AWESOME ITALIAN MACARONI AND CHEESE
This magical macaroni dish will make a disappearing act on the dinner table. I've not only served it up as a main dish during the week, but I've served it as a side dish on the Thanksgiving table. It's got ham and cheese, but I think the secret ingredients are the half-and-half and eggs. Don't forget to cook the noodles with the chicken bouillon cubes for a really flavorful noodle. Enjoy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
- Dissolve chicken bouillon cubes in water in a large pot; bring to a boil. Cook macaroni in the boiling water until cooked through but firm to the bite, 8 minutes; drain.
- Layer about half the macaroni in the bottom of the prepared baking dish; top with about half the diced smoked ham. Repeat layers.
- Whisk eggs, half-and-half, salt, and white pepper together in a bowl; pour over the noodle and ham layers. Top everything with Cheddar cheese.
- Bake in preheated oven until the cheese is melted and browning around the edges, about 35 minutes.

- Heat a medium, deep skillet over medium heat. Add oil and butter. When butter melts into the oil, add flour and combine. Gently cook, whisking flour and butter together, until smooth and flour has had a chance to cook, about 3 minutes. Slowly add milk while continuing to whisk. Gently bring milk to a bubble while stirring frequently. Allow the milk to thicken a bit, then stir in 2 cups of shredded Cheddar cheese a handful at a time. Season sauce with nutmeg and cayenne. Taste and add a little salt, if you like. Add cooked pasta to sauce and coat completely by turning over and over in the cheese sauce. Transfer to a flameproof baking dish and top with remaining cheese. Place baking dish under a hot broiler and brown the Cheddar cheese on top.

Steps:
- Cook pasta in boiling water as per package directions until done.
- Fry sausage in 2 T olive oil until cooked thoroughly, breaking up into small pieces while cooking.
- When sausage is done, transfer to a bowl.
- Add, 2 T olive oil (or more if needed) to pan. Add mushrooms, garlic, butter. Add salt and pepper to taste.
- Saute, stirring frequently, until mushrooms become somewhat limp.
- Add flour and saute for a couple of minutes.
- Stir in chicken stock and milk. Bring to a boil and let it bubble and thicken.
- Stir in tomatoes and hot sauce.
- Add cheese, stir and simmer 5 minutes.
- Stir in sausage.
- Mix into pasta and serve.

This is another Rachel Ray recipe. I made this one tonight and it's really good!! (I don't even like meat loaf, but I like this one.) However, personally I don't care for the herbs on the mac and cheese. Next time I'm sticking with just bread crumbs and parsley.

- Mini Meat Loaves:.
- Preheat oven to 425°F.
- Place meat in bowl. Make a well in meat. Fill well with egg, bread crumbs, Parmesan cheese, peppers, onions, garlic, tomato paste, salt and pepper.
- Mix meat and breading and form four individual oval meat loaves, 1" thick.
- Coat loaves with extra virgin olive oil and arrange on a baking sheet. Roast 18-20 minutes.
- Macaroni and Cheese:.
- Put a large pot of water on to boil for pasta.
- When the pasta water boils, salt water and add pasta. Cook until slightly undercooked-pasta will continue to cook when combined with cheese sauce.
- Meanwhile, melt butter in a saucepan and add flour. Whisk in milk.
- Bring to a bubble and thicken milk for 2-3 minutes.
- Add cheeses (cheddar, asiago, and Parmesan) and black pepper. Stir to melt cheeses.
- Drain pasta and combine with melted cheese sauce and transfer to a baking or casserole dish.
- Place bread crumbs in a bowl and add EVOO and herbs to bread crumbs. Top pasta with bread crumbs.
- Place under a broiler and brown bread crumbs. (If you do not have a separate broiler, place in oven with meatloaves for last few minutes. I did this and it turned out fine.).

- Bring a pot of salted water to a boil. As soon as the water comes to a boil, add the pasta and stir. While the pasta cooks, prepare the cheese fondue. Heat the cream in a saucepan over medium low heat until it is steaming but not bubbling. Add the rocchetta cheese, and stir until it melts. Keep it steaming hot until the pasta is ready. Undercook the pasta just a little, you want to let it finish cooking right in the cheese fondue. Once the pasta is very very al dente, drain it and add it to the cheese fondue and let it cook in the sauce for 2 minutes. Then add the parmesan, stir, and divide the macaroni and cheese between two bowls. Top with freshly ground black pepper, and toasted breadcrumbs if you like, and serve.

- Bring a large pot of water to a boil. Salt water and cook pasta to a chewy al dente, about 8 minutes.
- In a nonstick skillet, brown and crumble the sausage. Drain cooked crumbles on paper towel lined plate. Return pan to heat and add extra-virgin olive oil, butter, garlic and mushrooms. Season liberally with salt and pepper. Saute 3 to 5 minutes, until mushrooms are lightly golden.
- Preheat broiler to high.
- To mushrooms, add flour and stir, cooking 2 minutes. Whisk in stock, then stir in cream. Bring cream to a bubble, then stir in 2 cups of 4 cheese blend. When cheese has melted into sauce, add tomatoes. When sauce comes to a bubble, remove from heat and adjust seasonings, adding hot sauce if desired.
- Combine cheese sauce with sausage and pasta, transfer to flameproof baking dish, casserole or flameproof serving platter. Sprinkle remaining 1/2 cup of 4 cheese blend and the grated Parmesan over the top and brown under hot broiler.

- Fill a large pasta pot 2/3 full with hot water. Place your pot over high heat on your stove. Add a couple teaspoons of salt and cover the pot to let the water come to a boil.
- While your pot is heating, shred the cheddar and grate your Parmesan, if needed, by placing a few chunks at at time in your blender. Set your cheese aside.
