SAUSAGE, PEPPERS, ONIONS, AND POTATO BAKE
This is an Italian comfort food classic! The smell of this cooking in my kitchen transports me back to playing on the street in front of my Papa and Gigi's house in Brooklyn. I make 2 trays of this for every family get-together, and it's gone in a flash!

- Preheat oven to 400 degrees F (200 degrees C).
- Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
- Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
- Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.
- Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.
- Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.

- Preheat oven to 425° F (220° C).
- Place oven grate on the lower center rack, that is the second from the bottom.
- Add the potato wedges to a large pot of cold salted water.
- Bring to a boil, reduce the heat and then simmer until tender or a knife can pierce through. This takes about 8-10 minutes all depending on how thick your wedges are.
- Add 2 tablespoons of olive oil to a large skillet, over medium-high heat.
- Lower the heat to medium, add 3-4 chopped garlic cloves and stir for about 30 seconds.
- Add the 2 sliced onions and cook for about 5-7 minutes.
- Add salt and pepper to taste. If you like a little heat, go ahead and add a pinch or two of red pepper flakes.
- Add the Italian sausages to the pan and combine with the onions. Saute for about 10 minutes.
- Check the potatoes for doneness.
- If a knife can easily be inserted, they are done. With a slotted spoon, transfer the parboiled potatoes to a large bowl.
- Add 1 teaspoon of paprika and 1 tablespoon of olive oil. Combine with the parboiled potatoes and set aside.
- Add the sliced red and yellow peppers and the green onions to the pan. Saute for about 5 minutes or until they just begin to soften
- Transfer both the sausage and the potato mixture to a large deep baking dish (approximately 9 x 13 inches).
- Toss gently together.
- If desired, sprinkle with a little more paprika, about ½ teaspoon or so.
- Cover with aluminum foil and bake for about 20 minutes.
- Uncover and bake for another 15-20 minutes or until most of the moisture has evaporated and the top layer appears to be nicely roasted.
- Transfer to a serving dish, garnish with fresh chopped parsley and serve.

OVEN ROASTED SAUSAGE PEPPERS AND POTATOES
During the winter months you can't beat tossing a few things together in a little extra virgin olive oil and seasoning and letting them roast! The flavors really deepen and you get a beautiful char on everything. This dish reminds me of the summer I spent in Calabria at a villa near the town of Tropea where everything had a spice to it. The oil, the sausage and especially the peppers! I wanted to make a dish with a little calabrese flair and the first thing that came to mind was sausage and peppers. I started by pan frying the sausage a bit for a nice sear on the outside. This also makes it easier to cut the sausage into pieces. I used mini sweet peppers because they're bursting with flavor and I love the contrast against the spicy hot sausage. I threw in some sliced baby red potatoes which take on a wonderful buttery quality when cooked and really absorb flavor well. I also added some sweet red onions which remind me of the famous red onions of Tropea and have more flavor than the white or yellow variety.

- Put a large saute` pan over a medium-high flame and heat 1 tablespoon of the oil. Using a fork prick the sausage links all over. Place the links in the saute pan and cook until browned on all sides, about 5-7 minutes. Transfer to a plate and slice the links in half. Set aside. Preheat the oven to 450 degrees. In a large mixing bowl toss together 1/2 cup of the oil, sliced potatoes, peppers, onions and garlic. Season with salt and pepper as desired. Spread the mixture in a large roasting pan or a 13x18 inch baking sheet. Top with the sausage and roast for 30-40 minutes turning halfway though.

- 1. Brown Sausages: Heat one tablespoon of olive oil in 12 inch skillet over medium high heat until just soking. Brown sausages lightly on all sides, about 3 minutes total. Transfer to plate and set aside. 2. Microwave potatoes: Meanwhile toss potatoes with remaining 1 tablespoon olive oil, 1/2 teapoon salt, and 1/4 teaspoon pepper in microwave-safe bowl. Cover tightly with platic wrap and microwave on high until potatoes brgin to soften, about 5-7 minutes. Shake bowl without removing plastic halfway through cooking time to toss them. 3.Saute peppers and onions: Pour off all but 1 tablespoon fat from skillet. Add bell peppers nd onion and return to medium high heat until peppers begin to soften, about 5 minutes. Stir intomato paste and garlic, and cook until fragrant, about 30 seconds. 4. Cook Sausages: Stir in wine, water, and oregano, scraping up any browned bits from the bottom, and bring to a simmer. Nestle sausages and potatoes into the vegetables, cover and reduce heat to medium-low. Cook until sausages are no longer pink in center, about 10-12 minutes. 5. Season: Stir in vinegar and season with salt and pepper to taste. Mix well and serve.

I got this recipe from my mother inlaw, it is cheap and easy to put together. I love to throw this together on a cold, snowy Sunday morning - then I can just throw it in the oven later and go about my business while dinner cooks. Add a salad or crusty itallian bread for a side and you are all set. I sometimes use turkey sausage for a lower fat dish.

- Preheat oven to 350.
- Heat a large pot of water to boiling, add sausage, (poke a few holes in them to let the fat out) cover and turn the heat off. Let poach for 20 minutes; drain and refrigerate untill cool. (I usually do this while making dinner the night before). Slice the sausages into 1/4 to 1/2 inch coins.
- In a large casserole dish, layer half the potatoes, half the onion, half the peppers and half the sausage. Salt and pepper if desired.
- Repeat layers.
- Sprinkle cheese on top, cover with foil and bake at 350 for 1 1/2 hours or untill potatoes are cooked through. Remove foil for last 15 minutes of cooking.

- Add the seasoned peppers and onions into 9x13 pan. Scatter. Add the seared sausages on top of vegetables. Take any excess veggies from the sides and tops of the dish and place them on top of the sausages. If you didn't add the minced garlic yet do so now. Add the minced garlic on top of the veggies. Cover and bake for one hour. *See notes for slow cooker. Remove the foil and bake for an additional 20 mins. Serve hot with the optional sliced fried potatoes.
