My husband doesn't even like meat loaf, but he'll always eat this one! He likes this dish because it offers a wide variety of flavors.

1/2 cup dry bread crumbs
1 large egg, beaten
1 teaspoon dried minced onion
3/4 teaspoon salt
1/2 teaspoon dried oregano
1-1/2 pounds lean ground beef
1 can (8 ounces) tomato sauce, divided
1-1/2 cups shredded mozzarella cheese
1 jar (6 ounces) sliced mushrooms, drained

Steps:

  • In large bowl, combine the crumbs, egg, onion, salt and oregano; crumble the meat over the top. Mix gently. Stir in 3/4 cup tomato sauce; set aside. Cut two pieces of waxed paper 15-in. long. Place meat mixture in center of one rectangle; cover with second rectangle. , With a rolling pin, press meat into a 13x9-in. rectangle. Remove top sheet of waxed paper. Sprinkle meat with cheese and mushrooms; top with remaining tomato sauce. Roll up meat, jelly-roll style, starting at narrow end; use waxed paper to help. Place meat seam side down; seal ends securely. Place in a greased 9x5-in. loaf pan. , Bake at 375° for 30 minutes. Drain; bake 30 minutes longer.

1 tbsp olive oil
1/2 cup onion (diced)
1/2 cup red bell pepper (diced)
2 cloves garlic (minced)
1 lb ground beef
1 lb Italian pork sausage (mild or spicy)
2 tbsp Italian seasoning
1/2 cup ricotta cheese
1/4 cup parmesan cheese
1/2 cup breadcrumbs
1 cup marinara sauce

Steps:

  • Preheat the oven to 375°F.
  • Add the olive oil to a large skillet on the stove over medium high heat.
  • Add the onion and bell pepper, saute 4 minutes. Add the garlic and saute for an additional minute.
  • Add the cooked onion, bell pepper and garlic to a large bowl with the ground beef, Italian sausage, Italian seasoning, ricotta cheese, parmesan cheese and breadcrumbs, combine well.
  • Press the mixture into a 9-inch by 5-inch loaf pan.
  • Place in the oven and bake for 25 minutes.
  • Remove the meatloaf from the oven and spread the marinara sauce over the meatloaf.
  • Return to the oven and bake for an additional 15 minutes.

1/4 cup plus 2 tablespoons extra-virgin olive oil
4 teaspoons (about 6 cloves) chopped garlic
2 medium onions, diced
2 red peppers, seeded, small diced
1/2 cup chopped basil leaves
2 tablespoons chopped parsley leaves
4 eggs
1 teaspoon salt
1/2 teaspoon black pepper
2 cups grated Parmesan
1 1/2 cups breadcrumbs
3 pounds ground beef
2 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar
1 cup marinara sauce

Steps:

  • Preheat oven to 350 degrees F.
  • Heat 1/4 cup of the olive oil in a medium saute pan over medium heat and add the garlic. Saute 1 minute and then add the peppers and onions and saute until just soft. Let cool.
  • Whisk together the basil, parsley and eggs in a small bowl, and then add the salt and black pepper. Combine the Parmesan and breadcrumbs in another small bowl. Thoroughly combine the meat, herbs and eggs, Parmesan and breadcrumbs, the Worcestershire, vinegar and remaining 2 tablespoons olive oil together in a large bowl using your hands, making sure not to overmix.
  • Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.
  • Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.

1 cup Italian or white bread (crusts removed, cut into 1 inch cubes )
1 tablespoon milk
1/2 cup white onion (minced)
3 cloves garlic (minced)
1 teaspoon fine sea salt
1/2 pound lean ground beef
1 pound Italian sausage (casing removed, crumbled )
1 tablespoon flat leaf parsley (minced, plus more for garnish (optional) )
1 tablespoon fresh oregano (minced)
1 tablespoon Worcestershire sauce
1 egg (lightly beaten )
3/4 cup bread crumbs
1/4 cup Parmesan cheese (finely grated)
1 cup mozzarella cheese (shredded, divided )
3/4 cup marinara (divided, plus more for for serving )

