SUMMER SQUASH SAUTE
A simple summer squash saute.

Steps:
- Cut the zucchini and squash crosswise into 1/2 inch slices.
- Halve the cherry tomatoes.
- In a large frying pan, heat the olive oil over medium heat and add all the squash rounds.
- Cook, stirring frequently until fork tender, about 10 minutes.
- Add the garlic, tomatoes, and fresh herbs.
- Stir to mix and continue to cook until the tomatoes soften.
- Season with salt and pepper and serve warm or at room temperature.

PASTA WITH SUMMER SQUASH RECIPE

Steps:
- Bring a large pot of salted water to a boil. Add pasta and cook uncovered over high heat.
- While pasta is cooking, heat olive oil in a large saute pan over medium heat. Add the squash, red pepper and salt. Cook stirring occasionally until squash is starting to soften about 8 minutes.
- When pasta is cooked to just under al dente reserve 1/2 cup of the pasta cooking water, then drain the pasta.
- Add the pasta, Parmagiano-Reggiano cheese, half of the chopped basil and the reserved cooking water to the pan with the squash, and stir together over the heat until well combined.
- Transfer the pasta to serving plates. Sprinkle with remaining basil and serve.
ITALIAN SUMMER SQUASH
A delicious way to use zucchini and yellow squash. You can adjust the seasonings to your own taste, and add salt and pepper, if desired. Be sure to use younger, 5 to 7 inch squash.

- Sautee garlic and onions in butter, until tender.
- Wash and scrub squash. Slice into 1 inch coins. Place in pan with onions and garlic.
- Cover and cook over medium heat 5 minutes.
- Stir, and add spices. Cover and cook 3 to 5 minutes more. Do not overcook.
- Squash should be a little firm. Remove to bowl, sprinkle with cheese.

ITALIAN SAUSAGE STUFFED SUMMER SQUASH RECIPE - (4.2/5)

- Preheat the oven to 350°F. Lightly spray a 9 x 13 baking dish with cooking spray. Use a spoon to remove the seeds from the squash and cut in half. Simmer covered skin side down, in 1/2 inch of water for around 7-8 minutes. Remove from the water and set aside to cool. [tip: If you have a food steamer, it works extremely well for this step, too.] In a small skillet, sauté the diced onion in a light drizzle of olive oil over medium high heat until translucent. Season with salt and pepper to taste. Add the Italian sausage and cook until brown. Next add, the minced garlic and spinach leaves. Sauté just until the spinach begins to wilt then remove from the heat. In the same pan, melt 1 tablespoon of butter. Add the cubed bread and sauté for 1-2 minutes until golden. Sprinkle the Italian seasoning over the bread cubes while toasting Add the bread cubes, spinach and sausage mixture to a mixing bowl. Mix together with 1 cup of shredded Italian cheese blend cheese and 2 tablespoons of grated parmesan cheese. Set aside. Use a teaspoon to remove the seeds from the steamed squash. Place side by side in the baking dish. Season with salt and pepper to your taste. You can drizzle them with melted butter, if you like for added flavor. Divide the filling evenly between the squash halves and sprinkle the remaining cheese on top. Bake for 30-35 minutes until the filling is golden and the squash is cooked through. Sprinkle with chopped parsley and serve hot. Cook's note: Use a sharp knife to cut a flat piece from the backside of the squash to stabilize it. This will prevent the squash from rolling and it will remain upright while cooking.
ITALIAN ZUCCHINI AND SQUASH
I got on a kick of finding new recipes for zucchini and squash this summer. My husband's and my favorite is the simplest dish so far. It takes very little prep time, a little patience while your kitchen becomes filled with this delicious aroma, and amazement at how simple this is. It was a very easy way to impress my husband for a nice romantic meal.

- In a large bowl, toss all of the ingredients together until well coated.

- Preheat oven to 350 degrees F (175 degrees C).
- Saute carrots, zucchini, squash, onion and bell pepper in a large saucepan with a small amount of olive oil. Season with garlic salt and pepper. Saute vegetables for approximately 5 minutes and pour in spaghetti sauce. Stir, cover and simmer until vegetables are slightly tender.
- Slice polenta into 1/2 inch circles and season with garlic salt and pepper. Heat enough oil in a medium skillet so as to completely cover the entire bottom of the pan. Pan fry seasoned polenta in hot oil, about 3 minutes per side. Remove from oil and layer the slices in a large casserole dish. Spoon the vegetable mixture over the polenta and then sprinkle with Mozzarella and Parmesan cheese.
- Bake casserole for 30 minutes. Remove from oven and let cool for 5 minutes before serving.
