Provided by Betty Crocker Kitchens

Categories     Entree

Time 30m

Yield 4

Number Of Ingredients 11

4 boneless skinless chicken breasts (about 6 oz each)
1/3 cup all-purpose flour
2 tablespoons grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon salt
2 tablespoons olive or vegetable oil
4 slices prosciutto (about 3 oz)
4 slices (1 oz each) mozzarella cheese
1 teaspoon chopped fresh sage leaves
3/4 cup Progresso™ chicken broth (from 32-oz carton)
1 tablespoon butter or margarine

Steps:

  • Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until 1/4 inch thick. In shallow dish, mix flour, Parmesan cheese, Italian seasoning and salt. Coat chicken with flour mixture; shake off excess flour.
  • In 12-inch nonstick skillet, heat oil over medium-high heat. Add chicken; cook about 8 minutes, turning once, until browned on outside and no longer pink in center. Top each chicken breast with 1 slice prosciutto and 1 slice mozzarella cheese. Cover skillet tightly; cook 1 to 2 minutes or until cheese is melted. Sprinkle sage over chicken. Remove chicken from skillet to serving platter; cover loosely with tent of foil, being careful not to let foil touch cheese.
  • Increase heat to high. Add broth to skillet. Heat to boiling, scraping up any browned bits from bottom of skillet. Boil about 3 minutes or until broth is reduced to about 1/4 cup. Remove from heat; beat in butter. Spoon over chicken.

Time 1h

Yield 4

Number Of Ingredients 12

4 boneless skinless chicken breasts (about 1 1/2 lb)
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup plus 2 tablespoons Gold Medal™ all-purpose flour
2 tablespoons butter
2 tablespoons vegetable oil
3 oz prosciutto, thinly sliced and cut crosswise into 1/2-inch strips
8 oz sliced mushrooms
1 medium yellow onion, cut in half and thinly sliced
3 cloves garlic, finely chopped
1/2 cup dry white wine
2 cups Progresso™ chicken broth (from 32-oz carton)

Steps:

  • Season chicken breasts with salt and pepper. Place 1/3 cup flour in shallow bowl; dredge chicken breasts in flour, shaking off any excess.
  • In deep 12-inch nonstick skillet, heat 1 tablespoon of the butter and 1 tablespoon of the oil over medium-high heat. Add prosciutto; cook and stir about 2 minutes or until crispy. Using slotted spoon and leaving as much of the fat as possible in skillet, transfer prosciutto to plate, and set aside.
  • Add chicken breasts to hot skillet; cook over medium heat about 5 minutes on each side or until browned. Transfer to plate.
  • Add additional 1 tablespoon butter and 1 tablespoon oil to skillet; heat over medium-high heat. Add mushrooms; cook about 4 minutes or until they begin to brown. Add onion; cook about 6 minutes or until softened. Add garlic; continue to cook another minute.
  • Sprinkle 2 tablespoons flour over vegetables; cook and stir 2 minutes.
  • Add wine; cook and stir until almost evaporated. Stir in broth; heat to boiling. Reduce heat to medium-low; return chicken breasts to skillet. Cook 10 to 15 minutes or until chicken is cooked through (at least 165°F) and sauce is thickened. Top each serving with crispy prosciutto. Serve over cooked pasta, if desired.

CRISPY ITALIAN OVEN CHICKEN

Crispy Italian Oven Chicken image

This crispy chicken is made in the oven without any breading at all; the only ingredients you need are the chicken, a drizzle of oil, and a sprinkling of spices.

Provided by Mary Younkin

Number Of Ingredients 5

2 1/2 - 3 pounds bone-in chicken thighs
1 tablespoon olive oil
1 1/2 teaspoons Italian seasoning (store-bought is fine)
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees. Line a large baking tray or half sheet pan with foil and place all the chicken pieces on it, skin side down. Sprinkle with salt, pepper, and spices and flip each piece skin side up. Drizzle a little oil over the skin on each piece of chicken and rub lightly to coat. Sprinkle again with salt, pepper, and spices.
  • Bake for one hour, until most of the fat has rendered out of the chicken and the skin is golden brown and crisp. Remove from the oven and let rest about 5 minutes before serving. Enjoy!

  • Preheat the broiler. In a small skillet, melt the butter in the olive oil over moderate heat. Add half of the shallots and garlic and cook, stirring often, until softened and fragrant, 2 to 3 minutes. Season with a pinch of salt and pepper. Scrape the mixture into a small bowl and let cool.
  • Loosen the skin from the chicken breasts without detaching it completely. Place a teaspoon of the cooked shallot and garlic mixture under the skin of each breast half and spread it over the meat. Top the mixture with a folded piece of prosciutto and 3 basil leaves. Smooth the chicken skin over the fillings and season lightly with salt and pepper.
  • Set the chicken in a medium roasting pan, skin side up. Broil for 5 minutes. Turn and broil for 5 minutes more, then turn again and broil for about 5 minutes longer, or until nicely crisped on top; take care not to burn the skin. Turn the oven temperature to 350° and bake the chicken for about 20 minutes, or until the juices run clear when the meat is pierced. Transfer the chicken to a plate and keep warm.
  • Pour the juices from the roasting pan into a small bowl; spoon off the fat and reserve the brown drippings. Place the roasting pan over moderate heat. Add the remaining chopped shallot and garlic and stir until softened and golden, about 2 minutes. Pour in the wine and bring to a boil. When the wine is nearly evaporated, pour in the chicken stock and heavy cream. Bring to a boil and simmer, stirring occasionally, until reduced to 1/2 cup, about 4 minutes. Stir in the reserved drippings and the minced basil and season with salt and pepper.
