1 cup quaker quick oats, uncooked or 1 cup old fashioned oats
1/2 cup low-fat buttermilk
1/2 cup orange juice
2 teaspoons grated orange peel
1 1/2 cups packaged baking mix
1/3 cup granulated sugar
1/3 cup crushed store bought amaretti cookies (about 6 cokies) or 1/3 cup almond biscotti
3 tablespoons melted butter
1 egg, lightly beaten
1/2 teaspoon almond extract

Steps:

  • Heat oven to 375 degrees F. Line 12 medium muffin cups with paper baking cups or spray bottoms with no-stick cooking spray.
  • In large bowl, stir together oats, buttermilk, orange juice and peel. Let stand 10 minutes.
  • In medium bowl, combine baking mix, sugar and cookies; mix well.
  • Add butter, egg and extract to oats; mix well. Add dry ingredients; stir just until dry ingredients are moistened. Do not over mix.
  • Fill muffin cups about three-fourths full. Bake 20 to 22 minutes or until tops are golden brown. Cool in pan on wire rack 3 minutes; remove from pan. Serve warm.
  • Cook's tip: To crush cookies place cookies in heavy duty resealable plastic bag; seal tightly. Crush with rolling pin. Or use food processor fitted with steel knife.

These savory muffins are an adaptation of a muffin I found in a recent Taste of Home magazine submitted by Cyndee Page.I altered the orginal recipe by using a biscuit mix. It is very simple to whip up, my whole family loved them. I use my own biscuit mix called Missouri Mix as we don't like the flavor of packaged ones, but these would work fine with any of those too. Enjoy!

2 cups biscuit mix
2 tablespoons grated parmesan cheese
1 tablespoon sugar
1 tablespoon italian seasoning
1 egg
3/4 cup milk
1/2 cup vegetable oil
1/2 teaspoon garlic powder

Steps:

  • In a bowl combine the biscuit mix, cheese, sugar, Italian seasoning,and garlic powder.
  • In another bowl whisk the egg, milk and oil.
  • Add the egg mixture into the dry ingredients, stir JUST UNTIL MOISTENED.
  • Fill greased muffin cups 3/4 full.
  • Bake at 375 degrees for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan. Wonderful served warm.

I love the orange flavor of these, different for a muffin. Yummy! I got this recipe from an old (1980's) Canandian cookbook called "Muffin Mania". I usually double or triple the recipe and freeze the extras.(Prep time includes soaking time.)

1 cup oats, soaked in both
1/2 cup orange juice, and
1/2 cup boiling water, for 15 minutes
1/2 cup margarine, softened
1/2 cup white sugar
1/2 cup brown sugar
2 eggs, beaten
1 cup raisins
1 teaspoon vanilla
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Cream margarine and sugar.
  • Beat in eggs and stir in oat mixture.
  • Stir in raisins and vanilla.
  • Add flour, baking powder, baking soda and salt.
  • Stir until moistened.
  • Pour into well greased muffin cups.
  • Bake at 350 degrees for about 20 minutes.

1/4 cup margarine or 1/4 cup butter, melted
2 teaspoons italian seasoning
1/4 teaspoon fresh coarse ground black pepper
4 1/4 cups baking mix
1 1/4 cups milk
1 cup shredded mozzarella cheese or 1 cup cheddar cheese

Steps:

  • Heat oven to 400 degrees.
  • Mix margarine, Italian seasoning, and pepper together.
  • Brush 12 medium muffin cups (2 1/2 x 1 1/4 inches) with about 3 tablespoons of the margarine mixture.
  • Mix baking mix, milk, and cheese until soft dough forms; beat 30 seconds.
  • (If dough is too sticky, gradually mix in enough baking mix- up to 1/4 cup- to make dough easy to handle).
  • Turn dough onto surface dusted with baking mix; roll in baking mix to coat.
  • Shape into ball; knead gently 6 to 8 times.
  • Cut dough into 12 pieces; shape each piece into a ball.
  • Place balls in muffin cups; brush with remaining margarine mixture.
  • Bake 15 to 20 minutes or until golden brown.

2 cups all-purpose flour
1/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 large egg
1/4 cup vegetable oil
3/4 cup 1% low-fat milk
1/4 cup orange juice
1/8 teaspoon orange oil or 1/2 teaspoon grated orange peel
1 cup fresh cranberries (chopped, for a slightly "tarter" muffin) or 1 cup frozen cranberries (chopped, for a slightly "tarter" muffin)
1/4 cup finely chopped walnuts or 1/4 cup pecans
1/4 cup brown sugar, firmly packed
1/2 teaspoon cinnamon

Steps:

  • Batter: In a medium-sized mixing bowl, whisk together the flour, sugar, baking powder and salt, then toss the cranberries in the mix and stir to coat.
  • In a separate bowl, or in a large measuring cup, whisk together the egg, oil, milk, orange juice, and orange oil or peel. Gently and thoroughly mix the wet ingredients into the dry ingredients.
  • Using a muffin or cookie scoop, or a 1/4-cup measure, pour the batter into 12 lightly greased muffin cups, filling them about 3/4 full.
  • Topping: Combine all of the topping ingredients. Sprinkle a scant 1 tablespoon of topping over the batter in each muffin cup.
  • Baking: Bake the muffins in a preheated 400°F oven for 20 minutes, or until they're nicely domed and a cake tester inserted into the center of one comes out clean.
  • Remove the muffins from the oven, and run a knife around the edge of each one to separate it from the pan. Carefully tilt each muffin in its cup so steam doesn't collect underneath as they cool. After about 5 minutes, transfer them to a rack to cool completely.
