STIR-FRIED PORK AND PASTA

Steps:
- Trim excess fat from pork. Cut pork into strips, 2x1x1/8 inch. Toss pork, cornstarch, 1 teaspoon soy sauce, the salt and pepper. Cover and refrigerate 20 minutes.
- Heat wok or 12-inch skillet over high heat. Add oil; rotate wok to coat side. Add pork, garlic and red pepper; stir-fry about 5 minutes or until pork is no longer pink.
- Add celery and bell pepper; stir-fry 2 minutes. Add bean sprouts and mushrooms; stir-fry 2 minutes.
- Add vermicelli, green onions and 1 tablespoon soy sauce; toss about 2 minutes or until thoroughly mixed.

- Cook pasta according to package directions. Drain and keep warm.
- Meanwhile in a stir-fry pan or large skillet heat olive oil. Crumble and cook Italian sausage until almost done.
- Add garlic, zucchini and onion; stir-fry 2-3 minutes.
- Add tomatoes, parsley, basil and the rest of the seasonings. Stir-fry an additional 1-2 minutes.
- Remove from heat and stir in pasta. You could also plate the pasta and just serve the stir-fry over the top if desired.
- Top with Parmesan cheese and serve immediately.

- Slice marinated pork loin filet into thin strips. Cook pasta according to package directions. Add pork strips and oil to heated skillet. Stir-fry until meat is browned, about 5 minutes. Add zucchini, onion, mushrooms, tomatoes, garlic and butter to skillet; stir-fry until vegetables are crisp-tender, about 5 minutes. Drain pasta and add to pork and vegetable mixture with cheese and basil; toss to coat. * Ready-made pork products include Smithfield's Roasted Garlic & Herb Marinated Fresh Pork Loin Filet. You can also buy garlic and herb marinades at the store, or make your own, to taste. You'll need a cup and a half of marinade for this recipe.
