ART'S ITALIAN STUFFED MUSHROOMS
Art's Italian Potato Stuffed Mushrooms is chock full of our favorite Italian foods including Idahoan's Romano White Cheese Flavored Mashed Potatoes.

Steps:
- Preheat over to 350 degrees F.
- Prepare potatoes according to package directions.
- Add sun-dried tomatoes.
- Remove stems from clean mushrooms and stuff caps with cooked Italian sausage and top with a generous amount of the potato mixture.
- Spread olive oil and minced garlic on bottom of walled cookie sheet or baking dish. Place mushrooms on top.
- Sprinkle shredded Parmesan over the top of the mushrooms.
- Bake for 20-25 minutes.

- Bake potatoes at 400 for 55-60 minutes.
- While potatoes are baking, melt butter over medium-high heat in large skillet, add peppers, onion, garlic, salt and pepper.
- Remove from heat and set aside.
- When potatoes are done slice 1 inch of the top off of each potato and spoon out inside.
- Place pulp in large bowl.
- Add onion mixture, ricotta and parmesan cheese.
- Beat with an electric mixer until well blended.
- Spoon into potato shells and place on baking sheet for 20-30 minutes until heated through.
- These can also be made the day before and then baked a little longer.
- To freeze: Prepare through step 8 except do not bake! Place potatoes on a baking sheet and freeze until firm. Wrap each potato in plastic wrap and place in a large freezer bag. Seal, label and freeze.
- To serve: Unwrap and thaw in fridge. Place on baking sheet and bake at 400 degrees for 35 minutes.

- Prepare the peppers: Prepare the peppers by cutting off the tops of the peppers. Remove and discard any seeds and membranes from the insides of the peppers. To keep the peppers from falling over while cooking, cut a small flat piece off the bottom of the pepper so that it has a more even bottom.
- Mix the meat and stuff the peppers: In a large bowl combine the ground beef, onion, garlic, Italian seasoning, rice, tomato paste, salt and pepper. Mix well. Stuff each pepper really well and arrange them in a big pot standing up. I used a large 5 quart oval Dutch Oven with a lid. Mix the chicken broth with the tomato sauce and pour over the peppers. Add more water if needed, there should be enough water to come about half way up the peppers.
- Bake: Cover the pot with a lid or aluminum foil and bake for 1 1/2 hours covered. Remove the lid and continue baking for another 45 minutes to an hour uncovered. The peppers are ready when you insert a fork in a pepper and it goes easy through the skin of the pepper and meat, and the rice is cooked.

- In the bowl of a food processor add the stale bread and chop until coarse bread crumbs form. Set aside.
- In a large skillet on a medium low flame add the olive oil and anchovies. Sautee together for a couple of minutes until the anchovies melt into the oil. Stir in the garlic and cook for just 20 seconds or so until it starts releasing its flavors. Take good care not to burn it.
