2 pounds boneless pork loin, cut into 1-inch pieces
4 tablespoons olive oil, divided
1 large onion, chopped
5 garlic cloves, crushed
1 can (28 ounces) diced tomatoes, undrained
1 cup dry red wine or beef broth
3 bay leaves
1 cinnamon stick (3 inches)
1 tablespoon tomato paste
1 tablespoon red wine vinegar
1 teaspoon anchovy paste
1 teaspoon each dried oregano, basil and sage leaves
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
1/4 cup minced fresh parsley
Hot cooked bow tie pasta
Grated Parmesan cheese

Steps:

  • Place flour in a shallow dish. Add pork, a few pieces at a time, and turn to coat. In a Dutch oven, brown pork in 3 tablespoons oil in batches. Remove and keep warm., In the same pan, saute onion in remaining oil until crisp-tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, wine, bay leaves, cinnamon, tomato paste, vinegar, anchovy paste, herbs, salt, pepper flakes, pepper and pork; bring to a boil., Reduce heat; cover and simmer for 1-1/2 hours, stirring occasionally. Stir in parsley. Cover and cook 30-40 minutes longer or until meat is tender. Skim fat; discard bay leaves and cinnamon stick., Serve with pasta; sprinkle with cheese. 2 tablespoons extra-virgin olive oil
6 large (1-inch thick) bone-in, center-cut pork chops
1 medium onion
2 cloves garlic, minced
2 (14.5-ounce) cans diced tomatoes
1 1/4 cups chicken broth
1 tablespoon thyme
Kosher salt, to taste
Freshly ground black pepper, to taste

Steps:

  • Gather the ingredients.
  • Heat the oil in a large skillet or sauté pan over medium-high heat and brown the pork chops on both sides. Drain off excess fat. Remove the pork chops and set aside.
  • Peel the onion and cut it in half lengthwise. cut the halves into thin slices.
  • Add the sliced onion to the pan and reduce the heat to medium-low. Continue to cook for 2 to 3 minutes, or until softened.
  • Add the pork chops back to the pan with the garlic, tomatoes, broth, thyme, salt, and pepper; reduce the heat to low. Cover the pan and simmer for about 30 minutes, or until the chops register at least 145 F.

Steps:

  • Preheat oven to 350 degrees.

The trick is to cook slowly with enough heat, but not so much that the chops are boiling to get tough and dry. And the cooking time is very flexible...you can simmer these for up to 6 hours if you'd like. (By the way, I consider the salt and pepper "freebies" in the ingredient count!)

4 -6 boneless center cut loin pork chops (1/2-3/4-inch thick)
1 (14 1/2 ounce) can del monte stewed tomatoes, Italian Recipe (with basil, garlic and oregano)
1 tablespoon olive oil
salt and pepper

Steps:

  • Heat oil over medium-high heat in large frying pan that has a lid.
  • Season pork chops with salt and pepper.
  • Sear chops in pan till lightly browned, about 1-2 minutes per side.
  • REMOVE frying pan from burner (so you don't burn yourself on next step).
  • Slowly pour can of stewed tomatoes over chops. Distribute tomatoes so some are under chops and the balance is evenly covering the tops of the pork chops.
  • Cover pan and return to burner. Reduce heat to low and simmer (do not boil) for 2-3 hours, or until chops are fork tender. You can leave the chops on low for even longer, if you prefer - adjust to your schedule.

6 ounces mozzarella cheese, sliced into 4 slices
1 cup flavored Bread crumbs
1 egg, whisked with a fork
4 fresh basil leaves

1/4 cup red wine
1 Can Stewed Tomatoes
1/2 tsp. minced garlic

Steps:

  • Create a pocket in each pork chop and stuff each with one slide of mozzarella cheese and one basil leaf. Dip each pork chop into the egg, then the bread crumbs. Seal the chops with a tooth pick Add the oil to a large saucepan and brown each pork chop on both sides. Pour off the remaining oil, but leave the chops in the pan and deglaze the pan with the red wine allowing the chops to soak up the wine. Put the pork chops into a 9x11 baking dish, sprinkle with garlic. Pour the entire can of stewed tomatoes over the pork chops.
