Number Of Ingredients 13

1/4 cup butter, cubed
2 ounces unsweetened chocolate
2 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
3/4 cup sugar
FROSTING:
2 tablespoons butter
1 ounce unsweetened chocolate
1 teaspoon vanilla extract
1-1/2 cups confectioners' sugar
7-1/2 teaspoons hot water
Edible glitter and jimmies, optional

Steps:

  • In a microwave, melt butter and chocolate; stir until smooth. Transfer to a large bowl and cool completely. Beat in eggs and vanilla. Combine flour and sugar; gradually add to egg mixture, Drop by tablespoonfuls 1 in. apart onto a preheated waffle iron. Bake for 1 minute or until set. Remove to a wire rack to cool completely., For frosting, in a microwave, melt butter and chocolate; stir until smooth. Transfer to a small bowl. Beat in vanilla. Gradually add confectioners' sugar alternately with water, beating until smooth. , Frost waffle cookies to within 1/4 in. of edges. Decorate with glitter and jimmies if desired. Let stand until frosting is set.

  • Heat pizzelle iron. Drop batter by teaspoonfuls onto the center of the patterns, close the lid and cook for about 30 seconds. Test the cooking time on the first one, because temperatures may vary. Remove cookies carefully from the iron and cool on wire racks.

Batter:
6 eggs
1/4 cup butter
1/4 cup oil
1/4 shortening
1 1/2 cups sugar
Pinch of salt
2 teaspoons baking powder
1 teaspoon anise extract or any other flavors you like: lemon, almond, coconut, orange, mint, maple, cinnamon
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
Cooking spray
wax paper
Holiday or coffee tins

Steps:

  • Beat the eggs on medium speed until thick.
  • Add the oil, shortening, and softened butter and mix until combined well.
  • Add the extracts, ( you can add any flavor you want, anisette, vanilla, orange, maple, peppermint, lemon or coconut can be used, however, traditionally anisette is the flavor.
  • Reduce the speed to low and gradually add the flour, mix till well Incorporated.
  • Preheat the electric pizzelle iron according to the manufacturer's directions (can be found online).
  • Note: Always spray each waffle area between making cookies even with nonstick.
  • When ready, drop batter by a heaping tablespoon or use a gravy ladle, again follow the pizzelle manual.
  • When ready, open iron and remove pizzelle.
  • Stack on wax paper in between till cooled.
  • Repeat until all batter is used.
  • Store in airtight containers like coffee cans so they stack easily or holiday tins for gift giving.

Steps:

  • Beat eggs and sugar in a mixing bowl for approximately 2 to 3 minutes, until they're fluffy and a light yellow color.
  • While still beating, slowly drizzle in the melted and cooled butter. Then add the vanilla extract.
  • In a separate bowl, whisk the baking powder into the flour. Using a spatula, fold the dry ingredients into the wet ingredients until just incorporated.
  • Bake one medium cookie scoop of batter (about 1 1/2 tablespoons) per mold in a pizzelle maker until golden brown, about 30 seconds. Remove with a wooden spatula to a cooling rack and cool completely.

GRANDMA'S WAFFLE COOKIES (PIZZELLES)

I could always count on finding these authentic Italian cookies in Grandma's freezer, and her house always smelled yummy! They're great dipped in milk. Grandpa was a blacksmith and actually made their waffle iron, which I still have, although I use my modern electric pizzelle maker when making these.

½ cup vegetable oil
½ cup butter, melted and cooled
1 teaspoon anise oil, or more to taste

You need a pizelle maker in order to make this recipe. I accidentally added almond extract and thought it tasted great, but Nana did not use it.

2 cups granulated sugar
1/2 cup margarine, melted (not butter)
1/2 cup canola oil
1 teaspoon vanilla, to taste
1 teaspoon almond extract, to taste (optional)
3 tablespoons anise extract (one whole 1 ounce bottle)
4 cups all-purpose white flour
4 teaspoons baking powder
powdered sugar, to dust cookies (optional)

Steps:

  • Prepare pizelle iron according to manufacture's instructions.
  • Beat eggs well with sugar, then blend in the slightly cooled melted margarine.
  • Add oil, extracts, baking powder, and flour (add this 1 cup at a time, mixing in slowly).
  • Pour small ladlefuls of batter onto your heated pizelle iron and cook for just 30 seconds to 1 minute or according to the directions on your pizelle iron.
  • They will be lightly golden when cooked, but still soft -- remove quickly with tongs to a cooling rack.
  • As the next cookie is baking, the first cookie will cool and get crisp -- dust both sides withpowderd sugar, and remove to plate.
  • Serve with coffee.
