Steps:
- Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Return the drained potatoes to the pot.
- Pour the vegetable broth, thyme, rosemary, oregano, basil, onion powder, parsley, sage, and garlic over the potatoes; mash with a potato masher.

It's a recipe I maded up on the fly for dinner one night to go with steak. It also goes really good with my easy Italian Chicken recipe.

Steps:
- If you happen to use larger potatoes for the double batch, halve the large potatoes because the small ones for the regualr batch can be left whole.
- Place all the potatoes in a deep pot and cover with water.
- Place a lid on the potatoes and bring it to a boil.
- Once it starts to boil, uncover and cook until tender (about twelve to fifteen minutes).
- Then drain potatoes and put them back into the hot pot.
- Add the butter, the seasoning package, milk and cheese. It really depends on how creamy and cheesy you like your potatoes when deciding how much you want to add of the milk and cheese.
- Smash the potatoes until they are the desired texture.
- Add the amount of salt and pepper to taste you like and enjoy.

ITALIAN PORK WITH MASHED SWEET POTATOES

- Combine fennel seeds, oregano, garlic powder, paprika, salt, and pepper in a small bowl. Trim fat from meat. Sprinkle the fennel seed mixture evenly over the meat; rub in with your fingers. If necessary, cut the meat to fit into a 3 1/2- or 4-quart slow cooker (see Tip). Set aside.
- Place sweet potatoes in the cooker. Add the meat. Pour broth over mixture in the cooker.
- Cover and cook on Low for 8 to 10 hours or on High for 4 to 5 hours.
- Remove the meat from the cooker, reserving cooking juices. Slice the meat. Using a slotted spoon, transfer the sweet potatoes to a medium bowl. Use a potato masher to mash the sweet potatoes, adding enough of the cooking juices, if necessary, to moisten. Serve the meat with the mashed sweet potatoes.

- In a medium sauce pot, bring Russet Potato (4) to boil in heavily salted water, along with the sachet of Bay Leaf (1), Black Peppercorns (1/2 teaspoon), and Fresh Rosemary (2 sprig).
- Cook until potatoes are fork tender, about 35-40 minutes. Drain from water, once potatoes are done, and discard sachet.
- In a small saucepot, warm up together Salt (to taste) and Milk (1/2 cup). Add Butter (1/4 cup) and Ground Black Pepper (to taste) and Sour Cream (1/4 cup).
- Using a stand mixer, fixed with the whisk attachment, beat potatoes until mealy and broken up.
- Slowly add milk mixture to potatoes. Once liquid has been added, speed up mixer and beat potatoes until creamy texture is achieved.
- Add Provolone Cheese (0.66 pound), Fresh Chives (0.5 ounce), and Salami (2.5 ounce) to potatoes. Mix until well incorporated.
- Preheat oven to 350 degrees F (175 degrees C).
- Grease a casserole dish with some of the Butter (1/4 cup) and some of the Breadcrumbs (3/4 cup). Scrape potato mixture out of mixing bowl and into breaded casserole dish. Even out the top and top with more bread crumbs and butter.
- Place in preheated oven and bake for 20 minutes.
- Serve alongside your favorite roast or other main dish.
