ITALIAN WEDDING SOUP WITH MEATBALLS
This soup is just wonderful. It's so filling and chock-full of veggies. I first simmered up a batch of this soup when it was featured in our local newspaper, the Palm Beach Post Times. You can also substitute chicken sausage, rolled up into little balls, for the meatballs here.-Amy McGowen, Jupiter, Florida

ITALIAN WEDDING SOUP WITH TURKEY MEATBALLS
Classic Italian wedding soup is beloved for its simplicity and satisfaction. This turkey version is lean, while meatballs stay moist by simmering in broth. Start with the most flavorful broth you can get your hands on (homemade is ideal, but store-bought works well too), then pack the meatballs with flavor (garlic and parsley) and staying power (egg, panko and cheese, to gently bind them together). Traditionalists may be tempted to add a small grated onion to the meat mixture, and sweat celery and carrots into the broth, but for a quick weeknight meal, you won't miss them here. If speed is your game, roll the mixture into 12 large meatballs-or opt for 20 smaller ones if serving kids (mini meatballs will cook through even faster). Either way, finish with a healthy dose of olive oil, lemon, cheese and dill, or any fresh Italian herb you may have on hand.

Steps:
- Combine the chicken broth and 2 tablespoons oil in a large pot and bring to a boil.
- Meanwhile, add the turkey, panko, parsley, egg, garlic, salt, pepper and 1/2 cup Parmesan to a large bowl. Mix with a fork or clean hands until combined. Gently roll the mixture into 12 medium (2-inch) or 20 small (1 1/2-inch) meatballs and transfer to a baking sheet lined with lightly oiled aluminum foil or a silicone baking mat.
- Heat the broiler to high and set an oven rack 6 to 8 inches from the heat. Broil the meatballs until brown on two sides, turning halfway through, about 3 to 4 minutes per side.
- Add the pasta to the boiling broth and cook over medium until al dente, then lower the heat to a low simmer.
- Add the meatballs to the broth and simmer on low until completely warmed through, 3 to 5 minutes, stirring occasionally. Remove from the heat, and add the spinach and lemon zest, stirring well, to wilt. Season with salt and pepper to taste.
- Divide the soup among four bowls. Drizzle each with olive oil, sprinkle with more Parmesan and squeeze a bit of lemon over the top. Scatter the dill over the top, or stir in.

Continue to cook for 8-10 minutes or until the meatballs are cooked through stirring often.
- In a bowl whisk together the egg and 2 tablespoon of parmesan cheese. Turn heat down on the soup to medium. Start stirring the soup around in a circle. Continue stirring and gradually drizzle in the egg mixture to form thin strands of egg; ~ 1 minute. Taste for seasoning and adjust accordingly.

Steps:
- Make the meatballs: Preheat the oven to 350°F. Line a baking sheet with aluminum foil and set an oven-proof roasting rack over top. Spray the rack generously with nonstick cooking spray.
- In a large bowl, beat the egg with the chives, sage and garlic. Add the remaining meatball ingredients and mash with your hands until evenly combined. Roll the mixture into tablespoon-size balls, about 1 inch in diameter (it will make approximately 50 meatballs), and place on the prepared rack. Bake for 15 to 18 minutes, or until lightly browned and cooked through. Set aside.
- Meanwhile, start the soup. In a large soup pot or Dutch oven over medium heat, heat the olive oil. Add the onions, carrots, and celery and cook, stirring frequently, until the vegetables are softened, about 8 minutes. Add the chicken broth, beef broth, water, wine, bay leaf, salt and pepper and bring to a boil. Add the pasta and cook, uncovered, at a gentle boil until the pasta is al dente, 8 to 10 minutes (or according to package directions). Taste the soup and adjust the seasoning, if necessary. Reduce the heat to low and add the spinach and meatballs. Simmer for a few minutes, until the spinach is wilted and the meatballs are warmed through. Ladle into bowls and serve with grated Parmigiano Reggiano.
- Freezer-Friendly Instructions: The soup can be frozen for up to 3 months but wait until you reheat the soup to add the pasta. Defrost the soup in the refrigerator for 12 hours and then reheat it on the stovetop over medium heat until simmering, add the pasta, and cook until the pasta is tender.

Steps:
- For the meatballs:
- Add beef and pork to a large mixing bowl. Add in bread crumbs, parsley, oregano, parmesan, egg, 1 tsp salt and 1/4 tsp pepper.
- Gently toss and break up mixture with hands to evenly coat and distribute. Shape mixture into very small meatballs, about 3/4 inch to 1 inch and transfer to a large plate.
- Heat 1 Tbsp olive oil in a large non-stick skillet over medium-high heat. Add half of the meatballs and cook until browned, turning occasionally (to brown on 2 or 3 sides), about 4 minutes total.
- Transfer meatballs to a plate lined with paper towels while leaving oil in skillet. Repeat process with remaining meatballs (note that meatballs won't be cooked through at this point, they'll continue to cook through in the soup).
- For the soup:
- While meatballs are browning, heat 1 Tbsp olive oil in a large pot over medium-high heat. Add carrots, onions and celery and saute until veggies have softened about 6 - 8 minutes, add garlic and saute 1 minute longer.
- Pour in chicken broth, season soup with salt and pepper to taste and bring mixture to a boil. Add in pasta and meatballs, reduce heat to light boil (about medium or medium-low).
- Cover and cook, stirring occasionally until pasta is tender and meatballs have cooked through, about 10 minutes, while adding in spinach during the last minute of cooking. Serve warm, sprinkle each serving with parmesan cheese.

