1 lb ground beef
2 cups mashed potatoes
14 ounces diced tomatoes
1/2 cup onion
1/2 cup shredded parmesan cheese
1 tablespoon parsley

Steps:

  • Brown ground beef in skillet. Drain off excess fat.
  • Place ground beef, seasoned with salt and pepper if desired, in bottom of shallow baking dish.
  • Cook 2 cup mashed potatoes according to box directions.
  • Layer mashed potatoes over ground beef.
  • Drain juice from diced tomatoes and cover mashed potatoes with diced tomatoes and onions.
  • Sprinkle parmesan cheese and parsley over tomatoes and onions.
  • Cook in a 350°F oven for 30 minutes.

1 (9 inch) pie shells, unbaked
1 lb Italian sausage, bulk
1 cup cottage cheese, small curd
1 egg
1 1/2 cups potatoes, mashed, prepared with out milk and butter, warm
1/4 cup sour cream
1/2 teaspoon italian seasoning
1/2 teaspoon salt
1/8 teaspoon pepper
2 teaspoons melted butter
1 cup cheddar cheese, shredded

Steps:

  • Line unpricked crust with a double thickness of heavy duty foil.
  • Bake at 450 for 7 minutes.
  • Reduce oven heat to 350.
  • Brown sausage and drain well.
  • Place cottage cheese and egg into blender and process until smooth.
  • Stir into potatoes along with the sour cream and seasonings.
  • Place sausage in paster shell and top with potatoes.
  • Drizzle with butter.
  • Bake for 50-60 minutes or until set.
  • Sprinkle with cheese and let stand until melted.
  • Serve.

My family has many different versions of potato pie. This is one of them. I serve this with a garden salad.

2 lbs potatoes, peeled
1/4 cup butter, softened
1/2 cup sour cream
1/2 cup chives (optional)
salt and pepper
12 ounces mozzarella cheese, sliced
3 medium tomatoes, peeled, sliced
1 teaspoon basil
1 teaspoon oregano
1/2 cup parmesan cheese
1/4 cup butter, melted

Steps:

  • Cover the potatoes with salted water and boil till tender. Drain and mash.
  • Stir in softened butter, sour cream, chives, seasoned salt and pepper.
  • Butter and lightly flour 9 1/2-inch deep pie plate. Spread in mashed potatoes.
  • Arrange 6 oz. Mozzarella cheese on potatoes. Top with tomatoes. Sprinkle with basil and oregano.
  • Top with remaining Mozzarella cheese, Parmesan cheese and melted butter. Bake at 425°F for 25 to 30 minutes or until cheese if melted. Cool slightly before cutting.
