My favorite recipes are ones with few ingredients that I normally have on hand and are hard to mess up. You can add more or less of each ingredient depending on your tastes. Hope you enjoy it!

2 tablespoons olive oil
1 medium onion, chopped
2 large bell peppers, sliced into thin strips
2 cloves garlic, minced
⅓ cup soy sauce
⅓ cup honey
⅓ cup red wine vinegar
1 ½ pounds flank steak, cut into thin strips

Steps:

  • Heat olive oil in a skillet over medium heat. Cook onion, bell peppers, and garlic in oil until tender-crisp, stirring frequently. Set aside.
  • Heat a large skillet over medium-high heat. Pour soy sauce, honey, and red wine vinegar in pan, then add beef. Cook beef, stirring frequently, until done, about 10 to 15 minutes. Stir in cooked vegetables, and cook another 10 to 15 minutes.

1 teaspoon Italian seasoning, divided
1/2 teaspoon salt, divided
1/2 teaspoon pepper, divided
1 pound beef top sirloin steak, trimmed
1 medium sweet red pepper, julienned
1 medium sweet yellow pepper, julienned
1 medium onion, julienned
6 garlic cloves, peeled and thinly sliced
1 tablespoon olive oil
1 can (14-1/2 ounces) diced tomatoes, drained
1 teaspoon balsamic vinegar

Steps:

  • In a small bowl, combine 1/2 teaspoon Italian seasoning, 1/4 teaspoon salt and 1/4 teaspoon pepper. Rub mixture over both sides of steak; set aside., In a large nonstick skillet, saute the peppers, onion and garlic in oil until vegetables are crisp-tender. Stir in the tomatoes and remaining Italian seasoning, salt and pepper. Reduce heat; cover and simmer for 5 minutes. Remove from the heat. Stir in vinegar; keep warm., Place steak on a broiler pan coated with cooking spray. Broil 4-6 in. from the heat for 4-8 minutes on each side or until the meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 5 minutes before slicing; serve with vegetable mixture.

A Palermo Style Italian Steak Recipe: perfectly grilled rib-eye steaks topped with a salty crunchy mixture of garlicky capers over a bed of wine broiled tomatoes.

2 rib-eye steaks (organic grass fed)
4 tbsp olive oil
1/2 lb grape or cherry tomatoes
3 leave thyme sprigs (sonly)
1 anchovy
1 1/2 tbsp capers
1 tbsp bread crumbs (plain)
1 clove garlic (grated)
a splash of white wine (dry)
sea salt (to taste)
freshly cracked black pepper (to taste)

Steps:

  • Preheat your broiler.
  • Pat the steaks dry with paper towels and allow them to rest at room temperature for 20 minutes before cooking.
  • Slice the tomatoes and add them to a broiler proof dish. Drizzle with a lug of olive oil and a good pinch of sea salt. Add half of the thyme leaves and a splash of wine.
  • Broil the tomatoes for a few minutes until they burst and are charged around the edges and the top. Transfer to a serving plate together with all the juices.
  • Meanwhile drizzle the steaks with a lug of liv oil and sprinkle generously with the salt and pepper. Massage the oil and spices into the steaks with your hands and set aside.
  • Preheat a cast iron pan or griddle on medium high flame and sear the steaks for 3 minutes on each side for a medium rare steak.
  • in a small bowl combine the capers, garlic, anchovies, bread crumbs with a lug of olive oil. Spoon the mixture on top of the steaks and transfer them to the broiler for a couple of minutes until golden brown on top, making sure not to burn them.
  • Transfer the steaks on top of the broiled tomatoes and serve garnished with the remaining thyme leaves and a drizzle of extra virgin olive oil.

1/4 cup olive oil
1 1/2 pounds green peppers (4 large)
fresh garlic
salt and pepper
1 1/2 tsp oregano
1/2 cup butter
1/2 lb mushrooms, sliced
1 1/2 lb. beef tenderloin, cut into 2" squares
1/4 cup flour
1/4 cup sherry or sauterne
1/2 cup crushed tomatoes
2 medium tomatoes, cut up
Beef stock
10 oz pappardelle or thick pasta
(can substitute variety of peppers in season such as banana, melrose, etc. - don't use any hot peppers)

  • In 1/4 c. oil, saute peppers cut into 1 1/2" squares with several slivers of garlic for about 5 minutes, turning often. Season with 1 tsp salt, 1/4 tsp pepper and 1/2 tsp oregano. Cover and steam 5 more minutes, stirring frequently. Still should be crisply tender. Set aside. In 1/4 cup butter, saute several slivers of garlic and mushrooms. Add 1/2 tsp salt, 1/8 tsp pepper and 1/2 tsp oregano. Cook about 3 minutes, stirring often. Pour into peppers. In 1/4 cup butter, saute several slivers of garlic for about 1 minute, add meat and cook about 2-3 minutes on each side or until brown. Season with 1 1/4 tsp salt, 1/2 tsp oregano, 1/4 tsp pepper, flour, sherry and crushed tomatoes. Cover and steam about 5 minutes, turning several times. Add beef stock if it gets too thick. Meanwhile, combine cut up tomatoes with peppers and mushrooms. Just before serving, cook all vegetables together with meat mixture for about 5 minutes. Pour over noodles to serve.

1 pound beef top round steak, cut into 1/4-inch x 2-inch strips
1 tablespoon paprika
2 tablespoons butter
1 can (10-1/2 ounces) beef broth
2 garlic cloves, minced
2 medium green peppers, cut into strips
1 cup thinly sliced onion
2 tablespoons cornstarch
2 tablespoons reduced-sodium soy sauce
1/3 cup cold water
2 fresh tomatoes, peeled and cut into wedges
Cooked rice

Steps:

  • Sprinkle meat with paprika. In a large skillet, melt butter over medium-high heat. Brown beef. Add broth and garlic. Simmer, covered, for 30 minutes. Add green peppers and onion. Cover and continue to simmer for 5 minutes. , Combine cornstarch, soy sauce and water; stir into meat mixture. Cook and stir until thickened. Gently stir in tomatoes and heat through. Serve over rice.

So I pulled this recipe from TOH and decided to resolve the issue in my own kitchen. I didn't have many leftovers, even though I was the only one eating it. And I got jealous glares from everyone who had to smell the heated leftovers in our small office the next day.

1 teaspoon italian seasoning, divided
1/2 teaspoon salt, divided
1/2 teaspoon pepper, divided
1 lb boneless beef top sirloin steak, trimmed
1 medium sweet red pepper, julienned
1 medium yellow sweet pepper, julienned
1 medium onion, julienned
6 garlic cloves, peeled and thinly sliced
1 tablespoon olive oil

With this recipe I use the quick and easy way. Makes a nice supper to have when you need to go somewhere that evening. You can choose your own tomato sauce to cook with this. I just use this sauce for mine, and save my canned tomato sauce for other recipes.

3 lb steak (flank, round, ribeye, new york strip) your choice
2 medium green peppers
1 medium onion
1 1/2 c minute rice

Steps:

  • 1. Preheat broiler or grill. Cut steak in 3/8" thick slices. Cut peppers and onion into thin strips. Saute peppers and onion in oil till tender. Add Ragu Italian cooking sauce. Simmer 10 minutes. Cook rice according to directions. Broil or grill steak slices 3 minutes on each side. Add to peppers and onion. Place rice on platter, spoon steak and pepper sauce over it.

  • Cook the rice: In a medium saucepan, bring 2 cups water to a boil. Add in rice and lower the heat to low. Stir with a fork and cover. Cook for 20-25 minutes until water is gone and rice is cooked through. Turn off heat, but keep warm.
