This is a very good soup; it tastes just like pizza! Garnish with mozzarella cheese.

1 ¼ cups fresh sliced mushrooms
½ cup finely diced onion
1 teaspoon vegetable oil
2 cups water
15 ounces pizza sauce
8 ounces sliced pepperoni sausage, each slice cut in half
1 cup chopped tomatoes
½ cup chopped, cooked Italian sausage
¼ teaspoon Italian seasoning
¼ cup grated Parmesan cheese

Steps:

  • In a large saucepan, heat oil over medium heat. Saute mushrooms and onion in oil for 2 to 3 minutes, or until tender.
  • Mix in water, pizza sauce, pepperoni, tomatoes, sausage and Italian seasoning. Cover, and bring to a boil. Reduce heat; cover, and simmer for 20 minutes, stirring occasionally.
  • Before serving, stir in Parmesan cheese. Garnish with mozzarella cheese.

1/2 pound Italian turkey sausage links, casings removed
1 medium zucchini, sliced
1 cup sliced fresh mushrooms
1 small onion, chopped
1 can (14-1/2 ounces) no-salt-added diced tomatoes
1 cup water
1 cup reduced-sodium chicken broth
1 teaspoon dried basil
1/4 teaspoon pepper
Minced fresh basil and crushed red pepper flakes, optional

Steps:

  • In a large saucepan, cook the sausage, zucchini, mushrooms and onion over medium heat until meat is no longer pink; drain. Add the tomatoes, water, broth, dried basil and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Sprinkle with fresh basil and pepper flakes if desired.

1 medium onion, chopped
1 medium green pepper, cut into strips
1 medium sweet red or yellow pepper, cut into strips
1 can (15 ounces) cannellini beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 jar (14 ounces) pizza sauce
2 teaspoons Italian seasoning
2 garlic cloves, minced
2 cans (14-1/2 ounces each) beef broth
1 package (5 ounces) Caesar salad croutons
Shredded part-skim mozzarella cheese

Steps:

  • Remove casings from sausage. In a large skillet over medium-high heat, cook and crumble sausage until no longer pink. Add onion and peppers; cook until crisp-tender. Drain and transfer to a 6-qt. slow cooker., Add the next 5 ingredients; pour in broth. Cook, covered, on low until vegetables are tender, 6-8 hours. Serve with croutons and cheese.

So I decided to use what I had on hand. The ingredients for this recipe may look a little intimidating but I assure you they aren't....

2 lb italian sausage links
4 oz pepperoni slices
3 qt water, (12 cups)
2 jar(s) spaghetti sauce (24-28 ounces)
2 c rotini pasta, or pasta of your choice
1 large onion, chopped
1 medium bell pepper, chopped
3 celery ribs, chopped
3-4 clove garlic, minced
8 oz canned sliced mushrooms, drained
16 oz canned diced tomatoes,
1/4 -1/2 tsp red hot pepper flakes, (optional)
1 tsp dried basil
1 1/2 tsp oregano or italian seasoning
2 tsp sugar or splenda
salt & pepper to taste( taste before adding)
2 c mozzarella, shredded
1 c cheddar cheese, shredded

Steps:

  • 1. Pour 3 quarts of water into a large pot. Then add Italian sausage links, and boil for at least 10 minutes.
  • 2. Remove links from pot, onto a platter and cut on the diagonal, and set aside.
  • 3. Add the chopped celery, onions, bell pepper, & minced garlic to water and bring to a boil.
  • 4. Add rotini noodles to boiling water, along with pasta sauce, diced tomatoes, mushrooms, pepperoni, sliced sausages, oregano, basil, & sugar, and cook till noodles are al dente, about 8 to 10 minutes. Stir to prevent sticking.
  • 5. Let simmer and add both shredded cheeses and stir till cheeses are melted.
  • 6. Serve with tossed Garden salad, and Tomato Cheese Bread, see recipe for Rose Mary's Tomato Cheese Bread Squares.
  • 7. NOTE: I used the same water that I boiled the sausages in to make the soup, because I wanted to maintain the full flavor of the Italian sausages in the soup.If you use the water, please skim off excess fat first or. You may drain water if you like but replace the same amount with fresh water & proceed with recipe..

