ITALIAN MEATBALL BUNS

- Let dough stand at room temperature until softened, 25-30 minutes., Cut each roll in half. Wrap each portion around a meatball, enclosing meatball completely; pinch dough firmly to seal. Place on greased baking sheets, seam side down. Cover with kitchen towel; let rise in a warm place until almost doubled, 1-1/2 to 2 hours., Preheat oven to 350°. Bake buns until golden brown, 12-15 minutes. Brush tops with oil; sprinkle with cheese and basil. Serve with marinara sauce.

CHEF JOHN'S ITALIAN MEATBALLS
Homemade meatballs are a very easy to make, and since we skip the very messy step of pan-frying these before they hit the sauce, it becomes downright simple. Here I use a standard half-beef/half-pork mixture. You can substitute water or beef broth for the milk, if preferred.

- Cover a baking sheet with foil and spray lightly with cooking spray.
- Soak bread crumbs in milk in a small bowl for 20 minutes.
- Heat olive oil in a skillet over medium heat. Cook and stir onions in hot oil until translucent, about 20 minutes.
- Mix beef and pork together in a large bowl. Stir onions, bread crumb mixture, eggs, parsley, garlic, salt, black pepper, red pepper flakes, Italian herb seasoning, and Parmesan cheese into meat mixture with a rubber spatula until combined. Cover and refrigerate for about one hour.
- Preheat an oven to 425 degrees F (220 degrees C).
- Using wet hands, form meat mixture into balls about 1 1/2 inches in diameter. Arrange onto prepared baking sheet.
- Bake in the preheated oven until browned and cooked through, 15 to 20 minutes.

- Heat oven to 375. seperate each biscuit into two layers. Press each layer into 3 inch rounds. Place 1 meatball and 1 string cheesepeice in the centerof each dough round. Wrap dough around the meatball and cheese. pressing edges to seal.''In ungreased 9 inch cake pan , place seam side down in single layer. Sprinkle evenly with Parmasan cheese, Italian seasoning and garlic powder. Bake 20-25 minutes or until golden brown and biscuits are no longer doughy in the center. MEATBALL-STUFFED GARLIC BREAD RECIPE BY TASTY

- Preheat oven to 350°F (180˚C).
- In a medium bowl, mix the ground beef, bread crumbs, parsley, egg, salt, and pepper.
- Pinch off a ball of the mixture, roll between your hands to make ping-pong ball-sized meatballs.
- Cook the meatballs over medium heat, turning to brown each side. Remove from heat and drain on a paper towel.
- Slice the baguette into thirds or fourths (each baguette piece should be roughly the same length of two meatballs).
- Hollow out the insides of the baguette pieces with a knife.
- Lay two slices of mozzarella on top of each other with a 1-inch (2 cm) overlap. Place two meatballs on the overlapping region, then fold the mozzarella tightly around the meatballs.
- Push the rolled meatballs and cheese into a baguette piece.
- Slice the stuffed baguette pieces into 1-inch (2 cm) slices, then place them tightly side-by-side on a baking sheet lined with foil.
- In a small bowl, mix together ingredients for garlic butter.
- Brush the garlic butter evenly over the baguette slices, making sure some drips in between the slices.
- Wrap the foil over the re-assembled baguette and bake for 15-20 minutes, until cheese is melted and the top is starting to brown.
- Remove the foil and serve with marinara.
- Enjoy!

INGREDIENTS 1 can Pillsbury golden layers biscuits - each pulled into 2 layers. 10 frozen fully cooked italian style meatballs - thawed and cut in half. 2 sticks string cheese - cut each into 10 pieces. 1 tbs. Parmesan cheese 1/2 tsp Italian seasoning 1/4 tsp Garlic powder 1 cup Marinara sauce DIRECTIONS Heat oven to 375. Separate biscuits into 2 layers. Place 1 meatball half and one piece of cheese into each biscuit, wrap dough around it and seal edges. Place seam side down into 9 inch round cake pan. Sprinkle with parm cheese, garlic powder. and italian seasoning. Bake for 18-20 minutes or until golden brown. Serve warm with warm sauce.

- You can use your favorite store bought marinara sauce(I like Rao’s), or make it. Pre-heat a large heavy bottom pot over medium heat with 2 tablespoons of oil. Add the onion, carrots, celery, thyme, pepper flakes, along with 1/2 teaspoon of salt and a couple cracks of pepper. Cook for 10 minutes then add the garlic, cook for 3 minutes, or until the veggies are very soft. Add the tomato paste and cook for 2 minutes then add the wine and sir well. Cook for 3 minutes until almost all the wine has reduced then add the tomatoes(crushed by hand or blender) along with 1 cup of water. Season with 1 teaspoon of salt and some pepper. Bring to a simmer and let cook uncovered for 30-40 minutes. After 20 minutes stir in the honey and check for seasoning. It is probably going to need more salt. If the sauce gets too thick, add more water.
- For the meatballs, add the bread to a bowl and cover with milk for at least 5 minutes. For the keto version, mix enough cream or water to make the almond flour wet and mushy. To a large bowl, add the ground meats, onion & garlic powder, egg, parsley, oregano, pepper flakes, grated cheese, salt, and a few cracks of pepper. Squeeze most, but not all, of the milk from the bread and add that to the meat mixture, breaking it into small pieces. Mix well using your hands, but make sure not to over mix as the meatballs will get tough. Dip your hands in water and form meatballs, should be enough for 13, but you can make them any size you desire.
- Place meatballs in the fridge for 20 minutes to firm up, or you can store overnight. To sear the meatballs and make them crusty, pre-heat a non-stick pan over medium-high heat with 2 teaspoons of olive oil. Once the oil is hot, and half the meatballs and cook until crusty, about 3 minutes, flip and repeat. You don't want to overcrowd the pan, so this needs to be done in two batches. Move the meatballs to the marinara sauce, bring to a gentle simmer, and cook for 20 minutes, carefully stirring a few times.
- Plate the meatballs and sauce, garnish with parsley, a drizzle of really good extra virgin olive oil, and enjoy! Meatballs can be stored with the sauce in the fridge for 5 days, or everything can be frozen for 3 months. It's best to thaw the meatballs and sauce overnight before reheating in a pot over medium heat. If using a microwave, cover the container with a wet paper towel and make sure to not to overheat, as the meatballs will get dry.
