6 large whole heads garlic
1 tablespoon olive oil
2 teaspoons salt, divided
1 1/2 teaspoons freshly cracked black pepper, divided
6 tablespoons unsalted butter
3/4 cup all-purpose flour
4 cups chicken stock
2 cups water
1 tablespoon Italian seasoning
1 cup heavy cream, if desired
2 tablespoons minced fresh Italian flat-leaf parsley
2 tablespoons extra-virgin olive oil
Asiago Crostini, recipe follows
1/3 cup olive oil
2 cloves garlic, finely minced
1/4 teaspoon freshly ground black pepper
1/2 teaspoon hot Hungarian paprika
1/2 teaspoon dried oregano, crushed
1 sourdough baguette, sliced into 1-inch thick pieces, cut slightly on diagonal
1/2 cup shredded Asiago cheese

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut the tops off the garlic heads just to expose the bulbs and remove any excess papery skins. Place in a large sheet of aluminum foil and drizzle with 1 tablespoon olive oil and 1/2 teaspoon each of the salt and pepper. Close the foil around them, leaving a space between the tops and the foil, and place on a baking sheet in the oven. Roast until soft and fragrant, about 1 hour 15 minutes. Remove, cool, and squeeze out the garlic into a bowl.
  • In a large, heavy soup pot (preferably enameled cast iron) over medium-high heat, melt the butter, add the roasted garlic, and cook for 5 minutes. Add in the flour and cook until a dark golden roux is achieved, an additional 5 to 6 minutes, stirring frequently. Add 1 cup chicken stock, incorporate, and repeat until all the chicken stock had been added. Repeat with the water. Add the Italian seasoning, remaining salt and pepper, and stir to combine well. Bring to a simmer and cook for 15 minutes. Add in the cream, if using, cook for 10 minutes more at a very low simmer, stirring occasionally. Adjust the seasoning, if needed, and serve garnished with a sprinkle of the parsley and a fresh drizzle of the extra virgin olive oil. Serve with Asiago Crostini.
  • Preheat the oven to 400 degrees F.
  • In a small bowl, combine the oil, garlic, and spices and mix well. Place the bread slices on a parchment-lined baking sheet.
  • With a basting brush, coat each piece with the oil-spice mixture. Sprinkle each slice with about 1 teaspoon of the shredded cheese.
  • Place in the oven and cook until cheese is melted and bread is starting to crisp and darken around the edges, 8 to 10 minutes.
  • Remove and let cool before serving.

Steps:

  • Remove papery outer skin from garlic (do not peel or separate cloves); cut top off bulb. Melt 1-1/2 teaspoons butter; drizzle over garlic. Wrap in heavy-duty foil. Place in a 9-in. round baking pan; set aside., Place potatoes and onions in a single layer in an ungreased 15x10x1-in. baking pan. Drizzle with oil; sprinkle with salt and pepper. Toss to coat. , Bake garlic and potato mixture at 400° for 35-40 minutes or until tender, stirring vegetables once. Cool slightly., In a blender, combine 2 cups broth and half of the vegetable mixture; cover and process until blended. Repeat with 2 cups broth and remaining vegetable mixture; set aside., In a large saucepan, melt remaining butter. Stir in flour until smooth; gradually add remaining broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Squeeze softened garlic into pan. Stir in milk and pureed vegetables; heat through.

1 1/2 tablespoons olive oil
1 cup chopped yellow onion
2 stalks celery, chopped
3 1/2 cups chicken stock or 3 1/2 cups broth
1 (15 ounce) can cannellini beans or 1 (15 ounce) can white beans, drained, rinsed and drained again
1/2 teaspoon dried basil
3/4 teaspoon salt
fresh ground black pepper
1 bay leaf
1/2 cup half-and-half (I used fat free 1/2 & 1/2) or 1/2 cup milk (I used fat free 1/2 & 1/2)
freshly grated parmesan cheese, for topping
chopped fresh parsley, for topping

Steps:

  • Preheat oven to 350°.
  • Rub off some of the papery outer skins of the garlic heads but do not peel them or separate the cloves, leave the heads intact.
  • Slice 1/4" off the top of each garlic head.
  • Place the heads, cut side up, in a lightly sprayed or oiled baking dish.
  • Drizzle 1/2 teaspoons oil over each head.
  • Bake, uncovered, until golden, about 1 hour.
  • Cool slightly then press the whole head with your hand all at once to release the garlic pulp.
  • Place the pulp in a bowl and set aside.
  • In a large soup pot over medium heat, warm the remaining oil.
  • Add onion and celery and saute until tender, about 5 minutes.
  • Add reserved garlic pulp, stock, beans, basil salt, pepper and bay leaf.
  • Bring to a boil; reduce heat to medium-low and simmer, uncovered, 15 minutes.
  • Remove bay leaf and discard.
  • In a food processor or blender (or better yet, an immersion blender, which is what I used), puree soup in batches.
  • Return to pot and stir in half-and-half.
  • Simmer until flavors are blended, about 5 minutes.
  • Ladle into bowls and sprinkle with Parmesan cheese and parsley.