If you are a soup person like me, you're always on the lookout for new things to try. Well, here's a new one on me too! It's a delicious way of low-carb pizza eating. The noodles are a great sub in for the crust, especially if you use whole wheat noodles. Fortunately, I don't have to worry about that. If you're not low-carb'n it, whip up some bread sticks or garlic bread to serve along side this. Oh, if sausage or any of the other "pizza toppings" aren't to your liking, sub in your favorite pizza toppings such as pepperoni.

1 lb Italian sausage, sliced 1/4 inch thick
1 (14 1/2 ounce) can Italian-style stewed tomatoes, undrained
1 (14 1/2 ounce) can beef broth
1/4 cup tomato paste
1 cup water
1 medium onion, coarsely chopped
1 medium green bell pepper, coarsely chopped (optional)
1 (4 ounce) can mushrooms, drained
1 1/2 cups rigatoni pasta, uncooked
1/2 cup mozzarella cheese

Steps:

  • In a large Dutch oven, cook sausage over medium heat about 8 minutes, stirring occasionally, until no longer pink; drain.
  • Stir tomatoes, broth, water, tomato paste, onion, pepper, and mushrooms into sausage. Heat to boiling; reduce heat to medium-low. Cook about 10 minutes or until green peppers are tender.
  • Stir in the pasta. Cook 10 to 12 minutes, stirring occasionally, until pasta is tender.
  • Serve topped with cheese.

1 small onion (chopped)
1 14 oz can petite diced tomatoes
1 cup pizza sauce
1 1/2 cups water
1 cup pepperoni (chopped)
1/2 teaspoon Italian seasoning
salt to taste
1 cup Mozzarella cheese (shredded)
1/4 cup grated Parmesan cheese

Steps:

  • In a dutch oven or large saucepan over medium heat add Italian sausage and chopped onion. Continue to cook and stir until sausage is cooked through and onion is translucent.
  • Add diced tomatoes, pizza sauce, water and Italian seasoning.
  • Reduce heat and simmer for 15- 20 minutes.
  • Serve in bowls topped with shredded mozzarella and Parmesan. Enjoy alongside a side salad and a loaf of bread.

Steps:

  • Place the sausage, onion and garlic into a skillet over medium heat.
  • Brown the sausage until not longer pink about 8 minutes.
  • Drain well in a colander and pat off excess grease with paper towel.
  • Place into the crock pot.
  • Add the pepperoni into the mixture.
  • Place both cans of kidney beans into the crock pot.
  • Add in the tomatoes and the green chilies.
  • Sprinkle in the chili powder, salt and pepper.
  • Pour the pizza sauce over the top and stir to make sure all the ingredients are combined together.
  • Cover and cook on low for 6 hours.

  • In a Dutch Oven, over medium heat, add ground beef, ground pork sausage, Italian seasoning, onion powder and garlic salt. Slice pepperoni into strips with a food scissors and add the pepperoni to the meat mixture. Cook until the meat mixture is browned and cooked. Then add diced tomatoes, crushed tomatoes, tomato paste, and chicken stock to the soup. Stir until combined.
  • Bring the soup to a boil and cook for 10 minutes. Turn off heat. Add the grated parmesan then the shredded mozzarella to the top of the soup.
  • I like to then put the soup into the oven to melt the cheese on top of the soup. This step makes a nice cheesy crust on top of the soup. Check your soup pot or CorningWare to ensure it can go into the oven at a high temp (I use a Lodge Dutch Oven and broil no hotter than 500 degrees). For Corningware or other cooking dishes, I recommend baking at 375 until browned.
