Steps:

  • Cook sausage in large skillet on medium-high heat 5 min. or until evenly browned, stirring occasionally; drain. Return sausage to skillet.
  • Add tomatoes, water and seasoning; mix well. Bring to boil. Add Shells; cover. Simmer on medium-low heat 7 to 8 min. or until heated through, stirring occasionally.
  • Stir in broccoli; cook 5 min. or until crisp-tender, stirring frequently. Add Cheese Sauce; stir until blended.

1/2 cup heavy whipping cream

2 tablespoons shredded fresh basil leaves

Steps:

  • In 5-quart Dutch oven, heat oil over medium-high heat. Add sausage; cook 6 to 8 minutes, stirring occasionally, until no longer pink. Using slotted spoon, transfer to bowl; cover and keep warm.
  • Add onion, garlic, red pepper flakes and salt to oil and drippings in pan; cook over medium-high heat 1 to 2 minutes or until softened and starting to brown.
  • Stir in broth and pasta sauce; heat to boiling. Stir in pasta; return to boiling. Reduce heat; simmer uncovered 11 to 13 minutes, stirring occasionally, until pasta is cooked to desired tenderness and sauce is thickened.
  • Stir in sausage and whipping cream; return to simmering. Remove from heat. Top with cheese and basil.

This ultra-easy pasta dish is perfect for any weeknight! Filled with sausage, cream, spinach, and a touch of white wine, this dish will soon become a staple in your cooking repertoire!

12 oz (340 g) Shell Pasta
1 cup Reserved Pasta Water
1/2 tbsp Olive Oil
1 lb Ground Mild Italian Sausage
1 Shallot, (diced small)
2 Garlic Cloves, (crushed or minced)
2 tsp Italian Seasoning
1/4 cup Dry White Wine
1/2 cup Heavy Cream
2 cups Fresh Spinach
3/4 cup Shredded Pecorino Romano Cheese
Lots of Freshly Ground Pepper (†)
Salt, (to taste)

Steps:

  • Bring a pot of well-salted water to a boil and add shells. Cook according to box instructions, around 6-8 minutes. Reserve 1 cup of pasta water.
  • Meanwhile, in a large pan over medium heat, heat 1/2 tbsp of olive oil. When oil is hot, add in sausage and shallots. Season with Italian seasoning. Cook, breaking up the pieces of meat into small bits, until the meat is cooked through and the shallots are tender. Add garlic, and cook for an additional minute.
  • Add in white wine, and allow the wine to reduce by about half (approx. 2-3 minutes). Then, add heavy cream to pan, and stir to combine with meat and oil. Allow the cream to bubble slightly, then add the spinach. Cook until the spinach is wilted down. (Sauce time = 13-15 minutes)
  • Add in the hot shells, toss to combine. Season with freshly ground pepper, as much or as little as you like, then season with salt to your preferred taste. Add pecorino, and toss to combine. Then slowly add pasta water, bit by bit, just until you are left with a creamy uniform sauce (I used about ½ cup).

I created this dish as a compromise to my cheese avoidance and my husband's love of Italian food. Serve this with garlic bread and a salad for a wonderful family dinner.

3 teaspoons vegetable oil, divided
1 pound bulk Italian sausage
1 (16 ounce) package finely shredded mozzarella cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 9x13 baking dish.

1 pound sweet or hot Italian sausage, casings removed
2 tablespoons olive oil
32-ounces whole milk ricotta
2 cups shredded mozzarella, divided
1 cup grated Parmesan cheese, divided
2 large eggs, lightly beaten
2 tablespoons minced, fresh, flat-leaf parsley
2 tablespoons minced, fresh basil leaves
Salt and ground black pepper to taste
4 cups prepared marinara sauce, homemade or jarred

Steps:

  • Preheat oven to 375 F. Bring a large pot filled with water to a boil.
  • Cook pasta shells according to manufacturer's instructions. Drain and rinse with cool water. Line shells on a large baking sheet lined with wax paper or aluminum foil and set aside.
  • Heat olive oil in a skillet over medium-high heat. Crumble the sausage into the skillet and fry until lightly browned. Using a wooden spoon, break the meat into small bits as it cooks. You don't want any big chunks.
  • Combine cooked sausage, ricotta, 1 cup mozzarella, 1/2 cup Parmesan, eggs, parsley, basil, salt and pepper together in a large bowl and mix well.
  • Pour enough marinara sauce in a 9×13 baking dish to cover the bottom of the dish, about 1 1/2 cups. Fill each pasta shell with about 1 1/2 to 2 tablespoons of the filling, and line the baking dish with the shells. Ladle the rest of the marinara on top. Sprinkle with the rest of the mozzarella and Parmesan, cover with foil and bake until bubbly, about 30-35 minutes. Remove the foil and continue to bake for another 10-15 minutes, until the cheese is gooey and melted and begins to brown.
  • Remove and let stand about 10 minutes before serving.
  • Leftovers can be kept in the fridge for up to a week, or frozen for up to 3 months.

  • Add butter to the Instant Pot (I used a 6qt), hit “Sauté” and “Adjust” so it’s on the “More” or “High” setting. Once the butter’s melted and sizzling, add in the shallots and cook for 2-3 minutes. Then, add the sausage and garlic and stir for another 2 minutes (the sausage should not be fully cooked by this point)
  • Lastly, add in the pasta shells BUT DO NOT STIR. Just allow them to be as submerged under the liquid as possible by smoothing out with a mixing spoon (it is okay if some of the shells are sticking out above the liquid). Top off with the spinach and, again, DO NOT STIR. (Note: It’s going to feel like there’s a LOT of spinach in there and it will come up to the brim of the pot, but don’t worry – it cooks down into nothing!)
  • Secure the lid and hit “Keep Warm/Cancel” and then hit “Manual” or “Pressure Cook” High Pressure for 6 minutes (5 minutes if you want the shells more “al dente”). Quick release when done.
