Italian-Style Braised Chicken in Wine image

This Italian-style braised chicken in wine is made by gently simmering chicken pieces in a sauce of wine, peperoncino, and tomatoes until tender. Fancy enough for company yet completely doable on a weeknight.

One (3- to 4-pound) whole chicken (cut into 8 pieces)
Sea salt
3 tablespoons extra-virgin olive oil or lard
1 large onion (halved and cut into 1/4-inch-thick (6-mm) slices, crosswise)
2 garlic cloves (smashed)
1 teaspoon peperoncino or red pepper flakes
1/2 cup dry white wine
4 medium ripe tomatoes (roughly chopped)
5 or 6 fresh basil leaves

Steps:

  • Season the chicken pieces well with sea salt.
  • In a large skillet over medium heat, warm the lard or oil. When the fat shimmers, add the chicken, skin-side down, and cook, turning once and adjusting the heat as needed, until browned on all sides, 12 to 15 minutes. If the chicken skin sticks to the pan, don't force it. Wait a little longer and try again. The chicken will let go when it's ready.
  • Transfer the chicken to a plate. Reduce the heat under the pan to low. Stir in the onion and garlic, season with salt, and cook until the onion is softened and translucent, 8 to 10 minutes.
  • Add the peperoncino or pepper flakes and cook until fragrant, about 1 minute. Add the wine, increase the heat to medium, and scrape up any browned bits from the sides and bottom of the pan. Cook until the alcohol aroma dissipates and the liquid has nearly completely evaporated, about 3 minutes.
  • Toss in the tomatoes and basil and season with salt and stir to combine.
  • Return all the chicken pieces except the breasts to the pan and add enough water to barely reach halfway up the sides of the chicken. Cook, stirring and turning the pieces occasionally, until the chicken is tender, the tomatoes have collapsed, and the sauce has a slightly thicker consistency, 25 to 35 minutes.
  • Return the chicken breasts to the pan and cook until the internal temperature of the breast reaches 165°F (74°C), about 10 minutes more.
  • Transfer the chicken to a platter or serve directly from the skillet, spooning the sauce from the pan over the chicken. Dive in.

1 tablespoon yellow mustard seed
1 teaspoon fennel seed
8 medium bone-in chicken thighs, trimmed
1 teaspoon coarse sea salt
1/2 teaspoon fresh ground black pepper
2 tablespoons olive oil
1 cup coarsely chopped onion
2 garlic cloves, finely minced
1/2 cup dry white wine
1 tablespoon parsley flakes
14 1/2-ounce can diced tomatoes, undrained

Steps:

  • Heat a large skillet on medium high heat. Add mustard and fennel seeds to toast; cook and stir until fragrant (about 2 minutes). Transfer from hot pan to avoid over-toasting. Crush toasted seeds and set aside.
  • Sprinkle chicken with salt and pepper. Heat oil in the same skillet on medium-high heat. Cook chicken in batches, 5 minutes per side or until golden brown. Remove chicken from skillet; cover and keep warm.
  • Add onion; cook and stir about 5 minutes or until softened. Add minced garlic and cook stirring for 2 minutes. Stir in wine, parsley, tomatoes, crushed toasted seeds and chicken. Bring to a low boil. Reduce heat to low; cover. Let simmer on low for at least 20 minutes, stirring occasionally.
  • If serving right away, remove cover and simmer an additional 10 to 15 minutes or until chicken is cooked through. If time permits, cover and transfer to warm oven (about 250-degrees F) to continue to braise for 2-3 hours until ready to serve.
  • Serve over rice or pasta, if desired.

1 (4- to 5- pound) whole chicken, cut up, including the backbone
Kosher salt, to taste
Freshly ground black pepper, to taste
3 to 4 slices of bacon , about 1/4 pound, diced
1/2 cup onion, chopped
1/2 cup leek, white and light green parts, chopped
4 to 5 garlic cloves, peeled
1 cup white wine
1 tablespoon tomato paste
2 cups chicken stock, or water
2 to 3 sprigs fresh rosemary
1 bay leaf

Steps:

  • Gather the ingredients and heat the oven to 300 F.
  • Dry the chicken well with paper towels and season generously with salt and pepper.
  • Heat a Dutch oven over medium-high heat. Cook the bacon until it's crispy and the fat has rendered out. Remove and set aside.
  • Add 1 breast (skin-side down), 1 thigh (skin-side down), 1 drumstick, and 1 wing. Brown the chicken for 4 to 5 minutes, then remove to a platter and repeat with the other 4 pieces. Finally, brown the backbone, skin-side down, and remove.
  • Add the onion, leek , and garlic and sauté until the onion is translucent, about 3 to 4 minutes. Add the wine and boil, scraping any roasted bits from the bottom of the pan. Stir in the tomato paste.
  • Return the chicken and bacon to the pot. Add the chicken stock or water. Season with salt (if needed). Add the rosemary and bay leaf and bring to a boil.
  • Cover with a tight-fitting lid and transfer to the oven. Cook for one hour, or until an instant-read thermometer registers at least 165 F . Remove the lid and let the chicken cool in the pot for 15 minutes before serving.

