TAGLIATELLE WITH CHICKEN LIVER

The creaminess of the pasta and the rich taste of the sauce in this recipe combine to make this a very flavourful dish which liver lovers are bound to enjoy!

400 g tagliatelle ((14oz))
200 g chicken livers ((7oz))
1/2 white onion (peeled and finely chopped)
50 g butter ((2oz))
2 egg yolks
1 bay leaf
3-5 sage leaves (optional; the original recipe doesn't include sage but I can't cook liver wthout it!)
1 ladle chicken broth (you can use a stock cube dissolved in boiling water)
3 tbsp milk
50 g Parmesan cheese ((2oz) grated)
1 pinch nutmeg (grated)

Steps:

  • Clean and cut the chicken livers into pieces (make sure to remove as much of the fat as possible)
  • Melt the butter in a frying pan add the onion and cook until translucent.
  • Add the chicken livers, bay leaves and sage.
  • Cook the liver until it starts to brown slightly on both sides (you don't want it overcooked)
  • Add the stock and lower the heat.
  • Simmer for a further 15 minutes.
  • In the meantime, put a pot of water on to boil for the pasta. When it starts to boil add salt and bring to the boil again.
  • Remove the bay leaf from the liver and add salt, pepper and nutmeg.
  • Cook for another 5 minutes.
  • Beat the egg yolks in a bowl with the Parmesan cheese and milk .
  • Cook the pasta al dente according to the instructions on the packet
  • Strain the pasta and put it back in the pan.
  • Add the egg and cheese to the pasta and mix together well to get a creamy consistency (this has to be done quite fast, while the pasta is still hot and immediately before serving otherwise the pasta will get cold quickly!)
  • Put the pasta onto the plates and cover with the liver sauce.
  • Serve immediately with a little more grated parmesan and black pepper if required

1/2 cup diced pancetta (about 6 ounces)
Giblets and neck from your turkey
1 medium onion, chopped
1/2 to 1 teaspoon red pepper flakes
2 tablespoons tomato paste
6 cloves garlic, sliced
3 bay leaves
1 teaspoon chopped fresh rosemary
Kosher salt
1 cup dry white wine
2 28-ounce cans whole San Marzano tomatoes
1 piece parmesan rind (optional), plus shaved cheese for topping
1/2 cup chopped fresh parsley
Freshly ground pepper
1 pound rigatoni

Steps:

  • Cook the pancetta in a large pot over medium heat, stirring, until slightly crisp, about 5 minutes. Meanwhile, rinse the turkey giblets; chop into 1/2-inch pieces. Add the giblets and neck to the pot; cook until browned, about 5 minutes. Add the onion and red pepper flakes; cook until the onion is soft, about 3 minutes. Stir in the tomato paste, garlic, bay leaves, rosemary and 1 teaspoon salt; cook, stirring, about 5 more minutes.
  • Add the wine and cook until slightly reduced, about 5 minutes. Crush the tomatoes into the pot with your hands and pour in the juice from the cans. Add 3 cups water and the parmesan rind, if using. Increase the heat to high, bring to a boil and cook 5 minutes. Stir, then reduce the heat to low. Partially cover and simmer, stirring occasionally, until the meat is falling off the neck bone, 4 to 5 hours.
  • Remove the neck; pull the meat off the bone, shred and return the meat to the sauce. Remove the bay leaves. Stir in the parsley; season with salt and pepper.
  • Bring a pot of salted water to a boil; add the pasta and cook as the label directs. Drain and toss with the sauce. Top with shaved parmesan.

6 oz tomato paste, italian
1 1 /2 lb cleaned giblets cut into small pieces
1/2 tsp cinnamon
3/4 c celery chopped fine
1 pkg pastene italian arborio rice 3 cups
salt and pepper to taste
chicken broth, unsalted (home made preferred)
1/2 c grated regeano parma cheese
NORTHERN ITALY GIBLET RISOTTO BASE

  • 1. Saute onions in butter/oil until clear, ADD... cleaned and chopped giblets, salt, pepper, cinnamon.
  • 2. Melt tomato paste in 1+ cup hot broth, add celery, and an additional 1 1/2 cups hot broth. Simmer, then raise to low/medium heat until giblets are well done and the sauce has thickened...
  • 3. 20 minutes before serving time let your family know you are Adding the RICE, and to finish their drink at the table SINCE you will be at the stove stirring. STIR GENTLY INTO THE SAUCE. ADD.. 1 CUP OF BROTH of MORE INTO THE RICE UNTIL IT IS ABSORBED. STIR GENTLY, AND CONSTANTLY TO PREVENT STICKING. KEEP ADDING BROTH 1 CUP AT A TIME UNTIL ABSORBED AND THE RICE IS COOKED. REMOVE FROM HEAT, ADD 1/4 CUP BUTTER, AND 1/2 CUP OF PARMESAN CHEESE and MORE BROTH AS IT SHOULD BE THICK BUT STILL A RUNNY CONSISTANCY. RISOTTO WAITS FOR NO ONE..... Giblets : The edible inner parts of poultry, including the gizzard, heart, liver and kidneys ....... This recipes was devised to use up all the giblets left over from home slaughtered chickens! You can use either giblets or just livers in this recipe. However, the cooking time for giblets is longer than that for livers. Giblets need 15 - 20 minutes, but the livers should be added only 5 - 8 minutes before serving. Have lots of fresh bread and rolls on hand to dip into the sauce!

