ITALIAN SAUSAGE WHITE BEAN SOUP



Italian Sausage White Bean Soup image

This flavorful Italian sausage white bean soup is loaded with bacon, plenty of tasty sausage pieces, spinach, and oodles of tender cannellini beans.

Number Of Ingredients 11

1 pound Italian sausage (see note)
4 strips bacon (cut into small pieces)
1/2 medium onion (chopped)
3 cloves garlic (minced)
4 (14 fluid ounce) cans white beans (cannellini) (drained)
4 cups chicken broth
1 dash Italian seasoning
1/4 teaspoon dried rosemary
2 small carrots (peeled & chopped small)
2 cups (packed) fresh baby spinach
Salt & pepper (to taste)

Steps:

  • Add the sausage meat to a large soup pot, along with the bacon (I cut it up using kitchen shears).
  • Cook over medium-high heat until the sausage and bacon are somewhat crispy/the fat has been rendered out (this can take upwards of 15 minutes). Meanwhile, prep the other ingredients.
  • Transfer the sausage and bacon to a plate (I don't line it with paper towel because the extra fat adds more flavor, but you can if you want). Leave about 2 tablespoons of fat in the pot (spoon any excess out).
  • Add the onion to the pot and sauté it for 3-5 minutes or until it's softened and starting to lightly brown.
  • Stir in the garlic and cook for 30 seconds.
  • Add the beans, chicken broth, Italian seasoning, and rosemary. Give it a good stir and scrape up any brown bits off the bottom of the pot.
  • Take the pot off the stove. Using an immersion/stick blender, purée the soup. I like to leave some beans whole. The soup will thicken a bit more as it cooks, but the thickness/texture will be similar to what it is after you do this part, so keep that in mind. If you don't have a stick blender, transfer a ladle or two of beans to a regular blender, or use a potato masher or fork for a more rustic texture.
  • Return the sausage and bacon to the pot and add in the chopped carrots as well. Increase the heat to high. Once the soup starts to boil, cover the pot with the lid slightly ajar and reduce the heat so it's simmering. Cook for 15-20 minutes or until the carrots have softened and the soup has thickened up a bit more.
  • Stir in the spinach and let it wilt for a minute or two. Taste and season with salt & pepper as needed. Serve immediately.

1 lb Italian turkey sausage link
3 tablespoons olive oil, divided
1 large onion, chopped
3 garlic cloves, chopped
1 head escarole, washed and coarsly chopped
salt and pepper
6 cups chicken broth
15 1/2 ounces cannellini beans, drained
1/2 cup orzo pasta
1/4 cup finely chopped fresh parsley
2 tablespoons lemon juice (optional)

Steps:

  • Remove casing and cut each sausage link into 8 pieces; shape into balls.
  • Heat 1 Tbsp oil in large pot on MEDIUM. Add sausage balls and cook, turning to brown all sides, 3-4 minute
  • Remove sausage from pan and set aside. Discard pan drippings.
  • Return pan to heat; add remaining 2 Tbsp basting oil and onions.
  • Cook, stirring occasionally, 2-3 min, until onions are translucent.
  • Add garlic; cook, stirring until softened, about 1 minute
  • Add escarole; cook, stirring occasionally, 1-2 min, until wilted.
  • Stir in stock, beans, and browned sausage; heat to boiling on MEDIUM-HIGH.
  • Reduce heat and simmer 10 minute
  • Add pasta; simmer 10 minute
  • Add parsley and lemon juice. Season to taste with salt and pepper.

