This is one of my family's favorite vinaigrettes. It's fresh and flavorful with an extra dose of garlic, plus red wine vinegar and lemon juice acidity. It reminds me a bit of the dressing at Olive Garden...although I'd say this Italian vinaigrette recipe is even better!

4 medium cloves garlic, minced
1/4 c. extra-virgin olive oil
1/4 c. red wine vinegar
2 T. freshly squeezed lemon juice
2 T. dried oregano
1 T. Dijon mustard
1-1/2 tsp. kosher salt
1 tsp. sugar
1/4 tsp. freshly ground black pepper

Steps:

  • Place all ingredients in a small bowl or tall jar. Use an immersion blender to combine and emulsify. If you don't have an immersion blender, cover jar tightly and shake ingredients vigorously (just know that there will be more noticeable pieces in the vinaigrette).
  • Serve with this Italian Chopped Salad.

Easy Italian Vinaigrette image

Our Italian vinaigrette is made with extra-virgin olive oil rather than salad oil, and it features minced garlic, oregano, and chopped fresh parsley.

3/4 cup extra-virgin olive oil
1/4 cup white wine vinegar
1/2 teaspoon minced garlic (about 1 clove)
1 1/2 teaspoons chopped fresh oregano
1 tablespoon chopped fresh parsley
Kosher salt , to taste
Ground white pepper, or freshly ground black pepper, to taste

Steps:

  • Place all the ingredients in a blender and mix for about 10 seconds or until fully combined.
  • Transfer to a glass bowl and let stand for 30 minutes to let the flavors meld. Pour into a jar or bottle, cover tightly, and store in the refrigerator until ready to use.
  • Give the dressing a good whisk or shake immediately before serving.​

This vinaigrette is great on any type of mixed green, pasta, or marinated vegetable salads. This recipe is an accompaniment for Tuscan White Bean Salad with Spinach, Olives, and Sun-Dried Tomatoes.

Yield Makes about 1 cup vinaigrette

Number Of Ingredients 7

1/4 cup red wine vinegar
3 garlic cloves, minced
1 teaspoon Dijon mustard
2 tablespoons chopped fresh oregano or 2 teaspoons dried oregano
3/4 cup extra-virgin olive oil
Salt and freshly ground black pepper to taste
N/A freshly ground black pepper

Steps:

  • Combine the vinegar, garlic, mustard, and oregano in a small bowl. Add the olive oil in a slow, steady stream while whisking constantly until all the oil is incorporated. Season with salt and pepper and refrigerate in an airtight container until ready to use or up to 1 week.

4 ounces pancetta, cut into 1/4-inch dice
1 tablespoon chopped fresh parsley
3 to 4 sprigs fresh thyme, leaves chopped
1/2 cup red wine vinegar
Kosher salt and freshly cracked black pepper
1 clove garlic, grated on a rasp grater
1 teaspoon dried oregano
2 tablespoons Dijon mustard
2 tablespoons honey
3/4 cup extra-virgin olive oil
1/2 head iceberg lettuce, cut into bite-size pieces (about 6 cups)
1 small head romaine, cut into bite-size pieces (about 8 cups)
1/4 head red cabbage, cut into small dice
6 to 8 cremini mushrooms, cut into small dice
2 carrots, peeled and cut into small dice
2 small Roma tomatoes, cut into small dice
4 ounces crumbled Gorgonzola cheese (about 1/2 cup)

Steps:

  • For the pancetta: Heat a medium skillet over low-medium heat and add the pancetta in a single layer. Cook, stirring occasionally, until crispy, 10 to 15 minutes. Remove to a paper towel-lined plate in a single layer until ready to top.
  • For the sweet Italian vinaigrette: Put the parsley and thyme in a medium bowl and add the vinegar. Let stand for a few minutes, then whisk in some salt and pepper. Whisk in the garlic, oregano, mustard and honey. While whisking, slowly add the olive oil and whisk until combined.
  • For the salad: Place the iceberg and romaine in a large bowl. Top with the red cabbage, mushrooms, carrots, tomatoes, Gorgonzola and pancetta. Before serving, pour in a healthy amount of dressing and mix well. Top with black pepper if desired.

  • Note -- I recommend the Bacon Dressing, Mustard Dressing, and Balsamic Vinaigrette on strong greens such as escarole, curly endive, and dandelion greens.
  • Note -- The sweeter version of the mustard dressing is great for a vinegar coleslaw if you discover that you have accidentally gotten one of those occasional cabbages that are a touch on the bitter side.
  • Note -- feel free to play with other seasonings, more complex blends, flavored oils, and flavored vinegars. Once you've learned the technique you can customize your salad dressing to suit just about any meal.
