1/2 pound sliced fresh mushrooms
2 celery ribs, chopped
4 green onions, thinly sliced
1 can (8 ounces) sliced water chestnuts, drained
1 bottle (16 ounces) Italian salad dressing
1 envelope Italian salad dressing mix
1 pint cherry tomatoes, halved
1 can (2-1/4 ounces) sliced ripe olives, drained

Steps:

  • In a large serving bowl, combine the broccoli, cauliflower, mushrooms, celery, onions and water chestnuts. In a small bowl, whisk salad dressing and dressing mix; drizzle over vegetables and toss to coat. , Cover and refrigerate overnight. Just before serving, add tomatoes and olives; toss to coat.

Serve these marinated vegetables as a salad or as an appetizer. Optional add ins include: pitted Greek olives, cubes of feta cheese, and thin slices of Maui or Walla Walla onion.

1 ½ cups cauliflower florets
1 green bell pepper, cut into 1 inch pieces
1 cucumber - peeled, seeded and chopped
1 carrot, coarsely chopped
¼ cup Italian-style salad dressing

Steps:

  • Bring a large pot of salted water to boil. Place the broccoli and cauliflower florets into the boiling water for one minute. Drain and rinse florets.
  • Combine broccoli, cauliflower, bell pepper, cucumber, carrot and Italian salad dressing in a medium size mixing bowl. Cover the bowl and refrigerate the vegetables for one hour.

1 large cauliflower, cut into florets
2 green peppers, cut into chunks
2 large red onions, cut into chunks
1 lb mushroom, of your choice
3/4 cup olive oil
3 tablespoons garlic, minced
2 tablespoons fresh parsley, chopped
1/2 cup red wine vinegar
1 teaspoon sugar
1 teaspoon honey
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon red pepper flakes

Steps:

  • Steam all veggies except the mushroom for 8 minutes.
  • Add the mushroom and continue steaming for 2 more minutes.
  • Place the hot veggies in a large, flat dish.
  • Toss with the rest of the ingredients while still warm.
  • Let cool to room temperature, cover and marinate over night in the fridge. Give them a toss once or twice while marinating.
  • To serve, toss and serve at room temperature.
  • These will keep for a week in the fridge.

Our homemade Giardiniera recipe gives you the freedom to choose your level of heat. These Italian pickled vegetables are the perfect condiment for an Italian beef sandwich, and much more! This recipe may take 5 days to make, but most of it is hands-off time.Yield: 3 cups of giardiniera

¼ c salt
1 c carrots, (sliced)
1 c cauliflower, (cut into small florets)
1 celery stalk, (diced)
1 red bell pepper, (stemmed, seeded, and diced)
2-4 serrano chilies, (sliced (depending on desired heat level))
¾ c canola oil (or pure olive oil*)
¾ c white vinegar
2 garlic cloves, (minced)
2 tsp oregano

Steps:

  • Mix 2 c water with the salt and stir until dissolved. Add the carrot slices, cauliflower, celery, bell peppers, and serranos. Mix to combine. Cover and refrigerate overnight.
  • Drain and rinse the vegetables.
  • In a clean bowl, mix oil and vinegar with the garlic and oregano. Add the vegetables to the seasoned oil and mix to combine. Cover and refrigerate for 3 days to marinate.
  • After 3 days in the bowl, transfer the vegetables to a quart jar, pour as much of the seasoned oil/vinegar mixture in as you need to cover the vegetables.
  • The mixture will keep in the refrigerator for 3-4 weeks.

Italian Marinated Vegetables are perfect for Summertime. They're nutritious and delicious. This recipe is similar to giardiniera that I love to use on Italian beef sandwiches, spaghetti and pizza except that the vegetables marinated in more of a dressing than just oil and vinegar. The types of vegetables you use is up to you. It's best just to use whatever is in season at the time. You can make one jar or a put together a few jars for friends and family. The longer you marinade the vegetables the better the flavor.

