1/4 cup olive oil
2 medium baking potatoes, peeled and diced
1 medium onion, diced
salt and pepper
8 large eggs
1/4 cup freshly grated pecorino romano cheese
1 tablespoon chopped fresh Italian parsley

Steps:

  • Heat the oil in large nonstick ovenproof or cast iron skillet over medium heat. Fry the potatoes until tender and golden brown. Add the onion and salt and pepper. Continue to cook until the onion is translucent, about 3 to 4 minutes.
  • Meanwhile, whisk together the eggs, cheese, parsley, and salt and pepper in a large bowl. Add the egg mixture to the potatoes and onions. Cook, shaking the pan and gently moving the mixture from side to side with a rubber spatula as some of the liquid from the top reaches the bottom of the pan.
  • Cook until the bottom is set and beginning to brown and the top is still loose, 2 to 3 minutes. Flip the eggs by sliding them onto a plate. Then invert and slide the eggs back into the pan, cooked side up. Cook until the eggs are set, 2 to 3 minutes more, shaking the pan often to prevent sticking.
  • If you prefer, rather than inverting the eggs, you can place the skillet under the broiler for 2 to 3 minutes until the top is set and lightly browned. Unmold onto a plate, cut into wedges, and serve.

CRISPY ITALIAN FRIED POTATOES AND PEPPERS



Crispy Italian Fried Potatoes and Peppers image

A simple but special side dish of crispy browned potatoes and flavorful peppers.

Number Of Ingredients 4

1/2 to 3/4 cup canola oil (or enough oil to come up to about 1/4 inch in your skillet)
5 large Idaho russet potatoes
4 long Italian green peppers (also called Italian frying peppers or Cubanelle peppers) ribs and seeds removed, cut into 1-inch by 2-inch pieces.
Kosher salt or Sea Salt, to taste (My favorite is Malden sea salt)

Steps:

  • Fill a large bowl halfway with cold water. Peel the potatoes and place them in the water as you go, to prevent discoloration.
  • Slice the potatoes thinly (1/8-1/4 inch thick) and place slices in the bowl of water, as you go. I recommend using a mandolin or a food processor with the slicing blade attachment. Or you can slice them by hand with a sharp knife.
  • Lay an absorbent dish towel on the counter and have another one or two handy. Drain the sliced potato in a mesh strainer and dump them onto a towel. Pat and blot them dry. They will brown better if you get them nice and dry.
  • Heat oil in a large skillet (preferably cast iron) over high heat, until hot but not smoking. Add the potato slices and immediately toss them until they're all coated with oil. Let the potatoes cook, undisturbed, for 3-5 minutes, or until the bottom pieces look brown around the edges. Mound the peppers on top and add a pinch or two of salt. Flip the potatoes over with a spatula, so some raw potatoes and peppers are on the bottom of the skillet. Leave them undisturbed for another 3-5 minutes, until they are nice and brown on the bottom. Continue to brown and toss potatoes for 5-10 minutes longer, until about half of them are crisp and brown and the rest are soft and creamy.
  • Serve hot. Season, to taste, with salt.

1 pound new potatoes (red, yellow, purple)
¾ teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 tablespoons vegetable oil
¼ onion, sliced
½ tablespoon minced fresh rosemary leaves
6 ounces ground mild Italian sausage
5 large organic eggs
Chives or scallions, sliced

Steps:

  • Place the potatoes in a bowl; toss with the salt and pepper until the potatoes are well coated. Heat the oil in a heavy oven-safe skillet and drop in the potatoes carefully, a few at a time.
  • Flip potatoes several times with tongs during cooking to ensure even browning.
  • About halfway through cooking, add the onion and mix while cooking. When they're done, the potatoes should be crispy. Sprinkle on the rosemary leaves. Spoon out unwanted oil, if you wish.
  • While potatoes are cooking, in a nonstick pan, saute the Italian sausage over medium-high heat for a few minutes, or until it is no longer pink.
  • Add the sausage to the potatoes and onion. Mix it very well and break eggs (sunny side up) into the pan; add few dashes of salt to season eggs. Try to go in between the potatoes, allowing the egg whites to go all around and under potatoes and sausage; try not to break egg yolks. Once the egg whites are getting almost cooked, turn on the broiler to high, and set a baking rack in the middle of the oven.
  • Place the pan under the broiler and let it cook for a minute or two, just so the egg whites are completely cooked; the yolks may be still a little runny/soft. If you do not like runny/soft eggs just let them cook under broiler longer. Sprinkle chopped chives or scallions on at the end and dig in!

