  • In a skillet over medium heat, scramble eggs until almost done. Remove to a plate.

Eggs in Purgatory is an easy Italian dish that uses basic pantry ingredients and takes less than 30 minutes. This recipe allows two eggs per person - you can suit yourself how many you think you would like per person. ⅓ cup extra virgin olive oil
½ onion
1 garlic clove
14.5 oz (1 small can or 400g) canned whole tomatoes in tomato juice
½ teaspoon chilli flakes (or to your taste)
½ teaspoon salt
4 eggs
¼ cup grated Parmesan cheese
basil leaves
crusty bread (for serving)

Steps:

  • Finely chop onion and garlic.
  • Heat oil in skillet and add the onion.
  • Gently fry the onion until translucent and cooked through.
  • Add the garlic and cook for another minute or so.
  • Crush the tomatoes. Use a food processor or pour tomatoes into a bowl and crush with a potato masher or fork.
  • Add tomatoes, chilli flakes and salt to the skillet.
  • Gently simmer for 10 minutes until slightly reduced, stirring every now and then.
  • Take the skillet off the heat and make four little indents for the eggs.
  • Crack an egg into a small bowl and slip the egg into one on the indents. Repeat with the remaining eggs.
  • Return skillet to a medium heat and cover with a lid.
  • Cook for 6-8 minutes or until eggs are cooked to your liking.
  • Serve immediately sprinkled with grated Parmesan cheese and chopped fresh basil and toasted bread on the side for dunking and scooping.

1 (28 oz.) canned diced tomatoes*
½ tsp. salt
½ tsp. dried oregano
1/4 tsp. pepper
1/8 tsp. red pepper flakes
4 large eggs
1 tsp. olive oil
¼ cup shredded Parmesan cheese
¼ cup chopped fresh basil or parsley (optional)

Steps:

  • Pour the can of tomatoes with their juice into a large skillet.
  • Stir in the salt, oregano, pepper, and red pepper flakes. Bring to a simmer over medium-high heat.
  • Reduce the heat to low and simmer the sauce for 5 minutes. Taste. Add more seasoning, if desired.
  • Use the back of a spoon to nudge some tomatoes apart. Carefully crack an egg into the liquid where the tomatoes used to be. Make space for another egg and then crack it in. Repeat with the remaining eggs. The eggs should not be submerged but should be nestled among the tomatoes.
  • Increase the heat to medium-low and cover the skillet. Cook until the whites have solidified but the yolks are still runny, 7-10 minutes. Note that with my stove and my skillet I have to turn the pan periodically so that the eggs heat evenly and cook in the same amount of time. You may need to do the same.
  • When the eggs are cooked to the desired doneness, drizzle each egg with some olive oil and sprinkle with Parmesan and basil/parsley (if using).

A tasty and budget friendly meal that's inspiration comes from a local Italian restaurant. Prep time and cook time do not include making or grilling the polenta. As I use Parmesan cheese polenta I have made the night before and therefor just slice and grill it. You could also buy and use pre-made polenta although to me it has less flavor.

1 tablespoon olive oil
1 onion, diced
1 large garlic clove, minced
14 ounces diced fire-roasted tomatoes
salt and pepper
2 eggs
2 slices provolone cheese
4 slices prepared polenta, grilled

Steps:

  • Heat olive oil over medium heat and add diced onion sauteing till pale give or take about 3 minutes. Add garlic and diced tomatoes and heat for about 2 minutes. Season to taste with salt and pepper.
  • Break eggs into skillet and cook for 2 minutes. Top each egg with slice of provolone. Cover skillet and reduce heat to low. Simmer 3 to 5 minutes or untill eggs are firm with soft centers and cheese has melted.
  • Carefully spoon tomatoes and egg into two flat soup bowls and place two slices of grilled polenta into each of the two bowls on outer edge.

4 ounces pancetta (coarsely chopped)
1/2 cup chopped onion
8 thin asparagus stalks (trimmed, cut crosswise into 1/2-inch pieces)

Steps:

  • Bring a large saucepan of salted water to a boil. Add the orzo and cook until al dente, stirring occasionally, about 5 minutes. Drain the orzo.
  • Whisk the eggs, salt, and pepper in a medium bowl to blend. Stir in the cheese and basil. Set aside.
  • Melt the butter in a large nonstick skillet over medium heat. Add the pancetta and saute until crisp and golden, about 5 minutes. Add the onion and saute until tender, about 2 minutes. Add the asparagus and saute until crisp-tender, about 2 minutes. Add the orzo and stir to coat. Add the egg mixture. Using a rubber spatula, stir the mixture until the eggs are softly set, about 4 minutes.

