LEFTOVER SKILLET TURKEY PASTA
Turkey Pasta Skillet, a healthy, fast and easy leftover turkey or chicken skillet recipe, perfect weeknight or weekend meal.

Steps:
- Bring the water to a boil in a large pot, add a little salt and halfway through the cooking of the vegetables add the pasta to the water and cook until al dente.
- In a large pan on medium heat add the olive oil, garlic, onions, sliced pepper, mushrooms, oregano, basil and salt, cook for approximately 10 minutes stirring occasionally, then add the white wine, turn up heat to high and cook until it evaporates approximately 2 minutes, turn heat down to medium, add the chopped tomatoes and cook for approximately 5 minutes stirring occasionally, add the cooked turkey (or chicken) and heat thoroughly, (taste for salt) add the cooked pasta and 1/2 a ladle of pasta water, cook for approximately 30-60 seconds on high heat stirring often. Serve immediately sprinkled with parmesan cheese if desired. Enjoy!

I found this recipe on dLife, and I couldn't find it's equivalent on this site. I like this recipe, it's very easy to make and tastes delish.

Steps:
- Spray a medium skillet with cooking spray and heat at the medium-high setting until heated throughout.
- Place turkey and garlic in the skillet and brown the ingredients until turkey begins to crumble. Add tomatoes, seasoning and pepper and stir contents until they boil. Cover the pan and simmer at a reduced heat for ten minutes. Remove from stove and set aside.
- Preheat the broiler.
- Slice polenta into 12-rounds. Set on a coated baking sheet and broil for ten minutes on each side.
- Remove tray from oven and place an even amount of the turkey mixture on each piece of polenta.
- Top with Cheese.
- This is a great tasting recipe that is well seasoned and easy to make.

- In a small bowl, combine Italian seasoning, paprika, black pepper and crushed red pepper. In a medium bowl, combine ground turkey, seasoning mixture and garlic; use a wooden spoon or your clean hands to mix well.
- Coat an extra-large nonstick skillet with cooking spray. Heat the skillet over medium-high heat. Add ground turkey mixture and onion; cook 6 to 8 minutes or until browned, using a wooden spoon to break up meat as it cooks. Remove from skillet; cover and keep warm.
- Add the water to the same skillet; bring to boiling over medium-high heat. Add pasta; cook according to package directions until al dente. Drain pasta, reserving 1/2 cup of the cooking liquid. Return pasta and the reserved cooking liquid to the skillet; stir in tomato sauce, salt and cooked turkey. Heat through. Remove from heat; stir in spinach. Sprinkle with Parmesan cheese.
