1 cup couscous
2 bell peppers (red and yellow), cut into chunks
1 (12-ounce) package chicken sausage (preferably garlic-flavored), cut into 1-inch pieces
1 large red onion, cut into chunks
1 cup cherry tomatoes
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1/4 cup fresh parsley
1/4 cup fresh cilantro
4 scallions, roughly chopped
1 tablespoon white wine vinegar

Steps:

  • Soak eight 8-inch skewers in water, at least 15 minutes. Preheat a grill or grill pan to medium high. Prepare the couscous as the label directs.
  • Meanwhile, toss the bell peppers, sausage, onion and tomatoes in a bowl with 1 tablespoon olive oil; season with salt and pepper. Thread onto the skewers, alternating the sausage and vegetables. Grill, turning, until the vegetables are slightly softened and the sausage begins to brown, 6 to 7 minutes.
  • Meanwhile, puree the parsley, cilantro and scallions in a blender with the remaining 2 tablespoons olive oil, the vinegar and 2 tablespoons water. Season with salt and pepper. Brush the skewers with some of the pesto and continue to cook, turning, until the tomatoes are tender and the sausage is charred, 6 to 7 more minutes.
  • Toss the couscous with half of the remaining pesto and season with salt and pepper. Serve with the skewers and the remaining pesto, for dipping.

4 tablespoons honey
1 tablespoon honey mustard
1 teaspoon soy sauce
1 teaspoon Chinese five-spice powder
24 Chipolata sausage
8 large shallots, peeled and halved lengthwise
1 red bell pepper, cut into 1 inch pieces
1 zucchini, cut into 1/2-inch rounds
1 large carrot, peeled and sliced into 1/4 inch thick rounds

Steps:

  • Preheat an outdoor grill for medium-high heat. Soak eight wooden skewers in water to prevent burning when grilled.
  • Mix honey, mustard, soy sauce, and five spice powder together in a large bowl. Add sausage, shallot, red pepper, zucchini, and carrot, and toss thoroughly to coat. Alternately thread sausage, shallot, red pepper, zucchini, and carrot onto skewers.
  • Cook skewers on the prepared grill until sausage is evenly brown and vegetables are tender.

Steps:

  • Cook the sausage according to the directions on the package and cut it into 1-inch rounds. Cut the basil leaves lengthwise into thirds.

1 tablespoon dried basil
1 tablespoon canola oil
1 1/2 lbs Italian sausage, 1 1/2-inch pieces
2 medium zucchini, 1-inch pieces
1 medium red bell pepper, 1 1/2-inch pieces
1 medium green bell pepper, 1 1/2-inch pieces
6 large pimento stuffed olives

Steps:

  • Mix pizza sauce, basil, and oil; reserve.
  • Cook sausage pieces in 10-inch skillet over medium heat about 10 minutes, turning occasionally, until partially cooked; drain.
  • Thread sausage, zucchini and bell pepper pieces alternately on each of six 15-inch metal skewers, leaving space between each.

0.25 cup finely chopped onion
2 tablespoons butter or margarine
0.5 cup apple cider or apple juice
0.25 cup red wine vinegar
2 tablespoons honey
1 tablespoon steak sauce
0.5 - 1 teaspoon salt
0.125 teaspoon pepper
1 pound fresh Italian sausage links
8 small boiling onions or quartered small onions (about 1/2 pound)
8 medium to large mushroom caps
4 cherry tomatoes

Steps:

  • For sauce, in a small saucepan, cook chopped onion in butter or margarine until tender, but not brown. Stir in apple cider or juice, vinegar, honey, steak sauce, salt, and pepper. Bring to boiling. Reduce heat; simmer, uncovered, for 20 minutes, stirring occasionally.
  • Meanwhile, in a large saucepan, add sausages to boiling water. Reduce heat; simmer, covered, for 10 to 15 minutes or until sausages are thoroughly cooked. Drain. Let cool slightly. Meanwhile, start coals for grilling. Cut sausages crosswise into 2-inch pieces.
  • Cook boiling onions, uncovered, in boiling water for 3 to 5 minutes. Drain.
  • On four 10-inch skewers, alternately thread sausage pieces, boiling onions, and mushrooms. Grill the kabobs on an uncovered grill directly over medium-hot coals* for 10 to 12 minutes, turning and brushing often with the sauce.
  • Thread a cherry tomato on the end of each skewer. Return kabobs to grill for 2 to 3 minutes or until tomatoes are heated through. If you like, bring remaining sauce to boiling and serve warm with kabobs. Makes 4 servings.

1 garlic clove, finely chopped
1 dash salt
1 dash fresh black pepper
1 (8 inch) baguette, diced in 1 inches cube
1/2 red onion, cut into 1 inch squares

Steps:

  • Put sausages in a plate going in the microwave and poke them. Cover with plastic wrap leaving an open corner to let escape the steam and cook at high power for about 5 minutes or until not pink inside. (you can do this step in advance, let cool and cover. They will be good until the next day in the fridge.). Cut in slices of 1 1/2 inches of thickness.
  • Meanwhile, in a bowl, mix oil, garlic, salt and pepper. On metal skewers or wood skewers previously soaked in water, thread sausages alternating with bread cubes and onions squares. Baste the skewers with the mixture of oil.
  • Set the barbecue to medium heat. Put the skewers on an oil grill. Close the cover and cook about 10 minutes or until sausages are grilled and onions are tender (flip the skewers 3 times during the cooking time).

4 cloves garlic, minced
8 boneless skinless chicken thighs (1-1/2 lb.), cut crosswise in half
1/4 lb. Italian sausage links, cut into 8 pieces
1 large red onion, cut into 16 wedges

Steps:

  • Mix dressing, sage and garlic. Reserve 1/3 cup dressing mixture. Pour remaining dressing mixture over chicken in shallow dish; turn to coat both sides of each piece. Refrigerate 1 hour to marinate.
