ITALIAN SAUSAGE FRITTATA
This can be served for breakfast, brunch, lunch or dinner. It's a fairly simple recipe with ingredients that are easily found in the grocery store! I personally use the Spicy Turkey Italian Sausages when making this recipe although it calls for mild.

Steps:
- Preheat oven to 350 degrees.
- Brown sausage in sauce pan and drain.
- Spread evenly over bottom of 9 x 13 baking dish.
- Sauté mushrooms and garlic in butter until almost all liquid is absorbed (you can add a few dashes of white wine at this stage if you prefer.
- Spread mushrooms over sausage.
- Layer swiss chard and cheese over mushrooms.
- In bowl beat the eggs, milk and Dijon mustard and pour evenly over all.
- Place in oven on middle rack, bake uncovered for 1 hour, (or until middle is firm to touch).
- Remove from the oven, cover loosely with foil, and let stand 15-18 minutes. Divide and cut into serving sizes.
- Top with green onions or sour cream (or both) if you desire.

EASY OVEN BAKED FRITTATA
Steps:
- Pre-heat oven to 350F (180C).
- In a non stick pan or baking dish (8-9 inch / 22 cm) add the olive oil and chopped pancetta and zucchini cook until golden brown. Stirring often so that they don't burn or stick to the pan.
- While the zucchini and pancetta are sauteeing, in a medium bowl beat together the eggs and parmesan cheese, stir in the parsley and pepper. Then pour the mixture into the pan with the cooked zucchini and pancetta, stir gently to combine.
- Place pan in pre-heated oven and bake for about 20 minutes. The Frittata is done when the eggs are puffed and opaque in colour. It should still wiggle just a tiny bit in the centre (don't worry it will continue to cook even when it's removed from the oven). Let sit 5 minutes then slice and serve. Enjoy!

Steps:
- Lightly beat the eggs with a fork and add the water, salt, pepper, Parmigiano-Reggiano, and chopped potatoes.
- In a large ovenproof cast-iron or nonstick skillet (preferably 12-inch) over medium heat, melt the butter with the oil. Add the onion or leeks and sauté until transparent, 5 to 10 minutes.
- Pour in the egg mixture and cook over medium heat for about 5 minutes. Meanwhile, heat the broiler to medium. Broil until the frittata is golden brown, about 5 minutes. Let cool to warm or room temperature or chill in the fridge. Cut into wedges and serve.

- Cook bacon in 10-inch nonstick ovenproof skillet over medium heat. Remove to paper towel; drain excess oil from skillet. Chop bacon into bite-sized pieces. Set aside.
- Melt 2 tablespoons butter in same skillet over medium-low heat until sizzling. Add zucchini and garlic; cook 3 minutes. Remove zucchini from pan. Set aside.
- Add remaining butter to skillet. Add potatoes; press into single layer. Cover, cook 7 minutes. Uncover, stir potatoes. Add cooked bacon and zucchini. Pour eggs over top; sprinkle with salt. Top with basil.
- Reduce heat to med-low; cook 4 minutes, stirring until egg mixture is almost fully cooked. Cover, continue cooking 4-5 minutes or until mixture is set.
- Increase heat to medium-high. Sprinkle with cheese; cook 3-4 minutes or until cheese is melted.
- Cut frittata into 4 wedges to serve.

- Add the oil to a 10" cast-iron skillet over medium heat and cook the pancetta, onions, and potatoes until tender and cooked, which takes about 10 minutes. Be sure to stir every few minutes and season with salt and pepper.
- While the pancetta, onions, and potatoes are cooking, add the eggs, cheese, salt, and pepper to a medium-size bowl and whisk until completely combined and smooth.
- Add the eggs to the cast iron skillet and constantly push the eggs from the outside of the pan to the inside, similar to making an omelet.
- Once the eggs are slightly runny on top, about 4 to 6 minutes, invert the frittata using a plate and place it back into the skillet runny side down, and finish cooking for 2 to 3 minutes.
- Serve the frittata in the skillet or on a serving platter or plate, and garnish with additional parmesan cheese, parsley, and rosemary. Serve alongside fresh bread.

Steps:
- Peel and chop the potatoes into 1-inch large cubes.
- In a large pot of lightly salted boiling water, boil the potatoes for about 5 min, until just tender.
- In the meantime, in a large bowl whisk the eggs until well combined, add in chopped parsley and season with salt and pepper.
- Drain well the potatoes and add them into the bowl with the eggs. Fold in the cheese (if using) and lightly mix all ingredients.
- Heat a large non-stick skillet with the olive oil over medium-low heat. Pour in the frittata mixture, making sure to distribute the potatoes evenly over the bottom of the pan.
- Cover with a lid and cook for about 5-10 minutes, gently shaking the pan every now and then. When the frittata is easily pulled off from the bottom, is ready to be turned. Using a plate with the same diameter of the frittata, carefully put it on top and flip the frittata on the other side.
- Cook on the other side for a further 2-5 minutes, this time without the lid.
- When the frittata is fully cooked, remove from the pan and slide it gently onto a serving plate, and serve
- Store leftovers in an airtight container and refrigerate for up to 2 days.

- In a large saucepan, bring 1/2 in. of water to a boil. Add spinach; cover and boil for 3-5 minutes or until wilted. Curing the squash with kosher salt pulls out the bitterness and makes the squash taste sweeter. It's got great texture, taste, and visual appeal and can be served hot, warm, at room temperature or cold for any meal of the day.

- Combine zucchini and summer squash in a bowl and sprinkle 2 tablespoons kosher salt over top; toss until everything is evenly coated. Let sit for 15 minutes, tossing occasionally.
- Thoroughly rinse squash with cold water to remove all salt; transfer to a colander and let drain for 15 minutes.
- Heat 1 tablespoon olive oil in a 10-inch, oven-proof skillet over medium heat. Add bacon and cook until browned and almost crisp, about 5 minutes.
- While the bacon is cooking, mix eggs, 1/4 teaspoon kosher salt, black pepper, cayenne, and green onions together with a fork in a large bowl.
- Raise the heat on the bacon to medium-high; toss in peppers and red onion plus a pinch of salt. Cook and stir until the peppers just start to soften and the onions turn translucent, about 3 minutes. Add drained squash and carefully stir together; cook until squash is just barely tender, about 5 minutes.
- Meanwhile, set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Toss Cheddar cheese into the skillet and pour egg mixture over top. Stir with a spatula (like you were making scrambled eggs) until it starts to thicken up, 30 to 45 seconds. Shake the pan gently to settle the contents and turn off the heat. Push the edges down a bit with the spatula and sprinkle goat cheese over top. Drizzle with remaining 1 tablespoon olive oil.
- Place under the preheated broiler until the surface is lightly browned and frittata is firm to the touch, 2 to 3 minutes.
- Sprinkle with more green onions and let cool for 5 minutes before transferring it onto a serving plate.