Steps:

  • In a large pan or skillet, fry the bacon over medium heat for about 4 minutes until crisp. Drain on paper towels and crumble when the bacon is cool enough to handle.
  • Drain the fat from the pan, leaving 2 tablespoons.
  • Cook the onion over medium heat until soft.
  • Add the garlic, thyme, fennel seeds, pepper and bay leaf and cook while stirring for about one minute until fragrant.
  • Add the wine and bring to a boil for about 2 minutes. Deglaze the pan by scraping up any browned bits.
  • Add tomatoes and their juice and season to taste with salt. Stir well to combine.
  • Put the chicken thighs into your slow cooker and sprinkle over the bacon.
  • Add the tomato sauce.
  • Place the cover on the slow cooker and cook until the chicken is falling off the bone.
  • Serve with rice, pasta or just on its own, sprinkled with parsley.

14 oz. (400 g) half can of a 28 oz. (800 g) can whole peeled tomatoes
2 tablespoons olive oil
1 cup diced onion (1/2 onion)
3 cloves garlic, minced
10 fresh Italian basil leaves, chopped
salt to taste
1 teaspoon brown sugar
1 tablespoon chopped Italian parsley for garnishing

Steps:

  • Rinse the chicken thighs with water and pat dry with paper towels. Season with salt and black pepper on both sides of the chicken. Puree the tomatoes in a food processor.
  • Heat up the Xtreme braiser on high heat. When it's fully heated, arrange the chicken thighs, skin side down first. Brown both sides of the chicken. Remove the chicken from the braiser, save the juice that seeps out from the chicken.
  • Turn the heat to medium and add the olive oil to the braiser. Saute the onion and garlic, for a couple of minutes or until the diced onion becomes soft. Add the tomato puree and basil, stir to combine well. Transfer the chicken and the juice into the braiser, cover the braiser with its lid and simmer on low heat, for about 15-20 minutes, or until the chicken becomes tender. Add salt and brown sugar, stir to combine well. Garnish with chopped parsley and serve immediately.

2-3 Tablespoons olive oil, (divided)
3 large chicken breasts (fillet into 6 thin cuts of chicken breast)
Kosher salt (to taste)
Ground black pepper (to taste)
1 medium onion (sliced into thin rings)
2-3 cloves fresh garlic, (smashed)
1 cup red wine
1 14.5 ounce can chicken broth ((you can also use beef broth if that's what you have on hand))
2 Tablespoons tomato paste
Water ((optional))

Steps:

  • In a large skillet, heat 2 Tablespoons olive oil over medium-high heat.
  • Pat chicken pieces dry with paper towel and season well with salt and pepper on both sides.
  • In batches, sear each chicken piece until browned on both sides, about 1-2 minutes per side and then place them into a side plate. Make sure you don't overload the pan!
  • Once all the chicken is browned and out of the pan, add the remaining Tablespoon of oil (only if needed) and then add sliced onion and smashed garlic.
  • Season them with salt and pepper to taste and saute them stirring constantly for a minute or two.
  • Next, add the wine to the pan and scrape up the brown bits with a wooden spoon to deglaze the pan.
  • After the wine has simmered for a minute or two, add broth and tomato paste. Stir well to combine and add the chicken pieces back into the pan. Bring it to a boil.
  • Once boiling, reduce the heat to medium, cover and simmer for an hour, stirring periodically. If it starts to dry out, add a little water (I didn't run into this issue). Serve immediately after the hour is up.

This is my favorite Italian Braised Chicken recipe. The chicken thighs are first seared until the skin is crispy then they're gently simmered in a delicious tomato and olive sauce. The chicken becomes super flavorful and tender. This is a healthy dinner recipe you don't want to miss.

