- Spray inside of 4.5-quart slow cooker and large skillet with cooking spray. Heat skillet over medium-high heat. Sprinkle beef with salt, Italian seasoning and pepper; cook 3 to 5 minutes or until browned on each side, turning once. Place beef in slow cooker.
- Add broth to skillet, stirring to loosen brown bits from bottom of skillet; pour over beef in slow cooker. Pour undrained tomatoes over beef. Cook on LOW 8 to 10 hours or HIGH 4 to 6 hours, until beef is very tender. Remove beef from slow cooker and shred with two forks; return to slow cooker.
- To serve: Place 2 pieces of cheese on bottom of each roll. Top evenly with shredded beef, giardiniera and peppers. Serve with cooking juices for dipping, if desired.

- Sprinkle chicken with 1/8 teaspoon each salt and pepper. Heat 1 tablespoon oil in a large skillet over medium heat. Add the chicken and cook, turning once, until browned and an instant-read thermometer inserted into the thickest part registers 165 degrees F. Transfer to a plate.
- Add the remaining 1 tablespoon oil, zucchini and onion to the pan. Cook, stirring, until starting to soften, about 2 minutes. Increase heat to medium-high and add wine. Cook, scraping up any browned bits, until the liquid has mostly evaporated, about 2 minutes. Add tomatoes, cream cheese, Italian seasoning, garlic powder and the remaining 1/8 teaspoon each salt and pepper. Bring to a simmer and cook, stirring to melt the cream cheese, for 5 minutes. Return the chicken to the pan and turn to coat with the sauce. Serve topped with basil.

- 1. S&P chicken thighs both sides. Place on bottom of crockpot.
- 2. Combine rest of ingredients in bowl and whisk. Pour over chicken. Making sure chicken just covered (may have to add or subtract some sauce) Cover and set on low for 7-8 hrs. Shredd chicken with forks. Will shred easily.
- 3. Spread rolls with butter. Sprinkle with garlic powder and italian seasonings and toast in oven for a min.
