Homemade Italian Sauce image

Sauce like mom used to make. Serve over your favorite pasta. Classic red sauce with onion, mushrooms and garlic.

1 (16 ounce) can whole tomatoes
5 cloves garlic, peeled
3 tablespoons olive oil
1 white onion, chopped
1 pound mushrooms, sliced
1 (16 ounce) can crushed tomatoes
8 ounces tomato paste
1 green bell pepper, chopped
2 tablespoons dried oregano
1 tablespoon dried basil leaves

Steps:

  • In a blender chop the whole tomatoes with juice and garlic until chunky. In a medium size pot, heat oil on medium high heat. Put onion and mushroom in and saute for about 5 minutes.
  • Place in pot the blended tomatoes, crushed tomatoes, tomato paste, chopped green peppers, oregano and basil. Bring to boil, then lower to medium low, cover and stir periodically. Cook and reduce about 1 to 2 hours or to your liking.

4 Tablespoons Extra Virgin Olive Oil
3/4 Cup Finely Chopped Sweet Onion
2 Cloves Garlic, Peeled & Finely Minced
Prepared Plum Tomatoes Made from 2 1/2 Pounds Ripe Tomatoes (See Notes Above & Photos)
Sea Salt & Black Pepper
1 Bunch (About 10 Leaves) Fresh Basil, Minced

Steps:

  • Bring a pot of water to a boil.
  • To prepare the tomatoes, cut an X into the stem end and drop them into the boiling water for 2 to 3 minutes or until you see the skins begin to slip off.
  • Transfer the tomatoes to a colander in the sink and run cold water over them until they are cool enough to handle.
  • Use a small, sharp knife, and peel off the skins and cut in half.
  • Cut out the small core and then use your finger tips to scoop out most of the seeds.
  • Cut the tomatoes into thin strips or coarse dice.
  • In a saucepan, heat the olive oil over medium heat until sizzling, then cook the onion, stirring often, until it is soft and translucent.
  • Add the garlic and cook a minute or two just until fragrant.
  • Add the tomatoes, salt and pepper, and half the basil, and simmer for about 20 minutes or until the sauce has thickened.
  • Stir in the remaining basil, and use to top your favorite cooked pasta.

Although we plant a medium-size garden each year, we grow lots of tomatoes. This sauce is especially good because it's so chunky...and goes well with all kinds of pasta.

Number Of Ingredients 13

1 pound bulk Italian Sausage
8 cups diced peeled fresh tomatoes
2 medium green peppers, diced
1 large onion, diced
1 to 2 garlic cloves, minced
1 can (15 ounces) tomato sauce
1-1/2 cups water
2 tablespoons dried parsley flakes
1 tablespoon dried oregano
1 tablespoon dried basil
1 tablespoon Italian seasoning
1 teaspoon salt
Cooked pasta

Steps:

  • In a large Dutch oven, brown and crumble sausage; drain. Add tomatoes, green peppers, onion, garlic, tomato sauce, water and seasonings. Cook, uncovered, for 2-1/2 hours or until sauce reaches desired thickness. Serve over pasta.

We love making pasta topped with this delicious sauce that will make you think you're eating at Olive Garden!

3 28 oz. cans of Crushed Tomatoes
4 cloves garlic
4 Tablespoons dried basil
1 ½ tsp Black pepper
1-2 TBSP Sugar (optional) - this takes out the bitterness and makes it a little sweet
2 TSBP olive oil
⅓ cup grated Parmesan or Romano Cheese
Minced Green Peppers (optional)

Steps:

  • Heat the olive oil in a 5+ qt. pot over medium heat, and add the chopped or pressed garlic.
  • Heat for one to two minutes, making sure not to burn the garlic, then add all the tomatoes, black pepper, basil and sugar. Stirring often, bring to a low boil.
  • Reduce heat to low and simmer for 2-3 hours stirring often.
  • For the first half of the simmer time, do so with the pot uncovered, then cover.
  • Add the cheese, stir in and simmer for an additional 5 minutes or so.

SAN MARZANO TOMATO SAUCE

8 cloves minced garlic
2 tbsp extra-virgin olive oil
4-5 28oz cans San Marzano Peeled Tomatoes ((with juices))
2-3 tbsp amore sun-dried tomato paste
1/2 tsp (each) salt & black pepper
3 Tbsp fresh basil ((for dried basil - 1 Tbsp))
2 Tbsp fresh oregano ((for dried oregano - 2 tsp))

Steps:

  • Cook garlic: In a large pot on LOW-MEDIUM heat sauté garlic in olive oil for 30-60 seconds. Stir constantly to keep garlic from burning.
  • Add tomatoes and simmer: pour canned tomatoes with juices in with the garlic. Add tomato paste, salt, and black pepper. Mix ingredients together, partially cover with lid - but not completely, and simmer on LOW heat for 4+ hours. Stir every so often to avoid burning. Note: if using a parmesan rind, add it in this step and let it simmer with sauce until finished. Remove and discard rind when ready to serve.
  • For smooth sauce: when sauce is finished cooking, use a hand immersion-blender to puree. Note: If you prefer a chunkier/thicker sauce (like I do), you can skip this step as the San Marzanos naturally break down while cooking.
  • Add herbs: when sauce is finished, mix in chopped fresh herbs. Season with additional salt & black pepper if needed and serve!

Steps:

  • Heat the Olive oil in a Large frying pan/Skillet until very hot.
  • Add onions and stir until soft and slightly brown.Turn down the heat and add the garlic and Red wine. Leave for 1-2 mins.
  • Add tomatoes, basil, oregano, and bay leaves, turn the heat down and leave to simmer for approx 5 mins stirring occasionally. If using fresh tomatoes allow them to reduce slowly, this will take approx 20 mins.
  • Once mixture has simmered add puree and stir in, simmer for a further 5 mins.
  • Remove from the heat and cool. Sauce can be refrigerated for use later on, If using for Pizza topping use a blender until smooth and spread on pizza using the back of a spoon. If using for bolognese, brown mince and add when ready.