3 tablespoons olive oil
12 Italian sausages (about 3 pounds), casings removed
1 cup chopped onion
1/2 cup chopped prosciutto (about 2 ounces)
1 tablespoon minced garlic
1/2 teaspoon dried crushed red pepper
1 large head escarole, chopped (about 10 cups)
3/4 cup dry white wine
4 (15-ounce) cans Great Northern beans, rinsed, drained
1 cup chicken stock or canned low-salt chicken broth
Freshly grated Parmesan cheese (optional)

Steps:

  • Heat oil in heavy large pot over medium-high heat. Working in batches, sauté sausage until cooked through, breaking up with back of spoon, about 6 minutes per batch. Using slotted spoon, transfer sausage to bowl, leaving drippings in pot. Reduce heat to medium; add onion to pot and sauté until translucent, about 5 minutes. Add prosciutto and sauté 1 minute. Mix in garlic and crushed red pepper. Add escarole and sauté until wilted, about 2 minutes. Add wine and cook 2 minutes. Add beans, stock and sausage and simmer 10 minutes to blend flavors. Season to taste with salt and pepper. Transfer to large bowl. Top with grated Parmesan, if desired.

1 cup Contadina® Crushed Tomatoes
2 tbsp extra virgin olive oil, divided
1 head escarole, chopped
5 cloves garlic, crushed, divided
1/2 lb mild Italian sausage links
1 large yellow onion, chopped
1/4 cup of your favorite fruity red wine
3 cups low sodium beef broth
2 tsp dried oregano
1 cup canned Cannellini beans, rinsed, drained
Sea salt and freshly cracked black pepper to taste
Parmigiano-Reggiano

Steps:

  • 1. Remove the sausage from its casing and set aside. 2. Heat a stock pot or Dutch oven on medium heat. Add 1 tablespoon of olive oil to the pan. 3. Add the chopped escarole, one clove of crushed garlic, a pinch of sea salt, and sauté until wilted. Adjust heat to prevent burning. Remove from the pot and set aside. 4. Add the sausage to the pan, breaking it up into small pieces with a wooden spoon or rubber spatula. Cook on medium heat until browned and slightly caramelized. Remove from the pan and set aside with the escarole. 5. Add the remaining tablespoon of olive oil to the pan. 6. Add the onions and cook on medium heat until slightly caramelized. 7. Add the remaining crushed garlic and stir to incorporate. 8. Immediately add the wine to deglaze the pan and prevent the garlic from burning, scraping up any brown bits from the bottom of the pan. 9. Return the sausage and escarole to the pan and stir to incorporate. Add the tomato paste, stir to incorporate. 10. Add the beef broth and crushed tomatoes, stir to incorporate. Let simmer on medium until the soup just comes to the boil. 11. Taste for salt and pepper; add as needed to taste. Add the dried oregano. 12. Add the Cannellini beans and simmer on medium/low for 20 minutes; adjust heat as needed to prevent a rolling boil. 13. Taste for seasoning and add salt and pepper as needed. 14. Serve warm with shaved Parmigiano-Reggiano on top.

1 onion, chopped
1 celery stalk, chopped
1 carrot, peeled and chopped
2 garlic cloves, smashed and peeled

2 1/2 cups cooked cannellini beans, with a little of the liquid
4 cups chicken broth
1 head escarole or 5 cups baby spinach, chopped

Steps:

  • Heat a medium Dutch oven over medium-high heat. Add 2 tablespoons olive oil to the pan along with the onion, celery, carrot and garlic. Season with the salt and cook, stirring often for about 4 minutes, or until fragrant and soft. Add the red pepper flakes, if using, and cannellini beans and stir to combine.
  • Add the broth and bring to a simmer. Reduce the heat to medium to maintain a gentle simmer and cook for 5 minutes. Add the escarole and stir to wilt. Cook an additional 5 minutes. Serve topped with a drizzle of the remaining olive oil, fennel pollen and Parmigiano-Reggiano, if using.

I grew up eating this, not just as a side dish, but as a main meal. My grandmother would make a pot of it, and spoon some over a thick slab of Italian bread, which would absorb the juices. This is true comfort food to me! However, if that doesn't sound like a meal to you, you can always add 1 pound of Italian sausage. Reduce the olive oil to 1 T., and cook the sausage, turning occasionally, until browned and cooked through, about 10 minutes. Transfer to a cutting board and let rest at least 5 minutes before slicing. Then add the onions to the pan and continue from there.

1 cup uncooked whole wheat orzo pasta
