3 Cups (375g) Mozzarella Cheese
4 Tbsp Creamcheese
2/3 Cup (80g) Coconut Flour​
4 Eggs
1tsp Garlic Powder
1Tbsp Butter
1Tbsp Italian Seasoning
1tsp Sea Salt

Steps:

  • Preheat the oven to 350F or 218C.
  • Shred mozzarella and place it into the nonstick pot. Heat it up and while mixing it slowly with a spatula, make sure all of the mozzarella is fully melted.
  • Once your mozzarella is fully melted, add butter and cream cheese and combine together while still hot.
  • Switch of the heat and slowly one by one add all of the other ingredients. Keep mixing best with a plastic spatula and make sure all of the ingredients are fully combined into one dough.
  • Add Eggs and combine fully until you get a perfect consistenc for working with dough
  • Separate the fathead dough into 8 pieces. Take each piece and with your hand roll it into small buns. In this step, you can still work each of the bun into a more smooth consistency for you to be able to roll the breadstics easier.
  • Let it sit for 15-30 minutes.
  • Prepare your baking sheet covered with either a parchment paper or a silicone sheet.
  • Once all prepared, roll each of the bun into a log and place it onto a baking sheet.
  • Season it with extra Italian herbs and corse salt.
  • Bake for 15 Minutes and enjoy.

2 teaspoons sugar
1 1/2 cups warm water
1/4 ounce active dry yeast* ((1 packet))
3 cups bread flour ((you may need as much as 3 3/4 cups))
3 tablespoons extra virgin olive oil
1 teaspoon kosher salt
egg wash ((1 egg beaten with 1 to 2 teaspoons water))
1/4 cup unsalted butter, (melted)
1/4 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon Italian seasoning

Steps:

  • Place the sugar in a large mixing bowl, and add the warm water and yeast. Set aside for 5 minutes, or until the yeast has dissolved and looks foamy.
  • Add 3 cups of bread flour, the olive oil, and the salt, and mix on low speed until a stiff dough forms. (If the dough seems sticky, add up to 3/4 cup additional flour (1/4 cup at a time), until it pulls cleanly away from the sides of the bowl.)
  • Knead until dough is smooth and elastic, about 10 minutes.
  • Mist the bowl with non-stick spray, place the dough inside, and cover with plastic wrap.
  • Allow the dough to rise for 30 minutes.
  • Divide the dough into 16 equal portions, and shape each one into a rope (about 6 inches long), placing them on a parchment-lined baking sheet.
  • Mist a sheet of plastic wrap with non-stick spray, place it loosely over the unbaked breadsticks, and allow them to rise for 30 minutes.
  • Preheat the oven to 350 degrees F, and lightly brush the breadsticks with egg wash.
  • Bake the breadsticks for 12 to 14 minutes, or until just beginning to turn golden at the tips.
  • Stir the melted butter, salt, garlic powder, and Italian seasoning together, and brush the mixture over the warm breadsticks.

These are crunchy Italian breadsticks that will crack when you break them but they have a tunnel of tender, chewy bread on the inside.

1 cup warm water (105-115 F)
1 package (2 1/4 teaspoon active dry yeast ( If you use instant yeast -- just add instant yeast to the dry ingredients ))
1/4 cup olive oil
2 1/2 cups all-purpose flour
1/2 cup semolina flour
2 teaspoon honey
2 teaspoon salt
Topping of choice
1 tbsp dried oregano
1 tbsp dried basil
1 tbsp dried parsley
1 tbsp red pepper flakes
1 tbsp granulated garlic
1 1/2 tsp dried rosemary
1 tsp fennel seeds
1 tsp kosher salt

Steps:

