This recipe is an old time favorite of ours. All the kids love these and so do we! Hope you get all the nice compliments I do when you make them.

8 ounces almond paste
1 ½ cups butter, softened
1 cup white sugar
4 eggs
1 teaspoon almond extract
2 cups all-purpose flour
¼ teaspoon salt
5 drops green food coloring
5 drops yellow food coloring
5 drops red food coloring
1 (12 ounce) jar seedless raspberry jam, heated
1 (12 ounce) package semisweet chocolate chips, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Break almond paste into a large bowl, and beat in butter, sugar, eggs, and almond extract until light and fluffy. Beat in the flour and salt. Split batter into three equal portions, mixing one portion with green food coloring, one with yellow, and one with red. Spread each portion out to 1/4 inch thickness into the bottom of an ungreased 9x13 inch baking pan.
  • Bake each layer for 12 to 15 minutes in the preheated oven, until lightly browned. Allow to cool.
  • On a cookie sheet or cutting board, stack the cakes, spreading tops of the first two layers with raspberry jam. Spread melted chocolate over top of the third layer. Chill in the refrigerator 1 hour, or until jam and chocolate are firm. Slice into small rectangles to serve.

Easy and quick, this is the best Italian wedding cookies recipe. Loaded with walnuts & hazelnuts then coated in powder sugar like a snowball.

1 1/2 cup salted butter (organic)
4 tsp vanilla extract
3/4 cup ground walnuts
3/4 cup ground hazelnuts
3 cup all purpose flour
3/4 cup powder sugar
1/2 cup powder sugar for dusting

Steps:

  • Preheat your oven to 325"F.
  • In a large mixing bowl cream together the butter and 3/4 c of the powder sugar until fluffy.
  • Add the vanilla extract and little by little the ground walnuts and hazelnuts. Mix until combined.
  • Start adding in the flour little by little until mixed in.
  • Prepare your largest cookie sheet and using a small spoon (or small ice-cream scoop) form the cookies into balls, the size of a golfball or smaller. You should have about 45 cookies.
  • Arrange all the cookies on the baking sheet without touching each other.
  • Bake the cookies in the preheated 325"F oven for 20 minutes.
  • Remove the wedding cookies from the oven and allow them to cool off just for a few minutes before rolling them over the reserved powder sugar. It's best that they are still a little warm so the sugar coating sticks nicely.
  • Arrange the cookies on a platter and dust with more powder sugar on top before serving.

Also sometimes called 'Mexican wedding cookie', 'Russian tea cakes', or 'butterballs', can also be shaped into crescents. You can also substitute pecans and they are very good as well. This is the best version of these I have ever seen, it was given me by a friend who grew up in central Europe.

1 1/2 cups butter or 1 1/2 cups margarine, unsalted
3/4 cup confectioners' sugar
3/4 teaspoon salt
1 1/2 cups almonds, finely ground
1 tablespoon vanilla (plus 1 1/2 teaspoons)
3 cups all-purpose flour, sifted
confectioners' sugar (extra)

Steps:

  • Preheat oven to 325°F (165°C).
  • Cream butter or margarine in a bowl, gradually add confectioners' sugar and salt. Beat until light and fluffy.
  • Add almonds and vanilla.
  • Blend in flour gradually and mix well.
  • Shape into balls (or crescents) using about 1 teaspoon for each cookie.
  • Place on ungreased cookie sheets, and bake for 15-20 minutes. Do not brown.
  • Cool slightly, then roll in the extra confectioners' sugar.

  • In a standing mixer fitted with a paddle attachment, combine the butter and powdered sugar. Beat on medium speed until pale, light and fluffy. Add the almond extract, salt and egg. Beat again for 1 minute. Add the flour and almond flour and mix on low until just combined.
