1 large sweet yellow onion
2 red bell peppers
2 green bell peppers
¼ cup olive oil
salt and freshly ground pepper to taste
8 links of Italian Sausage, sweet, hot, or a combination of the two
4 club, hero or wedge rolls, split

Steps:

  • Peel the onions, cut them in half and slice, thinly, cross-wise.
  • Cut the peppers in half, remove the stems and seeds, and slice into thin strips.
  • In a large skillet, preferable cast iron, heat the olive oil over medium-high heat. Add the peppers and onions and season with salt and pepper.
  • Lower the heat to medium-low, and cook stirring frequently until onions are translucent and peppers are soft, 15-20 minutes.
  • Meanwhile, if using a gas grill turn the burners on one side to high. If using a charcoal grill, pile the coals on one side if the grill and light them.
  • Place the sausage directly over the fire and cook, turning until browned on all sides. Then move to the side of the grill with no fire, cover the grill and cook, turning once until sausage is done, 8-10 minutes.
  • Slice the club rolls open and place two links of sausage in each roll and cover with a heaping portion of the peppers and onions. Serve with a cold beer to wash it down!

Steps:

  • Heat the oil in a skillet over medium heat. Add the sausages; cook until browned on all sides, following cooking instructions indicated on the packaging. Remove sausages from the pan. Drain grease, leaving about a tablespoon for the vegetables.
  • Cook peppers and onions in skillet over medium heat until they begin to soften. Add garlic, salt, and pepper and cook one more minute.
  • Stir in Classico Tomato & Basil Sauce. Increase heat until sauce begins to boil; reduce heat and simmer over low heat.
  • Cut the sausages into 1-inch pieces; add to the pan and stir to combine. Cook until the sauce has thickened and the peppers and onions are soft, about 10 minutes.

I've always made this with sweet Italian sausage, but have recently started doing it with Polish kielbasa as well. The directions are for Italian sausage and works just fine for either hot or sweet sausage; the Polish sausage doesn't require parboiling unless you just want to do so to reduce fat.

4 -6 italian sweet sausage or 4 -6 hot Italian sausages
1 1/4 cups dry white wine or 1 1/4 cups water, divided
2 -4 teaspoons extra virgin olive oil, divided
2 large onions, thinly sliced,lengthwise
2 -3 cloves garlic, minced
3 -4 large red bell peppers or 3 -4 large green bell peppers, seeded and thinly sliced
salt & freshly ground black pepper
4 -6 large crusty French rolls, split and warmed in oven
4 -12 slices provolone cheese, 1 to 2 slices per sandwich (desirable) (optional)
1 -2 cup fairly spicy marinara sauce (if not spicy, simmer with garlic and red pepper flakes or cayenne pepper to taste)

Steps:

  • Poke the sausages all over with a fork, and place in a large lidded skillet with 1-2 Tsp extra virgin olive oil and 1 cup white wine or water, turn on heat to medium, and partially cover.
  • When pan begins to boil, turn sausages, and continue to simmer, turning several more times.
  • When liquid has evaporated, uncover, and continue cooking until sausages have browned to your taste.
  • Remove sausages from pan, and set on paper towels to drain.
  • Drain all grease from skillet, but do not wash or rinse it.
  • Add 1-2 Tsp more extra virgin olive oil to pan, and place on medium heat.
  • Add onions, and garlic, and season to taste with salt and pepper.
  • Moisture from the onions should be enough to deglaze the pan, but you can add 1/4 cup white wine or water, if desired, to help with the job.
  • Stir the onions, scraping the bottom to pick up and dissolve browned bits from the sausage.
  • Continue cooking and tossing until onions are almost translucent.
  • Add peppers, and toss to combine with onions.
  • Turn up heat to medium-high, and continue to toss and cook until peppers are crisp-tender or to your taste.
  • Bury the sausage in the vegetables to reheat if necessary.
  • I usually serve on crusty French rolls or Bolillos, crusty Mexican rolls that have been heated in the oven.
  • Either one is better than your typical hoagie roll.
  • I split the warmed roll, brush on a little marinara sauce, split the sausages lengthwise, and pile on the onions and peppers.
  • If desired, line the roll with a slice of provolone and/or place one on top of the sausage and veggies.

2 tablespoons prepared mustard

3/4 pound sweet Italian sausage
3/4 pound hot Italian sausage
2 tablespoons extra virgin olive oil, 2 turns of the pan
2 large cloves garlic, crushed
1 large onion, thinly sliced
2 cubanelle peppers (light green mild Italian peppers), seeded and thinly sliced
1 red bell pepper, seeded and thinly sliced
Salt and pepper
2 or 3 jarred hot cherry peppers, banana peppers or pepperoncini, finely chopped
3 tablespoons hot pepper juice, from the jar
4 crusty, semolina submarine sandwich rolls, 8 inches, sesame seeded or plain
1 tablespoon extra-virgin olive oil
3 tablespoons butter
1 large clove garlic
1 1/2 teaspoons dried Italian seasoning, 1/2 a handful or 1/2 teaspoons each oregano, thyme, parsley

