ITALIAN STYLE CRUSTLESS QUICHE



Italian Style Crustless Quiche image

Since my SO is on a modified low carb diet and I'm not, I wanted to come up with something Italian that we both would enjoy. And this seemed to fit the bill, please feel free to add or even omit some of the things you would like instead. For this recipe a smoked Italian sausage was used. I want to thank Chef Meg G. for inspiring me to try to make a quiche of my own. :) Submitted to "ZAAR" on June 23,2008.

1/2 lb fully cooked Italian sausage
1/3 cup finely chopped onion
1/3 cup finely chopped green pepper
1 tablespoon margarine
1 cup milk
5 large eggs
1/2 teaspoon italian seasoning
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 cup mozzarella cheese, divided

Steps:

  • Preheat oven to 350°F.
  • Place margarine in a quiche dish or a deep dish pie plate, place in oven and let melt for about 3 to 5 minutes.
  • While margarine is melting, lightly brown sausage, onion and green pepper for about 10 minutes or until onion and pepper is slightly soft, drain if needed.
  • Beat together eggs, milk, Italian seasoning, salt, and pepper until light and slightly foamy.
  • Then add in sausage mixture, and 3/4 cup of mozzarella cheese.
  • Pour into dish, and top with remaining cheese.
  • Bake for 25 to 30 minutes or until center is puffy.
  • Test for doneness with a toothpick inserted between the center and edge of pan.
  • Let set for 10 minutes.
  • This will serve 6 with a salad or 4 without a salad.

In the mood for a savory egg dish? Spicy Italian sausage and smoky Provolone make a delicious quiche perfect for breakfast or lunch with a big green salad.

4 eggs, lightly beaten
1 1/2 cups milk (or cream)
1 cup Italian sausage, cooked and crumbled
1 red pepper, roasted, peeled, and chopped
1 1/2 cups provolone cheese, grated
kosher salt
fresh cracked black pepper
1 teaspoon oregano or 1 teaspoon mixed italian seasoning
cooking spray

Steps:

  • Preheat the oven to 375 degrees.
  • Mix the eggs and milk together and whisk well.
  • Sesaon the egg mixture with salt, pepper, and herbs.
  • Spray the oil into a deep pie dish.
  • Layer the sausage and cheese and red pepper into the pie dish and pour the egg mixture on top.
  • Pop into the oven and bake until middle is firm, about 40-45 minutes.
  • Serve with hot Italian bread.

1/2 cup chopped onion
2 garlic cloves, chopped
1 tablespoon olive oil
3/4 cup flour
1/4 teaspoon salt
1/4 teaspoon pepper
8 ounces colby-monterey jack cheese, shredded
1 cup chopped cooked ham
1 (4 ounce) can chopped mushrooms, drained
1 cup milk
2 eggs

Steps:

  • Saute the onion and garlic in the olive oil in a small saucepan until the onion is tender but not brown. Combine the flour, salt and pepper in a bowl and mix well. Stir in the cheese, ham and mushrooms.
  • Whisk the milk and eggs in a bowl until well blended. Stir in the onion mixture. Add the milk mixture to the cheese mixture and mix well. Spoon into a greased 9-inch pie plate. Bake at 425 degrees for 30 minutes. Serve with fresh fruit and muffins.

4 ounces soften cream cheese (15 sec. in microwave)
4 tablespoons milk
1/2 cup whipping cream
6 large eggs
1 1/2 cups grated parmesan cheese
1 cup grated colby-monterey jack cheese
2 cups cooked sausage (we like a combo of meat) or 2 cups cooked bacon, etc. (we like a combo of meat)
1 cup vegetables (green pepper, onion, frozen spinach, mushrooms etc)

Steps:

  • Mix together until smooth cream cheese & milk.
  • Whisk in whipping cream a little at a time until well blended.
  • (DON"T use beaters) add eggs whisking after each egg. Using a spoon stir in remaining ingredients including salt & pepper to taste.
  • Grease muffin cups.
  • Spoon into muffin cups filling to the top.
  • Bake at 350 for 20-25 minutes. Until a toothpick comes out clean.
  • If frozen reheat in microwave for 2-21/2 minutes.
