ITALIAN SAUSAGE & ROASTED PEPPER SANDWICHES



Italian Sausage & Roasted Pepper Sandwiches image

4 Italian sausages (mild or hot)
2 tablespoons olive oil
1 large onion, thinly sliced and separated
1 garlic clove, minced
6 ounces jarred roasted red peppers (more or less to your taste)
1 (15 ounce) can Italian-style tomatoes
1 tablespoon dried basil
1 tablespoon sugar
1 tablespoon salt
1 tablespoon ground black pepper
4 French rolls or 4 hot dog buns

Steps:

  • Cook sausages in large frying pan over medium heat until golden brown. Remove from pan and set aside.
  • Add oil, onion, garlic and peppers to pan drippings. Cook, stirring occasionally, until vegetables are soft, about 10-15 minutes.
  • Stir in tomatoes, breaking up with a spoon.
  • Stir in basil, sugar, salt and black ground pepper.
  • Add sausages, cover and cook for 15 minutes.
  • Remove cover, increase heat to medium high and cook for 5 minutes, stirring occasionally.
  • Place sausages and pepper and tomato mixture in bun and enjoy!