500 g medium-large potatoes
6 eggs
handful of fresh parsley, finely chopped
60 g Grana Padano or Parmesan Cheese, grated ((optional))
3 tablespoon extra virgin olive oil
sea salt and freshly cracked black pepper (to taste)

Steps:

  • Peel and chop the potatoes into 1-inch large cubes.
  • In a large pot of lightly salted boiling water, boil the potatoes for about 5 min, until just tender.
  • In the meantime, in a large bowl whisk the eggs until well combined, add in chopped parsley and season with salt and pepper.
  • Drain well the potatoes and add them into the bowl with the eggs. Fold in the cheese (if using) and lightly mix all ingredients.
  • Heat a large non-stick skillet with the olive oil over medium-low heat. Pour in the frittata mixture, making sure to distribute the potatoes evenly over the bottom of the pan.
  • Cover with a lid and cook for about 5-10 minutes, gently shaking the pan every now and then. When the frittata is easily pulled off from the bottom, is ready to be turned. Using a plate with the same diameter of the frittata, carefully put it on top and flip the frittata on the other side.
  • Cook on the other side for a further 2-5 minutes, this time without the lid.
  • When the frittata is fully cooked, remove from the pan and slide it gently onto a serving plate, and serve
  • Store leftovers in an airtight container and refrigerate for up to 2 days.

1 teaspoon butter
8 tablespoons butter, divided
8 cooked sausage patties, diced
1 onion, diced
7 white mushrooms, sliced
1 cup thinly sliced fresh spinach
2 cloves garlic, minced
1 teaspoon salt, divided
3 cups water
6 cups diced yellow potatoes
8 eggs
½ cup sour cream
¼ cup minced Italian parsley
1 cup shredded Cheddar cheese
⅛ teaspoon pepper
2 ounces goat cheese, crumbled

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish with 1 teaspoon butter.
  • Melt 1 tablespoon butter in a large skillet over medium heat. Add sausage, onion, and mushrooms; cook and stir until onion is translucent, about 5 minutes. Add spinach and garlic; cook and stir until spinach is wilted, about 2 minutes. Season with 1/2 teaspoon salt.
  • Combine remaining 7 tablespoons butter and water in a large saucepan; bring to a boil. Add potatoes and cook until fork-tender, about 10 minutes. Drain.
  • Whisk eggs, sour cream, and parsley together in a large bowl. Fold in sausage mixture, potatoes, and Cheddar cheese. Season with 1/2 teaspoon salt and black pepper. Turn out into the prepared baking dish.
  • Bake in the preheated oven until a knife inserted into the center comes out clean, about 20 minutes. Scatter goat cheese on top. Slice into 9 pieces.

4 green or red Peppers, washed, seeded and sliced.
4 large eggs, scrambled in bowl with 1 tbls. water added
1-2 cloves garlic chopped
1/4 cup olive oil (enough to coat bottom of pan)
salt and pepper to taste
grated parmesan or romano Cheese
1 loaf of Italian or French bread sliced to make 4 sandwichs rolls
crushed red pepper (optional)
mild or hot Gardinera (optional)

Steps:

  • In large skillet add olive oil and garlic and saute on low-med until garlic is golden, (do not burn). Add peppers, season with salt and pepper, stir to coat peppers with oil. Continue cooking on low-med heat, stirring frequently, until peppers are soft. Raise heat to med-high and add eggs, stirring well to coat egg onto peppers. Cook eggs throughly, making sure not to burn. Sprinkle with cheese and red pepper serve on roll and add gardinera.

4 seeded semolina rolls, split and toasted

Steps:

  • Heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the potato and cook, tossing, until browned and beginning to soften, 4 to 5 minutes. Add the sliced pepper and onion and season with salt. Cook, tossing occasionally, until the potato is cooked through and the pepper and onion are browned but not completely soft, 8 to 10 minutes.
  • Meanwhile, beat the eggs in a bowl and season with salt. Reduce the heat to low and give the pan a moment to cool. Pour in the eggs and cook, stirring constantly, until just set, 2 to 3 minutes. Remove from the heat.
  • Toss the arugula with the remaining 2 teaspoons olive oil and the vinegar in a bowl. Season with salt. Fill each roll with the scrambled eggs, cheese, if desired, and the arugula.
