ITALIAN SAUSAGE AND SPINACH QUICHE



Italian Sausage and Spinach Quiche image

This savory and creamy deep dish quiche features mozzarella and Ricotta cheeses that melt and mingle with the Italian sausage, spinach, onions and bell peppers -- Giving you a real "flavor bomb!"

2 deep dish pie shells
1 lb italian sausage, cooked, drained and crumbled
6 eggs, beaten
1 (16 ounce) carton ricotta cheese
16 ounces mozzarella cheese, shredded
2 (10 ounce) packages frozen chopped spinach, thawed and well drained
1/2 cup yellow onion, chopped
1/4 cup red bell pepper, chopped
1 dash kosher salt
1 dash white pepper
1 teaspoon dried oregano leaves, rub between fingers to waken flavor
1 teaspoon dried basil leaves, rub between fingers to waken flavor
1/2 teaspoon onion powder
hot sauce, to taste (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Bake pie shells for 5 minutes.
  • Meanwhile, in a large mixing bowl thoroughly combine the remaining ingredients.
  • Pour the filling into the pie shells.
  • Bake for 35 to 45 minutes, or until set.

Number Of Ingredients 10

2 unbaked pastry shells
1 pound bulk Italian sausage
4 cups (16 ounces) finely shredded part-skim mozzarella cheese
1 medium onion, thinly sliced
1 medium green pepper, thinly sliced
1 medium sweet red pepper, thinly sliced
6 large eggs
2 cups 2% milk
1 teaspoon minced garlic
1/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 400°. Line unpricked crusts with a double thickness of heavy-duty foil. Bake 4 minutes. Remove foil; bake 4 minutes longer. Remove from oven; leave oven on., In a large skillet, cook sausage over medium heat until no longer pink; drain. Spoon sausage into crusts; sprinkle with mozzarella cheese. Top with onion and peppers. In a large bowl, whisk eggs, milk and garlic. Pour over peppers; sprinkle with Parmesan cheese., Cover edges of quiches loosely with foil; place on a baking sheet. Bake at 400° 35-40 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting. Freeze option: Cover and freeze unbaked quiches up to 3 months. To use, remove from the freezer 30 minutes before baking (do not thaw). Preheat oven to 400°. Cover edges of crust loosely with foil; place on a baking sheet. Bake 50-60 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting.

2 (9 inch) refrigerated pie crusts (unbaked)
1 lb bulk sausage
1 dozen egg
8 ounces shredded monterey jack cheese or 8 ounces cheddar cheese

Steps:

  • Preheat oven to 350.
  • Coat muffin tins with cooking spray. Unroll pie crusts and cut out circles with 3-inch cookie cutter. Place each round in bottom of tin; push dough down and against sides and prick with a fork. Bake 10 minutes, until crusts are slightly golden.
  • Meanwhile, cook sausage over medium heat, breaking apart meat until no longer pick, about 10 minutes.
  • In a mixing bowl, whisk eggs slightly, then add cooked sausage and cheese and stir well.
  • Scoop 1/4 cup egg mixture into each pie crust. Bake 25 minutes.
