I love to make this pasta bake whenever I need to bring a dish to pass. Fresh tomatoes add a nice touch that's missing from most other meat, pasta and tomato casseroles.-Karla Johnson, East Helena, Montana

- In a large skillet, cook beef and onion over medium heat until no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in spaghetti sauce, diced tomatoes, mushrooms and Italian seasoning. Bring to a boil. Reduce heat; simmer, uncovered, 20 minutes., Meanwhile, preheat oven to 350°. Cook pasta according to package directions; drain. Add to beef mixture and gently stir in sliced plum tomatoes. , Transfer to an ungreased 13x9-in. baking dish. Sprinkle with cheeses. Bake 25-30 minutes or until bubbly and heated through.

Squid is often served fried in Italy, but this recipe casseroles it with a combination of tomatoes and bell peppers to create a deliciously rich sauce. From the book: "The Complete Book of Italian Cooking".

Steps:
- Cut the squid pouch into 1/2" slices, cut the tentacles into lengths of approx 2". If using frozen squid rings, defrost and drain fully before using.
- Heat the oil in a flameproof casserole; fry the onion and garlic gently until soft. Add the squid, increase the heat and continue to cook for about 10 minutes until sealed and beginning to colour lightly.
- Add the bell peppers, rosemary and stock; bring to the boil. Cover and simmer gently for 45 minutes.
- Discard the sprigs of rosemary but leave any leaves that have come of them.
- Add the tomatoes, tomato paste, seasonings and paprika. Continue to simmer gently for around 45-55 minutes - or cover the casserole tightly and cook in a moderate oven (180°C/350°F) for 45-55 minutes, until tender.
- Give the sauce a good stir, adjust the seasoning, garnish with fresh herbs and serve with crusty bread.

- Drain and rinse the haricot beans, then tip into a medium saucepan and add fresh water to cover. Bring to the boil and cook for 10 minutes, then lower the heat, cover and simmer for about an hour or until the beans are just tender. Drain and set aside (see tip).
- Heat the oven to 120°C/100°C fan/gas ½. Cut the bacon into 4cm cubes (or 4cm strips if using bacon slices). Put a large heavy-based flameproof casserole (one with a lid) over a medium-high heat. Add the oil or lard, then the bacon and cook on all sides for 4-5 minutes until caramelised and golden. Remove the bacon and set aside on a plate.
- Slice the squid bodies into 1-2cm rounds and the tentacles into several pieces. Drop the squid into the casserole and cook for 3-4 minutes until brown all over. Remove the squid and set aside with the bacon, then lower the heat under the casserole to medium.
- Add the onion, garlic, thyme, bay leaves and lemon zest to the casserole and cook, stirring often, for 6-8 minutes until the onions start to soften.
