- In a small saucepan, saute onion in oil until tender. Add garlic; saute 1 minute longer. Add the tomatoes, water, oregano, basil, sugar, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 40 minutes., Meanwhile, place beans in a large saucepan and cover with water; bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender; drain. Add tomato mixture and cheese; cook for 5 minutes or until heated through.

Steps:
- Warm olive oil over medium heat in a large, deep frying pan on the stove.
- Add garlic and cook until fragrant while stirring occasionally, about 30 seconds to 1 minute.
- Stir in tomatoes and cook down for about 5 minutes, until they have broken down a bit and have formed a chunky sauce, stirring occasionally.
- Add green beans and stir to coat them with the tomato mixture.
- Simmer covered over medium-low heat for 20-25 minutes if using fresh green beans (25-35 minutes if using frozen), until the beans are softened and tender crisp.
- Stir in salt and pepper. Taste and add more salt and/or pepper as desired. Serve immediately.

BEST GREEN BEANS EVER!!! These beans are also known as Kentucky Wonders. They were the variety that my father always grew in our garden and are of the flat bean type. They have flavor galore! I have included a photo of the cans to show the brand and kind to purchase. A dish is always included on the menu at our family gatherings and are looked forward to.

- Fry bacon until crisp, crumble and set aside.
- Place drained beans with water in a medium size saucepan with lid.
- Add bacon drippings, onion, sugar and salt.
- Simmer on low heat for approximately 1 1/2 hours.
- Pour beans in a serving bowl and sprinkle crumbled bacon on top.

- Place the green beans in a saucepan with a lid and pour enough water over the beans to cover; bring to a boil. Reduce the heat to low and cover; simmer until the beans are tender but still crisp, about 10 minutes. Drain. Spread the beans onto paper towels to dry.
- Melt the butter in a large skillet over medium-low heat; stir the bread crumbs and Parmesan cheese into the melted butter. GREEN BEAN SALAD (EASY ITALIAN RECIPE - SERVED COLD OR HOT)
A super quick and easy hot or cold green bean salad, popular in Italy.

- Snap off the end(s) of the green beans and wash well (if they are fresh). If the beans are really long, you can cut/snap them in half. Frozen bean will be ready to use.
- Heat enough water in a pot to just cover the beans and bring to a boil. When boiling, toss in the beans. Cover and simmer for 5 minutes then add about ½ tsp of salt. Check to see if they are ready, but you may need to continue cooking for another 1 to 5 minutes. The size of the beans will determine how long they need to cook (mine were ready in about 8 mins).
- If you want to cool them quickly, or you might have cooked them longer than you wanted to, run them under cold water. If not, just drain and put into a bowl.
- Add the sliced garlic (if using). If not using garlic, you can add a strong wine vinegar. In Italy, it's either with garlic or vinegar, but not both (according to my mother). Drizzle the extra virgin olive oil over the beans. Add the red wine vinegar if you didn't add garlic, and finally, salt if necessary (it will almost definitely need more salt).
- Toss and mix well and either serve immediately, or refrigerate if serving cold.

- Prep all vegetables according to specifications above.
- Bring a large pot of water to a boil. Once the water comes to a boil, add salt, then the beans. (See NOTE below.)
- Boil the beans for about 5 minutes or until they are soft. Remove & set aside, keeping the water for boiling the potatoes.
- Bring the pot of water back up to a boil, covering the pot if necessary. Then, add the potatoes to the boiling water and cook for about 10 minutes or until the potatoes are soft. Remove & set aside. Reserve 1-2 cups of the starchy potato water before discarding the rest of the water.
- While the vegetables are boiling, heat the oil in a large sauté pan on medium-high heat. Once the oil is hot, add the onions and sauté until they begin to lightly caramelize (about 10 minutes), stirring occasionally. Add the garlic and crushed red pepper and continue to sauté another 2 minutes.
- Add the cooked beans and potatoes to the onions and mix well. Continue to cook the mixture until the beans are very soft, adding a bit of the starchy potato water if more moisture is needed and partially covering the pan.
- Once the beans are cooked to your desired doneness, season the dish with salt and pepper, then finish with a drizzle of extra-virgin olive oil.
- Serve warm or at room temperature. Buon Appetito!
