN TURKEY PATTIES

- In a large mixing bowl, thoroughly combine ground turkey, finely diced yellow onion, chopped parsley, minced garlic, whole wheat bread crumbs, Italian seasoning, egg, salt, and freshly ground black pepper.
- Shape turkey mixture into four patties.
- Heat a large skillet over medium heat, and add olive oil. When oil is hot, add turkey patties and cook (adjusting heat if necessary) until they are nicely browned and cooked through--about 4 to 6 minutes per side.

- Combine turkey, basil, garlic, salt, and pepper in a bowl. Divide into 4 equal portions and form into hamburger patties.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate. Grill patties for about 4 minutes per side. Place provolone slices on the patties; continue to cook until cheese melts. Place ciabatta rolls on the grill and cook until browned to your liking, 2 to 3 minutes.
- Mix mayonnaise and pesto in a small bowl until thoroughly combined. Spread onto the rolls. Place the turkey patties on the rolls and top with sliced red onion and lettuce.

- Mix the mayonnaise with the garlic in a small bowl and set aside. Using your hands, mix together the turkey and turkey sausage in a large bowl until just combined. Form this mixture into four 1-inch-thick patties.
- Preheat a large skillet over medium heat. Add the olive oil and pancetta slices and cook the pancetta on both sides until crisp, about 3 minutes. Drain on paper towels and reserve.
- Place the same skillet over medium-high heat and add the burgers. Cook, turning once, until cooked all the way through, about 5 minutes per side. Top with the fontina and cook until just melted.
- To serve, place the burgers on the focaccia bottoms. Top with tomato slices, pancetta and arugula. Spread the focaccia tops with garlic mayonnaise, set on top of the burgers and serve.