Steps:

  • Preheat oven to 400 degrees and prepare a loaf pan with cooking spray or parchment paper.
  • In a small bowl, toss cubed bread with milk. Set aside for 3-4 minutes to absorb.
  • In a large mixing bowl, or the base of a stand mixer, combine fresh bread cubes soaked in milk, finely ground or micrograted onion, garlic Italian seasoning and salt. Mix to combine.
  • Add crumbled ground beef and sausage, breaking into small pieces.
  • Before mixing, top with Worcestershire sauce, lightly beaten egg, dry bread crumbs, Parmesan cheese, 1/2 cup shredded mozzarella and 1/4 cup marinara sauce.
  • Blend until just mixed, either using your fingers to toss or putting the stand mixer on low. Too much mixing will make your meatloaf tough, so only mix until barely blended.
  • Transfer meat mixture to cooking vessel of your choice, forming into a loaf as you go. You can make it free-form on a rimmed baking sheet, but I prefer using a meatloaf or bread loaf pan. Top with 1/2 cup marinara sauce.
  • Bake, uncovered, for 40 minutes. Remove and top with remaining shredded mozzarella cheese and another shake of Italian seasoning (if desired).
  • Cook for an additional 5 minutes. Allow to sit for 5-10 minutes before cutting and serving. Serve with additional marinara sauce, if desired.

2 lbs 85/15 ground beef
2 fresh garlic cloves, minced
.7 oz packet of Italian Dressing Mix (I use Good Seasonings brand)
1 cup panko bread crumbs
1/3 cup milk
2 eggs, lightly beaten
1/2 cup fresh grated parmesan cheese
24 oz jarred marinara
1 cup shredded mozzarella

Steps:

  • Preheat the oven to 400°
  • In a large bowl, with clean hands, lightly mix together the 2 lbs ground beef, 2 minced garlic cloves, .7 oz packet of Italian Dressing Mix, 1 cup panko bread crumbs, 1/3 cup milk, 2 lightly beaten eggs, 1/2 cup parmesan cheese. Do not overmix the meatloaf mixture or it will have a tough texture.
  • In a 9x13 glass casserole pan pour about 1/2 cup marinara sauce onto the bottom of the pan. Dump the Italian meatloaf mixture out into the pan and shape into a meatloaf, about 2 1/2 inch tall, 6 inches wide and about 11 inches long (roughly)
  • Pour the rest of the jarred marinara over the meatloaf. Cover the pan with foil and bake for 1 hour 15 minutes.
  • Remove the foil and sprinkle with mozzarella cheese, bake uncovered for another 10 minutes. The center of the meatloaf should read 165 degrees with an instant thermometer.
  • Let cool for about 5 minutes and then slice and serve!

50g fresh white breadcrumbs
4 tbsp finely grated parmesan
500g pack lean minced beef
1 onion , finely chopped
100g pancetta , chopped
1 garlic clove , chopped
1 egg , beaten
1 tsp tomato purée

Steps:

  • Heat oven to 190C/170C fan/gas 5. Line the long sides and base of a 2lb loaf tin with double thickness baking parchment. Mix 2 tbsp each of the breadcrumbs and Parmesan in a small bowl and set aside. Tip all the remaining ingredients into a large bowl with a good shake of salt and pepper and mix well - hands are the best for this job.
  • Press the mixture into the loaf tin and sprinkle with the reserved crumb mix. Bake for 40-45 mins until the top is golden and crunchy. If the top does not colour in the oven, pop the tin under the grill and brown the top for 5 mins. Cool in the tin for 5 mins, then lift out using the parchment and put on a board. Slice and serve with potatoes and green beans.