ITALIAN WEDDING SOUP WITH LAMB MEATBALLS RECIPE - (4/5)

Steps:
- 1. For the meatballs: combine lamb, egg, bread crumbs, mint, and lemon zest in a large bowl. Season with salt and pepper, then mix well by hand. Form into balls about the size of golf balls (you should have around 18, 1-oz. balls). Place the flour in a shallow bowl, and roll the meatballs in it, tapping off any excess. Heat the vegetable oil in a large frying pan over medium heat. Fry the meatballs in batches until golden brown on all sides, about 7-9 minutes total. To test to see if they are done, stick a metal knife into the center of a meatball - if the blade comes out hot, they are done (but don't burn yourself checking!). Drain the meatballs on a paper-towel covered plate and set aside. 2. For the soup: Heat the olive oil in a medium saucepan over medium heat. Add the onion and garlic and saute until translucent, about 4-5 minutes, stirring to prevent them from burning. Reduce the heat to low and add the thyme and red pepper flakes. Add the peas or beans and cook over low heat for 10 minutes, stirring occasionally. Add the mustard greens and stock and bring to a simmer. Add the fresh pasta and cook over low heat until tender, 2 to 3 minutes (if using pre-cooked noodles, cook just long enough to heat through). Place the meatballs in the saucepan and cook until heated through, another 1-2 minutes. Adjust the seasoning with salt, and serve, garnished with the parsley leaves.

- Add remaining 1 Tablespoon olive oil to the same dutch oven and reduce heat to medium low. Add the onion, carrots and celery and cook 5 minutes, until softened. Add garlic and cook 30 seconds, or until fragrant. Season with salt, pepper, and dill.
- Add wine and deglaze the pan, scraping the bottom of the pot with a wooden spoon to loosen any browned bits. Add the chicken broth and bring to a boil.
- Add pasta and meatballs to the pot and cook 8-10 minutes, until pasta is tender and meatballs are cooked through. During the last minute of cooking, add spinach and let it wilt.

Steps:
- Preheat the oven to 350 degrees F.
- For the meatballs, place the ground chicken, sausage, bread crumbs, garlic, parsley, Pecorino, Parmesan, milk, egg, 1 teaspoon salt, and 1/2 teaspoon pepper in a bowl and combine gently with a fork. With a teaspoon, drop 1 to 1 1/4-inch meatballs onto a sheet pan lined with parchment paper. (You should have about 40 meatballs. They don't have to be perfectly round.) Bake for 30 minutes, until cooked through and lightly browned. Set aside.
- In the meantime, for the soup, heat the olive oil over medium-low heat in a large heavy-bottomed soup pot. Add the onion, carrots, and celery and saute until softened, 5 to 6 minutes, stirring occasionally. Add the chicken stock and wine and bring to a boil. Add the pasta to the simmering broth and cook for 6 to 8 minutes, until the pasta is tender. Add the fresh dill and then the meatballs to the soup and simmer for 1 minute. Taste for salt and pepper. Stir in the fresh spinach and cook for 1 minute, until the spinach is just wilted. Ladle into soup bowls and sprinkle each serving with extra grated Parmesan.

- In a large bowl, mix all of the ingredients for the meatballs together except for the olive oil. I find this is easiest to do with my hands by squishing until everything is evenly combined. Just try not to overwork the meatballs or they will be tough.
- Shape the meat mixture into small 1-inch meatballs. I usually end up with about 50-60 meatballs, depending on how small I make them.
- Heat 2 tablespoons of the olive oil in a large pot or dutch oven over medium-high heat. Add the meatballs in a single layer and brown for 2-3 minutes on each side (the meatballs don't need to be cooked all the way through, just browned to give them color and flavor). You may need to work in batches to brown all of the meatballs. Transfer the browned meatballs to a plate. Drain any grease.
- Using the same pot or dutch oven, add the remaining 1 tablespoon of olive oil. When it is hot, add the carrots, onion, and celery. Saute for 4-5 minutes until the vegetables begin to soften.

- While meatballs are baking, begin making soup by heating olive oil in a large soup pot over medium-high heat. Add onions, carrot, garlic and salt and pepper to taste. Saute until veggies are tender, about 6-7 minutes, stirring frequently. Pour broth into the pot then bring to a boil. Reduce heat to low and simmer.
- Add meatballs and pasta to the pot and cook until pasta is tender, about 10 minutes. Stir in spinach right before serving and heat until wilted, about 2 minutes. Check for seasoning and add salt and pepper to taste.

- Meatballs: Add all the meatball ingredients except the ground chicken in a bowl. Use a fork to mix everything together. Add the ground chicken to the bowl and mix using a spatula until *just* combined. Don't overwork the meat here. Shape a 1/2 tablespoon of meatball mixture into a ball between your palms and place on a plate. Repeat with the remaining mixture.
- Sear The Meatballs: this is an optional step but it does as more flavor to the soup. Heat a large, nonstick skillet over medium heat, add 1 teaspoon of the oil to the skillet and 1/3 of the prepared meatballs and let them sear for 1-2 minutes (flipping as needed to sear all sides). You don't want to cook the meatballs, just develop color. Place on a large plate, set aside.
- Prepare the soup: Heat the remaining tablespoon of olive oil in a large stockpot or Dutch oven over medium-high heat. Add the mirepoix and saute the veggies for 4-5 minutes or until the veggies soften a bit, add the garlic during the last 30 seconds and stir until fragrant. Add the chicken broth along with a cup of water and allow the soup to come to a boil before adding in the pasta. My pasta box said 9 minutes total. During the last 5 minutes or your pastas cooking time, gently add the meatballs to the soup. To help regain a simmer quickly, kick the heat up to high. Test the pasta for doneness, then turn off the heat, stir in the baby spinach and lemon zest. Taste for seasonings and adjust salt and pepper to taste. Serve warm.
