ITALIAN WINE BISCUITS



Italian Wine Biscuits image

Simple, biscotti-like cookies flavored with red wine, these biscuits are perfect for dunking.

Number Of Ingredients 7

1 cup full-bodied red wine (E.g. Chianti)
3/4 cup flavorless oil (E.g. canola, aovcado, or grapeseed)
4 cups all-purpose flour
1 pinch largeof salt
1 tablespoon baking powder
1 cup sugar + more for dusting outside
1 large egg (beaten with 1 teaspoon of water)

Steps:

  • Pre-heat the oven to 350 degrees F.
  • Mix the wine and oil together and set aside.
  • Whisk together the flour, salt, baking powder and the cup of sugar.
  • Add the wine and oil mixture to the dry ingredients and mix them together with a fork until they are well combined into a stiff dough. It is a light red, rather odd color.
  • Pinch off about 2 tablespoons of the dough and roll/pull it into a 7-9 inch cigar or pencil shape.
  • Form the cookie into a circle, bowtie, figure eight, or spiral. Brush the top with the beaten egg and sprinkle a bit of sugar on part or all of the top. alternatively, roll part of the cookie in sguar, just enough to lightly coat it. Place the cookie on a parchment or silicone mat-lined cookie sheet and repeat with the rest of the dough.
  • Bake the cookies for 25-30 minutes, until lightly browned on the bottom and slightly hard to the touch.
  • Let them cool for a few minutes on the cookie sheet, then remove them to a wire rack to finish cooling.

This Italian Wine Cookie recipe was handed down through many generations. Thay are a crisp, not-too-sweet, EASY TO MAKE cookie that are great with coffee or tea.

3 cups all-purpose flour
1 teaspoon baking powder
3 tablespoons white sugar
1 cup dry red wine
½ cup vegetable oil
⅓ cup granulated sugar for decoration

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine the flour, baking powder and sugar. Add the wine and oil. Mix with a large fork and then with your hands.
  • Roll small pieces of dough between hands to make "logs" then shape into circles. The circles should be no bigger than the 2 inches in diameter. Roll cookies in extra sugar and place on cookie sheet.
  • Bake at 350 degrees F (175 degrees C) for 25 minutes or until slightly brown. After cookies cool they should be hard and crisp.

Steps:

  • Preheat oven to 375º.
  • Mix wet ingredients into dry.
  • Knead until smooth.
  • Cut off piece of dough about the size of a pencil and roll between palms.
  • Knot the dough like making a pretzel.
  • Brush top of biscuits with milk or egg yolk.
  • Bake for about 10-12 minutes.

These are unusual--a not so sweet biscuit with a unique flavor that goes great with a cup of coffee or an after dinner glass of wine.

2 cups flour
3 -4 cups flour
3 teaspoons baking powder
1 cup sugar
1 cup oil
1 cup dry red wine (like a good table burgundy)
1 egg, slightly beaten with 1 tsp water

Steps:

  • In medium size bowl place sugar, oil and wine; mix together till completely combined.
  • Stir 2 cups flour and baking powder together; add to wet mixture and blend well.
  • Add 3-4 cups more flour, slowly mixing as you go until mixture pulls away from bowl and holds its shape.
  • Pinch off small pieces and roll into logs as thick as your finger and 3-4 inches long. Shape into rings and place on cookie sheet. When sheet is full, brush tops with beaten egg mixture and bake at 350° for 20 minutes.
  • Cool on wire rack.
  • Don't be alarmed at the color of the dough-it's kinda grey with a pink blush.