1 c. Whole Milk
1 c. Grated Parmesan
4 whole Large Eggs
1/3 c. Minced Parsley
1 tbsp. Italian Seasoning

1/2 tsp. Black Pepper
12 slices Thin Pancetta (about 4 To 6 Ounces)
2 cans Diced Tomatoes (drained)
1/4 c. Brown Sugar
1 tsp. Dry Mustard
1 pinch Cayenne Pepper
5 dashes Worcestershire Sauce

Steps:

  • Preheat the oven to 350 degrees.Place the ground beef, milk-soaked bread, Parmesan, eggs, parsley, Italian seasoning, salt, and pepper into a large bowl and smush/knead it around with your hands until everything is completely mixed.Meanwhile, make the sauce: In a separate bowl, combine the diced tomatoes, brown sugar, mustard, cayenne, and Worcestershire and stir it together. Place the meat mixture on a drip pan (a pan with a slotted tray on top) and form it into a big honkin' loaf shape. Arrange the pancetta slices in an overlapping pattern all over the surface then spoon the tomato mixture all over the top. 2 garlic cloves, (minced)
1 cup freshly grated Parmesan
1/2 cup bread crumbs, (regular or gluten free*)
1/4 cup chopped fresh parsley
1 1/2 teaspoon salt
1/4 teaspoon ground pepper
2 pounds lean ground beef
2 cups homemade or good quality jarred marinara sauce ((can use additional for serving))
spaghetti, (regular or gluten free, for serving)

Steps:

  • Fold a 2-foot length of aluminum foil in half lengthwise. Place the foil in the slow cooker in the lengthwise direction, pressing along bottom and sides. Roll over the excess foil to make "handles" for lifting when the meatloaf is done. (See picture in "How to Make Italian Meatloaf")
  • In a large bowl place eggs, garlic, Parmesan, bread crumbs, parsley, salt, and pepper. Whisk to combine. Add ground chuck and mix throughly with spoon or hands until mixture is evenly incorporated.
  • Shape it into a loaf and carefully place in the slow cooker on top of foil. Pour 2 cups of marinara over the top.
  • Cover and cook on HIGH for 3 hours or until thermometer reads 165-170ºF.
  • Carefully lift meatloaf out of slow cooker with handles and place on platter to serve with extra marinara. Cut into slices and serve with pasta, if desired.

1/2 cup low-sodium wheat crackers, medium grind (about 11 crackers)
1 lb lean ground beef
1/2 lb ground pork
6 ounces tomato paste

3/4 teaspoon salt
1 dash pepper

  • Preheat oven to 350 degrees Fahrenheit.
  • PREPARE MEAT MIX:.
  • In a large bowl, combine 1/2 cup medium cracker crumbs (about 11 crackers), ground beef and ground pork, tomato paste, eggs, finely chopped onion, finely chopped green pepper, salt and dash of pepper. Mix well.

Use both ground beef and ground pork in this recipe for a tasty meatloaf flavored with onion, garlic, sweet bell peppers and Parmesan cheese.

1 pound ground chuck beef
1 pound ground pork
3 large eggs (lightly beaten)
1/2 cup Italian breadcrumbs
1/2 cup minced sweet onion
1/3 cup grated Parmesan cheese
1/4 cup chopped green bell pepper (sweet capsicum)
3 large garlic cloves (minced)
1/4 cup chopped fresh parsley
1 tablespoon chopped fresh oregano or 1 teaspoon dried
1 tablespoon chopped fresh basil or 1 teaspoon dried
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
3 ounces (about 1/4 cup) tomato paste

Steps:

  • Gather the ingredients.
  • Preheat the oven to 375 F.
  • Place the ground beef and the pork in a large bowl. Top with the eggs, breadcrumbs, sweet onions, Parmesan cheese, bell peppers, garlic, parsley, oregano, basil, salt, and pepper.
  • Use a large carving fork to mix the meatloaf, folding the ingredients together. Pull the fork tines through the mixture as you turn the bowl. Take care not to overmix, or the meatloaf will become tough.
  • Scrape the mixture into a loaf pan, and smooth the top. Don't pack it too tightly.
  • Spread the tomato paste over the top of the meatloaf.
  • Place the loaf pan on a baking tray to catch any drips that may bubble over. Bake for 1 hour and 15 minutes. Let meatloaf rest for 15 minutes before cutting to serve.
  • Serve and enjoy!