2 teaspoons olive oil
8 chicken thighs (skin on or off, your choice)
Salt and pepper (for seasoning the chicken)
1 medium onion (finely minced)
4 cloves garlic (chopped)

1 cup coarsely chopped olives
2 tablespoons each: capers and balsamic vinegar
1 teaspoon each: chopped rosemary and oregano

Steps:

  • Set your oven to 400 degrees.
  • Heat the oil in a large, ovenproof pan over medium-high heat. Add the chicken thighs to the pan, skin side up. Season the chicken skin with a pinch of salt and a little pepper on each piece. Once some of the fat has been released into the pan, flip the chicken over and cook until the skin is brown and crispy, about 7-8 minutes. If using skinless thighs, cook them until the meat starts to brown. Remove the chicken from the pan. (While the chicken is cooking, prep the rest of the ingredients.)
  • Pour out all but a few teaspoons of the oil. Add the onion to the pan and let it cook until soft, about 3-4 minutes. Add the garlic and cook for 1 minute more. Add the tomato paste to the pan and let it cook until it has darkened slightly and is fragrant smelling, about 3 minutes.
  • Add all the remaining ingredients to the pan and stir well. Season to taste with sea salt and black pepper. Nestle the chicken back into the pan, skin side up. Pop the chicken into the oven and let it cook for 40 minutes. Remove the chicken from the oven and serve it right away.

2 lb boneless, skinless, chicken thighs
sea salt, to taste

1 1/2 cups white wine, such as Pinot Grigio
1 cup low sodium chicken stock
1 bay leaf
5 cloves garlic, peeled and sliced
2 tbl chopped rosemary
1/2 cup pitted black olives, cut in half
zest of 1 lemon

Steps:

  • In a medium pot with a lid, heat EVOO over medium heat. Meanwhile, season chicken thighs with salt and pepper and working in batches, brown them on both sides. Remove chicken thighs. Add white wine, bring to a boil and let cook for around 5 mins, uncovered, at a simmer. Add chicken stock, bay leaf, garic and fresh tomatoes. Bring to a boil and let cook for another 5 mins uncovered at a simmer. Return chicken thighs to the pot, add the rosemary and olives, cover and cook at a simmer for about 15 mins or until chicken thighs are fully cooked. Taste liquid and season with salt and pepper to taste bearing in mind that olives will add salt. Serve immediately with sauce on top and sprinkle the lemon zest over all.

  • Dry the chicken well on paper towels and sprinkle it generously on both sides with the sea salt, black pepper and a pinch of paprika. The paprika will help with the browning.
  • In a wide cast iron pot heat up a lug of the olive oil on medium low flame, just enough to coat the bottom nicely. Add the garlic cloves and sear them on low heat until golden brown all over making sure not to burn them. Remove from the pan set aside and reserve.
  • Add the chicken pieces to the hot oil skin side down first and sear until golden brown on both sides. ( work in batches if necessary, don’t overcrowd the pan and add a little bit of oil in between batches if necessary)
  • Remove the chicken and set it aside while you add the wine and scrape all the brown bits from the bottom of the pan. Add the chicken back to the pan together with the garlic, thyme and bay leaf. Make sure you add enough wine to come up ¾ of the way up the sides of the chicken. Bring to a simmer and allow it reduce for 5 minutes.

  • Season the chicken on all sides with 2 teaspoons of the salt and black pepper to taste. Sprinkle the flour over the chicken and turn it to coat.
  • Heat the oil over medium-high heat in a 3 or 4-quart deep skillet or saute pan until it begins to shimmer. Add the chicken in 2 batches and sear until golden on both sides, about 5 minutes per side. Remove to a platter.
  • Add the onion and garlic to the pan and cook until softened and fragrant, about 3 minutes. Pour in the wine and let it bubble 1 minute. Add the stock or water and 1/4 teaspoon salt. Return the chicken to the pan and add the tomatoes. Put the herb sprigs on top of the chicken.
  • Cover the pan and turn the heat down to a very low simmer. Cook 30-35 minutes for boneless chicken and 60-75 minutes for bone-in pieces. The chicken meat should be tender and falling off the bone.

  • Pour off all but 2 tablespoons of fat from the skillet. Add the onion, garlic, crushed red pepper and bay leaf and cook over moderate heat, stirring, until the onion is softened. Add the bell pepper and poblano and cook until softened. Stir in the tomato paste and cook for 1 minute. Add the wine and boil for 2 minutes, scraping up any browned bits from the bottom of the skillet. Add the tomatoes and their juices, the vinegar and marjoram sprigs and bring to a simmer.
  • Set the chicken legs in the skillet skin side up. Bake in the upper third of the oven for 35 minutes, until the chicken is cooked through. Discard the marjoram and season the sauce with salt and pepper. Garnish with the chopped marjoram and serve.

  • Bring tomato mixture to a simmer over medium-high heat then nestle chicken back into pan, making sure it's nearly submerged in the sauce. Reduce heat to medium-low, cover pan and let simmer over medium-low heat 45-60 minutes or until chicken is fall-apart tender.
  • Remove rosemary sprigs, thyme sprigs, basil leaves, and bay leaf from sauce and discard. Toss spinach into hot tomato sauce and chicken until wilted then stir in butter until melted.
