1 (6 ounce) can italian tuna in olive oil (yes, drain the oil)
1 teaspoon fresh lemon juice
2 teaspoons balsamic vinegar
2 tablespoons heavy cream
1 tablespoon unsalted butter
1/4 teaspoon salt
2 -3 thin lemon slices, for garnish
crackers, for serving or baguette, slices for serving

Steps:

  • Add the tuna, lemon juice, and balsamic vinegar to the bowl of a food processor; process until combined.
  • Add in the cream, butter, and salt; pulse until well blended.
  • Transfer to a serving bowl and keep chilled/covered until ready to serve.
  • Top with the lemon slices as a garnish.
  • Serve cold with crackers or baguette slices.

This is a quick, healthy alternative to the usual tuna salad with mayonaise. Depending on your personal likes or dislikes of vinegar, I would suggest to add the vinegar gradually according to your taste. I prefer to make a sandwich with toast that has been lightly buttered with margarine.

1 (6 ounce) can albacore tuna in water
1 tablespoon extra virgin olive oil
1 tablespoon balsamic vinegar or 1 tablespoon red wine vinegar
1 pinch sugar
1 pinch salt
fresh ground black pepper (to taste)

Steps:

  • Drain Tuna , sqeezing out water.
  • Mash the tuna in a small bowl and add the rest of the ingredients. Serve on bread or toast.

2 tablespoons lemon juice, from 1 large lemon
1 tablespoon capers, drained and chopped
1 teaspoon Dijon mustard
1/4 cup extra-virgin olive oil
Kosher salt
One 15-ounce can cannellini beans, drained and rinsed
One 6.35-ounce jar olive oil-packed tuna, drained
2 cups baby arugula
2 small treviso, cut into 2-inch pieces
1 Belgian endive, cut into 2-inch pieces
1 small bulb fennel, shaved on a mandoline or sliced thinly with a knife
1/2 cup fresh Italian parsley leaves

Steps:

  • Whisk together the lemon juice, capers and Dijon mustard in a large bowl. While continuing to whisk, drizzle in the olive oil in a steady stream. Whisk in 1/4 teaspoon salt. Add the beans to the dressing and mash gently with a spoon. Add the tuna, flaking it with a fork into bite-size pieces. Toss lightly to coat. Top the tuna mixture with the arugula, treviso, endive, shaved fennel, parsley leaves and 1/2 teaspoon salt. Using your hands, toss the salad together, bringing the dressing up from the bottom of the bowl until everything is coated evenly.

This is really delicious, especially if you are low-carbing it. It's a great alternative to "plain" tuna salad. Can be used as a dip for celery sticks, spread on celery stalks, or stuffed in cherry tomatoes. Prep time does not include chill time, since you can leave it in the fridge for longer than the one hour mentioned in the recipe.

1 (8 ounce) package cream cheese
1 (6 1/2 ounce) can tuna
3 -4 tablespoons mayonnaise
1/2-1 tablespoon lemon juice
3/4 teaspoon curry powder
1 dash salt
2 green onions, finely sliced

Steps:

  • Soften the cream cheese for about 1 hour.
  • (I usually just give it a whirl in the microwave for about 20 seconds) Drain the tuna, mash with a fork.
  • Combine the cream cheese, tuna and mayo.
  • Add the lemon juice, curry and salt.
  • Mix to blend well.
  • Add the onions and stir to blend.
  • Chill for 1 hour for the flavors to blend.