  • In a large bowl, sprinkle yeast over warm water whisking until dissolved. Let stand 5-10 minutes until foam appears in the center. Now stir in the olive oil -- it won't incorporate but that's okay. Add the honey.
  • Whisk together the flours, salt ( instant yeast if you're using it instead of the active dry.)
  • Add the dry ingredients to the wet. You can use the stand mixer with the dough hook or you can knead by hand. If kneading by hand you may need to use an additional 2 Tablespoons of flour.
  • Continue kneading for 10 minutes - the dough should be smooth. Let the dough rest for 5 minutes.
  • Shape and stretch the dough into a 14" x 4" rectangle by pressing dough down with one hand and pulling the end with the other hand. Press and stretch from the other end. Make sure the dough stays at a width of 4". Repeat the process until the dough is 14" in length.
  • Brush the dough with olive oil and let it rest on your work surface. Cover the top and sides with plastic wrap. Let the dough proof for 1 hour at room temperature. The dough will be puffy and a finger will leave an imprint when you press into it.
  • Preheat oven to 450 F.
  • Remove plastic wrap from dough; brush with olive oil again.
  • Cut dough into 4 equal parts. Work with one quarter dough at a time, covering remaining dough with plastic wrap.
  • Sprinkle with topping of choice -- we chose Italian Seasoning. Make sure the topping covers completely to the edges. Lightly press the topping into the dough.
  • Cut the quarter piece into 6 strips.
  • Stretch and roll out the dough into 14-16" strips. The dough is very pliable and easy to work with.
  • When you reach the proper length twist the strips. You twist the dough by simultaneously rolling one hand forward and one had back.
  • Place the strips on a large baking sheet lined with parchment paper.
  • Bake 10-12 minutes until light brown. For even browning turn the sticks at 6 minutes.
  • Cut and roll the next quarter of dough while these bake.

1 1/2 cups warm water ((about 110°F) )
1 Tablespoon active dry yeast
2 Tablespoons granulated sugar
3-3 1/2 cups all-purpose flour (, plus more for rolling)
1 teaspoon table salt
1 Tablespoon extra-virgin olive oil
1/4 cup salted butter
3/4 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1/2 teaspoon parsley flakes
1 1/2 Tablespoons grated Parmesan cheese

Steps:

  • In a small bowl, mix the water, yeast and sugar until just combined. Cover with saran wrap and let sit for 5 minutes, or until it begins to foam.
  • In large bowl, combine 1 cup flour and salt. Stir in yeast mixture and olive oil and begin to knead by hand or using a dough hook. Add 1/2 cup flour at a time until the dough is smooth, but not sticky. Cover the bowl with saran wrap and allow the dough to rise for 15 minutes.
  • Preheat the oven to 400°F. Line two baking sheets with parchment paper or a silicone mat.
  • Lightly flour the counter or a breadboard and roll out into a rectangle. Use a pizza cutter to cut into 16 pieces. Leave long or twist the ends and then place the breadsticks on baking sheets.
  • Melt 4 Tablespoons butter and stir in garlic powder, Italian seasoning, parsley flakes and Parmesan cheese. Brush over the tops of the breadsticks.
  • Bake 12 to 15 minutes, or until the bottom of the breadsticks are lightly browned. Brush any leftover butter over the top when they come out of the oven.

3 teaspoons active dry yeast
1-1/2 cups warm water (110° to 115°)
4 tablespoons canola oil, divided
1 tablespoon sugar
1/4 teaspoon salt
4 cups all-purpose flour
1/2 cup butter, melted
3 tablespoons grated Parmesan cheese
2 tablespoons dried parsley flakes
1-1/2 teaspoons garlic powder

Steps:

  • In a large bowl, dissolve yeast in warm water. Add 1 tablespoon oil, sugar, salt and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky). Cover and let rest for 10 minutes. , On a lightly floured surface, roll dough into a 15-in. square. Cut in half lengthwise; cut each half widthwise into 1-in. strips., In a shallow bowl, combine the butter, cheese, parsley, garlic powder and remaining oil. Dip each strip into butter mixture, then twist two to three times. , Place 1 in. apart on greased baking sheets. Bake at 350° for 18-21 minutes or until golden brown. Serve warm.

  • In a shallow bowl, combine the cheese, Italian seasoning and garlic powder. Place butter in another shallow bowl. Separate dough into individual breadsticks. Dip in butter, then in cheese mixture. Twist 2-3 times and place on an ungreased baking sheet. , Bake at 375° for 12-14 minutes or until golden brown. Serve immediately.
