Sweet Italian Holiday Bread image

This is authentic ciambellotto, a sweet loaf my great-grandmother used to bake in Italy. I still use her traditional recipe-the only update I made was for using modern appliances. -Denise Perrin, Vancouver, Washington

Yield 1 loaf (20 slices).

Number Of Ingredients 9

4 cups all-purpose flour
1 cup sugar
2 tablespoons grated orange zest
3 teaspoons baking powder
3 large eggs, room temperature
1/2 cup 2% milk
1/2 cup olive oil
1 large egg yolk, lightly beaten
1 tablespoon coarse sugar

Steps:

  • Preheat oven to 350°. In a large bowl, whisk flour, sugar, orange zest and baking powder. In another bowl, whisk eggs, milk and oil until blended. Add to flour mixture; stir just until moistened., Shape into a 6-in. round loaf on a greased baking sheet. Brush top with egg yolk; sprinkle with coarse sugar. Bake until a toothpick inserted in center comes out clean, 45-50 minutes. Cover top loosely with foil during the last 10 minutes if needed to prevent overbrowning. Remove from pan to a wire rack; serve warm.

This is a traditional North Italian bread that is served during the holidays. If you don't like the dense and dry taste of traditional fruit cakes, try this one.

PLACE INGREDIENTS IN BREAD MACHINE IS THIS EXACT ORDER
1-1/3 c warm milk (105º)
1 large egg, slightly beaten
3 Tbsp softened butter
1-1/2 tsp salt
1 Tbsp granulated sugar
4 c bread flour
1 c dried or candied mixed fruit, diced
2 tsp anise seed, crushed
1 pkg rapid rise yeast (2 teaspoons)

Steps:

  • 1. Place ingredients in bread machine in exact order as listed in ingredients.
  • 2. Set bread machine to basic/white cycle and medium crust. •••Do not use delay cycle.
  • 3. Check dough after it has mixed well. If it is too dry, add liquid 1 teaspoon at a time until a soft, smooth ball forms around the blade. If it is sticky, add 1 teaspoon flour at a time until smooth ball forms around the blade.
  • 4. Start bread machine and cook until cycle is complete.
  • 5. Remove from bread machine onto serving platter and drizzle your choice of glaze over it (optional).

2/3 cup warm milk (70° to 80°)
1 egg
4 teaspoons butter, softened
1 teaspoon salt
1/2 teaspoon ground aniseed
2 cups all-purpose flour
1-1/2 teaspoons active dry yeast
1/4 cup chopped candied citron
1/4 cup chopped candied pineapple

Steps:

  • In a bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

Increase the speed to medium-low and mix until all of the ingredients are combined. Add the softened butter, 1 tablespoon at a time, mixing until incorporated before adding more. Increase the speed to medium-high and beat until the dough is smooth and elastic, about 8 minutes.
  • Drain the raisins, discard the soaking liquid, and stir together with the candied citron and 1 tablespoon of melted butter. Stir this mixture into the dough with a wooden spoon.
  • Place the dough in a large bowl, cover with plastic wrap, and let rise in a cold oven with the door closed until it has nearly tripled in volume, 12 to 15 hours.