Steps:

  • Place the sausages in a large nonstick skillet. Pierce the casings with a fork. Add 1-inch water to the pan. Bring liquid to a boil. Cover sausages, reduce heat and simmer 10 minutes.
  • Heat a second skillet over medium high heat. Add oil, 2 turns of the pan. Add garlic, onion, cubanelle and red peppers. Season vegetables with salt and pepper.
  • Drain sausages and return pan to stove, raising heat back to medium high. Add a drizzle of oil to the skillet, brown and crisp the casings. Remove sausages, slice into 2 inch pieces on an angle and set pieces back into the pan to sear.
  • Split and toast the bread under broiler. Melt oil, butter together in small pan over medium heat. Add garlic and let it sizzle 1 or 2 minutes. Brush rolls with garlic butter and sprinkle with a little dried Italian seasoning blend.
  • Combine the cooked peppers and onions to the sausages. Add hot peppers and hot pepper juice to the skillet. Toss and turn the sausage, peppers and onions, picking up all the drippings from the pan. Pile the meat and peppers into the garlic sub rolls and serve.

1 (28 ounce) can crushed tomatoes
1 (29 ounce) can tomato sauce

6 ounces jarred roasted red peppers (more or less to your taste)

Instant Pot Italian Sausage & Peppers image

Instant Pot Italian sausage and peppers is a quick & easy recipe. They are great for sandwiches or as is for the best keto, low-carb, or gluten-free meal. This Instant Pot sausage and pepper recipe is done in one pot and is complete in just 20-minutes.

2 TB olive oil
4-6 Sweet or Spicy Italian sausage link
1/2 red or sweet large onion (cut into 1/2" half rings)
2 sweet bell peppers (seeded & sliced into 1/2″ wide long slices)
1/2 C water
15 oz Can Diced Tomatoes (do NOT drain)
2 garlic cloves (minced)
1 tsp dried basil
salt & peppers (to taste)
1/2 tsp crushed red peppers (Optional)

Steps:

  • Cut the peppers and onions as directed and shown in the image above for a sample. Also, dice/mince 2 garlic cloves.
  • Select the SAUTE option on your Instant Pot. After about a minute when it is hot, add olive oil and then, add sausages in a single layer on the bottom.
  • Brown for about 3 minutes each before turning. Turn each twice so it browns on 3 sides minimum for a total of 9 minutes for each link. Remove sausages to a plate and set them aside.
  • Add the onions and let them cook in the hot oil for about 2 minutes, stir to ensure they do not stick or burn. Once brown add the garlic and stir. Add water and deglaze the bottom of the pan using a wooden spoon to scrape up all the bits.
  • Turn the pot off by selecting CANCEL. This will stop the saute step. To the onions and garlic, add the bell pepper slices. On top of that line the sausage in a single layer over the vegetables.
  • Next, add the full can of diced tomatoes including the liquid. For the last step, add the basil, salt, and pepper. Add the optional red pepper flakes.
  • Once everything is in the Instant Pot, lock the lid in place and be sure the vent valve is closed and sealed. Select MANUAL and press the up/down buttons to set it for 3 minutes.
  • Once it is done cooking let the electric pressure cooker naturally release for 5 minutes. Once the 5 minutes is reached on the digital readout, CAREFULLY open the valve on the Instant Pot to release the remaining pressure. CAUTION - STEAM WILL BE HOT!
  • Serve immediately using a slotted spoon if spooning onto rolls for sandwiches. Enjoy as a sandwich or with pasta, polenta, and more.
  • Instant Pot sausage and peppers can be stored in an air-tighter container in either the refrigerator for up to 5 days or 30 days in the freezer.

4 (4 ounce) links hot Italian sausage
1 red bell pepper, halved and seeded
1 small onion, peeled and cut in half crosswise

  • Preheat an outdoor grill for medium heat. Lightly oil grate, and set 4 inches from the heat.

1 pkg sweet or hot italian sausage
3 peppers (i get different colored ones)
1 large onion
1 tsp garlic powder
1 tsp parsley
1 tsp salt and pepper
1 can(s) stewed tomatoes, italian-style
2 Tbsp olive oil

Steps:

  • 1. In a large skillet, add the olive oil and then the sausage. Brown the sausage on medium heat. Once browned remove in to a bowl. Set aside.
  • 2. Add a little olive oil to the skillet and add the onion (after cutting them into rings). Let them fry while you cut up the peppers.
  • 3. Cut the peppers into strips (throw away stem and seeds), add to the skillet. Cook on medium heat for about 10-15 minutes, until the onions are soft and the peppers are limp.
  • 4. Add the spices, and the stewed tomatoes. Cook on medium for another 10 minutes. Mixing well.
  • 5. Add the sausage back to the skillet. Cover and cook on low or simmer for about 20 minute. Serve on hoagie rolls.
  • 6. (optional) Put the oven on broil. Cut open the rolls and add all the ingredients, top with a slice of mozzarella cheese. Bake for a couple of minutes (I watch it the entire time, it easily burns), Serve