1.5 tablespoons extra-virgin olive oil
4 ounces low-moisture mozzarella, sliced into 8 pieces
12 ounces hot Italian turkey sausage, casings removed
1.5 cups chopped yellow onion
3 garlic cloves, chopped
1 28-ounce can crushed tomatoes
1.5 teaspoons fresh oregano, plus more for serving
0.75 teaspoon kosher salt
4 large eggs
0.25 teaspoon black pepper

Steps:

  • Preheat the oven to 400°F. Place the baguette slices on a baking sheet; brush with the oil and top each with 2 pieces of the mozzarella. Bake until the cheese is bubbly and light golden brown, about 12 minutes.
  • Meanwhile, heat a large ovenproof nonstick skillet over medium-high. Add the sausage and cook, stirring and breaking it apart with a wooden spoon, until almost cooked through 5 minutes. 1 small red onion (diced (about 1 cup))
3 cloves garlic (minced (about 1 tablespoon))
1 can reduced-sodium chickpeas ((15 ounces), rinsed and drained)
1 jar good-quality tomato pasta sauce ((24 ounces))
1 teaspoon dried oregano
1 teaspoon kosher salt
1/4 teaspoon red pepper flakes
5 ounces baby spinach
4 large eggs
1/2 cup Parmesan cheese (freshly grated )
fresh basil (chopped)
Baguette slices (for serving)

Steps:

  • Place a rack in the center of your oven and preheat the oven to 375 degrees F.
  • Heat the olive oil in a large, ovenproof, nonstick skillet over medium-high. Add the onion and cook, stirring often, until the onion is translucent, about 3 minutes. Add the garlic and cook just until fragrant, about 30 seconds.
  • Stir in the chickpeas, tomato sauce, oregano, salt, and red pepper flakes. Bring to a simmer and let cook until slightly thickened, about 3 minutes.

Soft-cooked eggs simmered in a robust tomato sauce flavored with garlic, herbs, and red pepper flakes. This Eggs in Purgatory recipe requires a handful of ingredients and is ideal to serve for breakfast, brunch, lunch, or even dinner!

3 tablespoons olive oil
4 cloves garlic, minced
½ - 2 teaspoons crushed red pepper flakes (to preference)
¼ cup finely chopped onions
1 (28-ounce) can crushed tomatoes
2 tablespoons EACH: chopped parsley AND torn basil, plus more for serving
5-6 large eggs
no knead bread, for serving

Steps:

  • SAUCE: Grab a large skillet that you have a lid for. Starting in a cold skillet, add the olive oil, minced garlic, and red pepper flakes to the skillet and sauté for 5 minutes over low heat, stirring occasionally so nothing burns. Then kick up the heat to medium-high, add the onions and continue to stir and cook for an additional 3-4 minutes. Pour in the tomatoes and season with a generous sprinkling of salt. Add the chopped parsley and basil and cook over medium-low heat until it reaches a simmer. Then, let simmer for 12-14 minutes.
  • EGGS: Add a cracked egg into a bowl. Using the back of a spoon, make a well in the sauce. If the well holds for 30-40 seconds, the sauce has reduced. If it doesn't allow for it to continue cooking for a few more minutes. Then gently add the cracked egg into the prepared divot. Repeat this with the remaining eggs. Cover and cook for 2-3 minutes if you prefer runny egg yolks, and another 1-2 minutes for more firm eggs.
  • BREAD: While the eggs are cooking, drizzle the bread with a little olive oil and toast on a hot grill or griddle. Rub with a clove of cut garlic if you want it to be extra special and sprinkle with a hint of Maldon salt.
  • FINISH: When the eggs are done, serve topped with additional chopped basil/parsley with fresh parmesan (optional) on top and sprinkle with salt and pepper as desired.

1 slice rustic white bread (1/2-inch-thick)
1 garlic clove
1 tablespoon grated Parmesan
1/4 cup warm Simple Tomato Sauce, recipe follows, or store-bought chunky marinara sauce, drained of excess liquid
1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
Sea salt and freshly ground black pepper

2 (32-ounce) cans crushed tomatoes
4 to 6 basil leaves
2 dried bay leaves
4 tablespoons unsalted butter, optional

Steps:

  • Heat 2 teaspoons of oil in a heavy small skillet over medium heat. Crack the egg into the skillet. Sprinkle with salt and pepper. Cover and cook until the white is firm and the yolk is almost set, about 4 minutes. Season with salt.
  • Meanwhile, toast the bread until golden brown. Rub the garlic over the toast. Sprinkle with the Parmesan. Spoon the drained marinara sauce over the Parmesan. Top with the egg. Place the open-faced sandwich on a plate and serve.
  • In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and simmer covered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.
  • Add half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
  • If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.