1 cup cauliflower floret
1 bunch broccoli rabe, trimmed and chopped
4 carrots, sliced
3 stalks celery, sliced
1 green bell pepper, cut into chunks

1 cup zucchini, sliced
6 button mushrooms, sliced
1 cup marinated artichoke hearts, quartered
1/2 cup black olives, sliced
1 garlic clove, chopped
1/4 cup red wine vinegar
1/4 cup of fresh squeezed lemon juice
1 tablespoon Dijon mustard
1/2 cup vegetable oil
1/4 cup extra virgin olive oil
4 fresh basil leaves, chopped
1 teaspoon dried oregano
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • In a large pot of boiling water, par boil the cauliflower, broccoli rabe, carrots, celery, bell peppers and zucchini until the vegetables are slightly tender but still a little crisp.
  • Remove the vegetables and cool.
  • In a large bowl mix all the vegetables together with the garlic, vinegar, lemon juice, mustard, oil, basil, oregano, rosemary, thyme, sugar, salt and pepper.
  • Cover and refrigerate overnight.
  • Or place in large glass jars and refrigerate.
  • Serve chilled or room temperature.
  • The vegetables should last up to a week in the fridge.

Italian Grilled Vegetables is marinaded zucchini, yellow squash, mushroom, onions, and peppers cooked on the grill and finished with grated Parmesan cheese.

1 medium zucchini
1 medium yellow squash
1 red onion
1 large red bell pepper
8 oz baby bella mushrooms
4 garlic cloves
1/4 cup olive oil
1 lemon (juice only)
2 tbsp white Balsamic vinegar (can substitute white wine vinegar)
1 tsp crushed red pepper flakes (more can be used to make it more spicy)
2 tbsp Italian seasoning**
salt
1/4 cup freshly grated Parmesan cheese (to top grilled vegetables)

Steps:

  • Note: leave yourself time to marinade the vegetables. Marinading can be as fast as 1 hour or as slow as overnight.
  • Cut vegetables into even pieces so that it cooks easily. Place cut vegetables into a mixing bowl.
  • In a small bowl, combine pressed garlic, lemon juice, vinegar, oil, salt, crushed red pepper flakes, and Italian seasoning. Whisk together until thoroughly combined.
  • Pour the marinade mixture all over the veggies and mix to coat the veggies evenly.
  • Cover the mixing bowl with plastic wrap and refrigerate for at least an hour. (You can also marinade the vegetables overnight.) Try to mix veggies from time to time.
  • Skewer vegetables onto metal skewers, alternating the veggies evenly so each skewer gets even amount of different veggies. (If using wooden skewers, make sure to soak them first.)
  • Use some cooking spray to spay the grill with oil and place vegetable skewers on the grill.
  • Cook vegetables, turning 1/4 of the way around every 4-5 minutes. Cook time highly depends on the size of vegetables cuts and how soft you like the vegetables.
  • Take cooked vegetables off the grill and grate some Parmesan cheese over the top right away.

Steps:

  • Make the Vegetables: Fill the stock pot with water and bring to a boil. Stir in the lemon juice and salt. Fill the pasta basket with the broccoli rabe, cauliflower, mushrooms, zucchini, and squash. Submerge in the boiling water and cook, covered for 2 minutes. Remove the basket and refresh the vegetables under cold running water.
  • Transfer the vegetables to a bowl and mix with the pepper strips, artichokes, and olives.
  • In a blender, combine the vinegar, lemon juice, mustard, salt, and pepper. Mix on medium until completely blended. While the motor is running, slowly pour in the oils in a steady stream to make a smooth dressing.
  • Pour the dressing over vegetables. Add the basil and toss well. Chill for at least 2 hours before serving. Arrange on a decorative platter garnished with fresh basil and lemon wedges.

(Reserve the remaining pickling liquid to pickle more vegetables or to use in a salad dressing, if desired.) Add garlic, olives, parsley, dill and oil to the vegetables; toss to combine. Season with pepper.