1/4 cup olive oil
6 tablespoons unsalted butter
4 leeks, white part only, about 4 cups sliced, rinsed very good (save green tops and the root ends for stock can be frozen)
1 onion, diced
1/4 cup all-purpose flour
4 cups vegetable stock
1/3 cup dry sherry
1 cup whipping cream
fresh lemon juice
salt
lots of fresh white pepper
2 garlic cloves, sliced very thinly
2 tablespoons olive oil
chives, minced

Steps:

  • Preheat oven to 350°F.
  • Cut off top 1/4 inch of each garlic head.
  • Place garlic heads in small shallow baking dish.
  • Drizzle oil over.
  • Season with salt and pepper.
  • Bake until golden, about 1 hour.
  • Cool slightly.
  • Press individual garlic cloves between thumb and finger to release garlic, Should be like butter.
  • Chop garlic.
  • Melt butter in heavy large saucepan over medium heat.
  • Add leeks and onion and saute until onion is translucent, about 8 minutes add garlic.
  • Reduce heat to low.
  • Add flour and cook 5 minutes, stirring occasionally.
  • Stir in hot stock and Sherry.
  • Simmer 20 minutes, stirring occasionally.
  • Cool slightly.
  • Puree soup in batches in blender or processor.
  • Return soup to saucepan.
  • Add cream and simmer until thickened, about 10 minutes.
  • Meanwhile.
  • Heat olive oil then quickly saute garlic slices till crisp and tan.
  • Add lemon juice to taste.
  • Season with salt and white pepper.
  • Ladle into bowls.
  • Garnish with fried garlic slices and minced chives.

This recipe uses over 40 cloves of garlic. And it's the perfect amount to produce a subtle garlic flavor that's richly creamy. Some of the cloves get roasted ahead of time in the oven; you can do this a day ahead of time. And the rest are simmered until soft in the broth. Since the garlic gets cooked to softness, this takes the edge off the sharp garlic flavor of raw or flash-sautee'd garlic. If you like some garlic with bite, feel free to garnish the soup with some raw cloves that have been minced.

2 medium onions, (sliced (about 2 generous cups))

Steps:

  • For the roasted garlic, this can be done a day ahead:
  • Preheat the oven to 350F degrees. Cut the bottom portion off where the garlic attaches to the base. To make peeling the garlic easy, you can smash them a bit then the peel will come right off. Place garlic in small glass baking dish. Drizzle with 2 tablespoons olive oil and add a dash each of salt and pepper. Toss to coat. Cover baking dish tightly with a lid or foil and bake until garlic is golden brown and tender, about 45 minutes. Transfer cloves to small bowl. If making the day before, place cooled garlic in a plastic bag or covered dish and refrigerate until needed. By the way, this roasted garlic is fabulous anytime for a garlic paste or just for snacking on the roasted garlic cloves. The oil, salt and pepper, and roasting method create a fabulous treat.

Steps:

  • Place a medium, heavy soup pot over medium heat. Add the butter, olive oil, and shallot. Cook, stirring occasionally, until the shallots are softened, about 5 minutes. Add the sage and beans and stir to combine. Add the stock and bring the mixture to a simmer. Add the garlic and simmer until the garlic is softened, about 10 minutes. Pour the soup into a large bowl. 8 garlic cloves

Steps:

  • Preheat oven to 400*F.
  • Place the tomatoes, garlic, shallots, rosemary, and thyme in a 9x11" baking dish. Cover with the olive oil. Bake until the tomatoes begiin to brown, 15-20 minutes.
  • Using a slotted spoon, transfer this mixture to a heavy stockpot and add the liquid from the baking dish. Add the vegetable stock and simmer over medium heat until the tomatoes and the liquid are reduced by one third, about 15-20 minutes.
  • Add the balsamic viniegar, basil, black pepper, and salt and simmer for 5-10 minutes. Puree in a blender or in batches in a food processor.
  • Strain the soup through a sieve into a tureen or soup bowl.
  • Serve hot, topped with freshly grated Parmesan or goat cheese. Enjoy!
