GRANDMA'S ITALIAN PIZZELLE COOKIES
An Italian waffle cookie made with a pizzelle iron. Sprinkled with powdered sugar. Once completely cooled, store in a container with a well-fitting lid.

Steps:
- Preheat a pizzelle iron according to manufacturer's instructions.
- Beat eggs, sugar, and butter together using an electric mixer. Add flour and extracts; beat until combined.
- Spray the inside of iron lightly with cooking spray.
- Drop batter by teaspoonfuls into the center of each pizzelle grid. Close lid and bake until steam stops and cookies are light golden brown, 45 to 60 seconds.
- Peel pizzelle off using a fork and lay flat on a newspaper. Sprinkle with powdered sugar while warm and let sit for 1 minute. Dust the other side. Repeat with remaining batter to make about 30 cookies.

CLASSIC ITALIAN PIZZELLE: MY FAMILY RECIPE
Pizzelles are classic Italian cookies flavored with anise and made in a pizzelle maker.

Steps:
- Whisk together your eggs, sugar, vanilla and anise (see how to anise above) in a medium bowl.
- Now add your flour, salt and baking powder and mix it well until there are no lumps and it looks smooth.
- Now add your melted butter and mix that in to your mixture.
- Pre-heat your pizzelle maker. They are all a little different so follow the manufacturers instructions for this.
- Once it is heated, add a heaping tablespoon of your thick dough to the middle of each of your pizzelle areas on the iron. Close and cook for about 30-45 seconds until it is a light golden color. If the pizzelle is too light in color you can just close the pizzelle maker and cook the pizzelle for a few more seconds.
- Once they are cooked, remove the pizzelles from the iron (they will still be soft and pliable at this point) and place on a cooling rack where they will cool and get nice and crispy. Keep doing this until all the dough is used up!
- Once all of your pizzelles are fully cooked and cooled, you can go ahead and clean them up if you would like by lightly breaking off any parts of the pizzelle that went beyond the design edge. I find this to be relaxing but it is not necessary :)

- In a medium bowl, beat the eggs with an electric mixer until light. Add the sugar, butter, lemon zest and vanilla, mix well. Stir in the flour and baking powder.

PIZZELLE
Hailing from Abruzzo in Central Italy, pizzelle are crisp, flat waffle-esque cookies made in a special hot iron. Like mostaccioli, these cookies predate Christmas -- in fact, it is said that this is the oldest known cookie recipe on earth, dating back to the 8th century BC. In olden times, presses were made from cast iron and would be heated over a fire, or directly on the stovetop. You can still find those irons if you're up to the challenge, but electric irons are much easier to use, and very easy to find both online and at major retailers.

- Whisk together the sugar, butter, milk, vanilla, anise extract if using and eggs in a large bowl. Add the flour, baking powder and salt, and continue to whisk until the batter is smooth. Allow to stand at room temperature for at least 1 hour so the batter can hydrate.
- Heat the pizzelle iron, and cook your pizzelles according to the manufacturer's directions.
ITALIAN PIZZELLE COOKIES
This recipe comes from my Italian aunt, who every Christmas makes some of the best cookies. You can substitute vanilla and lemon extract for flavor variation. Sometimes it helps to be smarter than a 5th grader when you make these.

- Preheat a nonstick pizzelle iron.
- In a large bowl, whisk the eggs. Slowly add the sugar and continue whisking until well blended.
- Whisk in the extracts. Slowly whisk in the melted butter in a steady stream and continue whisking until mixture is smooth.
- Slowly add the flour and continue to whisk until it is completely incorporated into the batter.
- Drop 1 TBSP batter onto center of each side of your pizzelle iron, close and clasp. Cook for 30-60 seconds depending on your iron.
- Remove with a small spatula and cool completely.
- Repeat with remaining batter.