20 ml olive oil
2 ml cumin, ground
1 ml clove, ground
5 ml paprika

  • Fry the giblets and/or livers in the olive oil until brown.
  • Add the spices and seasonings and stir well.
  • Add the chopped onion and garlic. Fry for 5 minutes.
  • Add wine and simmer gently until cooked.
  • If you are cooking giblets only, a little water may be added if necessary.

This grand gesture of thrift (at just one dollar per serving) and deliciousness has the flavors of a cozy gravy, of roasted birds on cold winter days.

Yield Serves 4 as a main course, or 6 as a starter

Number Of Ingredients 14

1 pound chicken offal-a mix of livers, gizzards, and hearts (we use about 60% livers and 40% gizzards and hearts.)
¼ cup olive oil, plus more if needed
Salt and pepper
2 garlic cloves, crushed with the side of a knife
1 small peperoncino chile
1 bay leaf
Fresh rosemary sprig
Fresh thyme leaves, to taste
⅓ cup finely diced onion
½ cup white wine
¾ cup chicken or vegetable stock, plus more if needed
1 pound fresh fettuccine
Plenty of grated cheese (ricotta salata, pecorino, or Parmesan)
Finely grated zest of ¼ lemon

Steps:

  • With a sharp paring knife, remove any visible fat, arteries, or membranes from the offal, as best as you can. Pat it dry with paper towels.
  • Add most of the olive oil to a large sauté pan over medium heat. When the surface begins to shimmer, fry the offal in the olive oil, spreading it out in one layer, and season with salt. If the offal gives off water, cook until the pan starts to sizzle again; you are looking for it to brown. Then flip, and brown the other side.
  • Add the crushed garlic cloves, another whirl of olive oil, the chili, bay leaf, rosemary, and thyme. Add the onion, lower the heat, and cook until the onion is very soft and begins to melt, about 7 minutes.
  • Add the white wine to deglaze and scrape all the flavor from the bottom of the pot, reduce the wine by half, and add the chicken stock. Simmer gently, covered, for about 20 minutes, then let it rest for at least 10 minutes and as long as a few hours, for the flavors to meld. Remove the bay leaf and taste for salt and pepper.
  • Meanwhile, bring a pot of salted water to a boil. Add the fettuccine to the boiling water and cook until tender, 2 to 3 minutes. Drain the pasta, and toss it with your ragù over medium heat. Loosen it with some olive oil and stock if necessary. Season with salt and pepper, and finish with grated cheese and lemon zest.

3/4 pound assorted chicken giblets (gizzards, hearts, and livers)
5 tablespoons olive oil, plus oil for sautéing livers (optional)
2 onions, diced
2 carrots, peeled and diced
2 celery stalks, diced
2 cloves garlic, minced
2 cups dry red or white wine
7 cups chicken broth
2 cups Arborio rice
Salt and freshly ground black pepper to taste
1 cup peeled, seeded, and diced plum tomatoes (fresh or canned)

Steps:

  • Trim the livers, cutting away any connective pieces and any dark spots. Cut into large bite-sized pieces, keeping the lobes in tact as much as possible. Refrigerate until needed. Trim the chicken hearts of fat.
  • Trim all the fat, connective tissue, and gristle from the gizzards, leaving just the meaty parts.
  • Warm 3 tablespoons of the olive oil in a large sauté pan over medium heat. Add 1 of the onions, the carrots, and the celery and sauté until softened, 5 to 8 minutes. Add the garlic and the gizzards and hearts and sauté for 5 minutes. Add the wine and let it bubble up in the pan. When it is reduced by half, add enough of the broth to barely cover the gizzards and hearts (about 2 cups). Simmer over low heat until tender, about 1 hour or so. Remove the giblets from the pan with a slotted spoon, transfer to a cutting board, and chop coarsely. Set the giblets aside.
  • Pour the remaining broth (about 5 cups) into a saucepan and bring to a simmer; adjust the heat to maintain a gentle simmer. Heat the remaining 2 tablespoons olive oil in a saucepan over medium heat. Add the remaining diced onion and sauté until softened, about 8 minutes. Add the rice and stir until opaque, about 3 minutes. Add a ladleful (about 1 cup) of the simmering broth and stir for 3 to 4 minutes until the broth is absorbed. Reduce the heat and continue to add the broth a ladleful at a time, waiting until each addition is absorbed before adding the next, until the rice kernals are al dente at the center and creamy on the outside, 18 to 20 minutes in all.
  • Meanwhile, cook the chicken livers: If you want to keep this kosher, broil the livers until cooked through. If not, you may sauté them in a separate pan in olive oil until golden on the outside and still pink at the center. Season with salt and pepper and set aside; keep warm.
  • Just before the rice is ready, stir in the giblets and tomatoes and warm through. Transfer to a warmed serving dish and garnish with the chicken livers. Serve immediately
