Italian Chicken Soup is an easy one pot soup recipe made in an hour. Chicken breasts, zucchini, diced tomatoes, and pasta in a savory Italian chicken broth.

2 pounds chicken breasts (, diced (boneless and skinless))
2 tablespoons canola oil
1 yellow onion (, chopped)
2 garlic cloves (, minced)
1 cup carrot (, sliced)
2 cups kale (, chopped)
2 zucchini (, sliced and quartered)
14.5 ounces canned diced tomatoes (, drained)
1 tablespoon Italian seasoning
salt and black pepper (, to taste)
8 cups chicken broth
1 cup shell pasta

Steps:

  • Add the canola oil to a large dutch oven on medium heat and add the chicken, garlic and onions, cooking until the chicken is cooked through and the onions are translucent, about 5-6 minutes.
  • Add carrots and cook for 5 minutes.
  • Stir in zucchini, tomatoes, kale, Italian seasoning, and salt and black pepper.
  • Add the chicken broth and bring to a boil before reducing to a simmer for 25 minutes.
  • Add pasta to the soup and continue cooking for 13-15 minutes, partially covered, until pasta is tender.

Italian Wedding soup is a hearty, classic soup made quickly on the stovetop!

8 oz ground beef
8 oz ground pork
1/2 cup plain or Italian breadcrumbs
1/3 cup whole milk
3 Tbsp minced fresh parsley
1 tsp kosher salt
1/2 tsp dried oregano
1/2 tsp black pepper
1/2 cup shredded Parmesan cheese
1 large egg
3 Tbsp olive oil ((divided))
1 medium yellow onion, (minced)
2 large carrots, (peeled and diced)
2 stalks celery, (diced)
3 cloves garlic, (minced)
1/2 tsp kosher salt
1/4 tsp black pepper
1/4 tsp dried dill
1/2 cup dry white wine ((chardonnay is my favorite))
9 - 10 cups reduced sodium chicken broth or bone broth
1 cup dried, uncooked acini di pepe pasta
5 oz chopped baby spinach
shredded Parmesan cheese (for serving)

Steps:

  • Add all meatball ingredients except olive oil to a large mixing bowl. Gently mix until fully combined. Shape into small meatballs, about 1 inch in diameter.
  • Heat 2 Tablespoons olive oil in large dutch oven over medium high heat. Add about half the meatballs and cook about 3 minutes per side, turning to brown all over. Transfer to plate. Repeat with remaining meatballs.
  • Add remaining 1 Tablespoon olive oil to the same dutch oven and reduce heat to medium low. Add the onion, carrots and celery and cook 5 minutes, until softened. Add garlic and cook 30 seconds, or until fragrant. Season with salt, pepper, and dill.
  • Add wine and deglaze the pan, scraping the bottom of the pot with a wooden spoon to loosen any browned bits. Add the chicken broth and bring to a boil.
  • Add pasta and meatballs to the pot and cook 8-10 minutes, until pasta is tender and meatballs are cooked through. During the last minute of cooking, add spinach and let it wilt.
  • Serve hot, sprinkled with shredded Parmesan cheese.

1 medium green pepper, chopped
1 medium sweet red pepper, chopped
1 medium onion, chopped
1 celery rib, thinly sliced
1 small carrot, thinly sliced
1 garlic clove, minced
4 cups water
1 can (28 ounces) Italian crushed tomatoes
1 can (14-1/2 ounces) reduced-sodium chicken broth
3 tablespoons grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup uncooked elbow macaroni
7 tablespoons shredded part-skim mozzarella cheese

Steps:

  • In a nonstick Dutch oven coated with cooking spray, cook the chicken over medium heat until no longer pink. Remove and keep warm., Add peppers, onion, celery and carrot to pan; cook and stir until crisp-tender. Add the garlic; cook 1 minute longer. Add the chicken, water, tomatoes, broth, Parmesan cheese and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 40 minutes. , Stir in macaroni; cook 20 minutes longer or until macaroni is tender. Sprinkle each serving with mozzarella cheese.

3 cups chicken stock or broth
3 cups beef stock or broth
1 14.5 ounce can diced tomatoes with basil, garlic and oregano

2 cups baby spinach leaves, coarsely chopped
¼ cup fresh basil leaves, coarsely chopped
2 ounces Parmesan cheese, grated

Steps:

  • In a large skillet, cook sausage over medium heat, stirring occasionally, until no pink remains. Drain and set aside.
  • Meanwhile, in a Dutch oven combine chicken and beef stock and undrained tomatoes; bring to boiling. Add ravioli and cook 7 minutes. Add sausage and return to boiling. Stir in spinach to wilt, then add basil. Divide among soup plates and top with cheese.

1 medium green bell pepper (chopped)
1 medium red bell pepper (chopped)
1 medium onion (chopped)
1 rib celery (sliced)
1 carrot (sliced)
1 garlic clove (finely chopped)
4 cups water
1 28 oz can crushed tomatoes
1 14.5 oz can chicken broth
3 Tablespoon Parmesan cheese
1 teaspooon Italian seasoning
½ teaspoon crushed red pepper
¼ teaspoon salt
¼ teaspoon black pepper
1 cup penne (or your favorite pasta)
Mozzarella cheese (shredded)

Steps:

  • Cook chicken in a dutch oven with a dash of olive oil until no longer pink, remove from pan, set aside and keep warm
  • Add peppers, onion, celery, carrot and garlic to the dutch oven and cook and stir until tender crisp
  • Add chicken, water, tomatoes, broth and parmesan cheese and seasonings, bring to a boil, reduce heat and cook for 40 minutes
  • Stir in pasta and cook for 20 minutes
  • Serve topped with Mozzarella cheese
