2/3 cup cake flour

5 extra-large egg yolks
2 teaspoons salted butter
1 cup water
6 tablespoons unsalted butter
1/8 teaspoon salt
1 cup all-purpose flour
4 extra-large eggs

Steps:

  • For the Italian custard cream: Put the milk and the vanilla in a saucepan and bring to a simmer over medium heat
  • In a bowl, whip together the sugar, flour, and egg yolks with a hand mixer
  • Ladle a cup of the milk-vanilla mixture into the bowl and beat to temper the yolks
  • Add the yolk mixture to the pot and beat over medium heat with the hand mixer until thick and creamy, about 1 minute
  • As you are beating, move the pot on and off the flame so that you don't scramble the eggs
  • (Buddy's Tip: The longer you cook this cream, the thicker it will become, so you can -- and should -- adjust the texture to suit your taste
  • ) Remove the pot from the heat, add the butter, and whip for 2 minutes to thicken the cream
  • Transfer to a bowl
  • Let cool, cover with plastic wrap, and refrigerate at least 6 hours or up to 1 week

  • Transfer the dough into a pastry bag fitted with the #6 plain tip
  • Pipe rounds onto two non-stick baking trays, about 2 inches in diameter by about ½ inch high, leaving 2 inches between puffs
  • (You should be able to make 24 puffs
  • ) Bake the cream puff shells in the oven, in batches if necessary, until they are golden brown and they have set enough that you can pick them up (test by gently pinching one with your thumb and forefinger to see if it can be lifted), 15 to 20 minutes
  • Remove the tray from the oven and let the shells cool on the tray for 20 minutes
  • (The cream puff shells can be frozen in a plastic freezer bag for up to 1 month; let come to room temperature before cutting and filling

2 cups whole milk (divided)
1 vanilla bean (split down the length)
strip of lemon rind
4 egg yolks
½ cup sugar
5 teaspoons plain (all purpose) flour (sifted)
5 teaspoons cornflour/cornstarch (sifted)
pinch salt
2 tablespoon unsalted butter (optional but recommended)

Steps:

  • Place 1 ¾ cups of milk, vanilla bean, and strip of lemon rind in a medium saucepan. Heat over medium heat until the milk just before simmering point. Don't boil. Stir in the sugar until dissolved and set aside.
  • In a bowl whisk egg yolks, flour, cornflour/cornstarch and salt until smooth. Whisk in the remaining ¼ cup of milk.
  • Remove lemon rind and vanilla bean from the milk.
  • Slowly pour the hot milk onto the egg yolk mixture, whisking constantly.
  • Strain the mixture back to the saucepan and place over medium heat. Whisk constantly until the mixture comes to the boil and thickens. Simmer for 1 minute to cook the flour.
  • If adding unsalted butter, whisk into hot pastry cream until melted and mixed through.
  • Pour the pastry cream into a heatproof bowl pressing plastic wrap directly onto the surface to stop a skin forming.
  • Refrigerate until thoroughly chilled.
  • Before using, stir until smooth.

½ tablespoon finely grated lemon zest (unwaxed lemon)
5 large egg yolks (room temperature)
120 grams sugar (½ cup)
40 grams rice flour or cornstarch/cornflour (⅓ cup )

Steps:

  • Place a medium size glass bowl in the freezer to chill.
  • In a small saucepan, heat milk with the vanilla and lemon zest just till you see steam rising, then remove from the heat and set aside.
  • Meanwhile, in a medium saucepan, whisk the yolks and sugar, add rice flour and whisk till smooth and thick.
  • Pour the warmed milk slowly into the egg mixture**, stirring constantly. Once fully combined, place the saucepan on medium-low heat. Keep stirring till it thickens (around 5 minutes), ensuring it doesn't stick to the bottom of the pan, then remove from the heat.

3/4 cup cream whipping/whole cream
4 egg yolks
1/2 cup granulated sugar
2 1/2 tablespoons flour
1/2 teaspoon vanilla
1 cup milk ((divided))
1/3 cup sugar
3 egg yolks
1/2 teaspoon vanilla
3 tablespoons flour ((whisk in a small bowl))

Steps:

  • In a medium pot, heat over low the milk and cream, do not boil. Remove from heat and let cool to warm.
  • In a medium pot add yolks and sugar, whisk together until combined, then add flour and vanilla, place pot over low heat, slowly add warm milk/cream, whisking continuously until thickened. Remove to a glass bowl, cover with plastic wrap (make sure wrap touches the cream mixture) and refrigerate at least 2-3 hours.
  • In a medium pot add 3/4 cup milk and vanilla, heat on medium until milk just starts to boil, then remove from heat and let cool.
  • In a medium bowl add egg yolks and sugar, beat at medium-high speed until thick and creamy (approximately 5 minutes) slowly add 1/3 of the boiled cooled milk and continue beating, then slowly add the flour and continue beating until smooth.
  • Add egg mixture to the medium pot with remaining milk and cook over medium heat, continuously whisking briskly until mixture starts to boil, lower heat to medium/low and continue whisking while you slowly add the remaining 1/4 cup milk, once all the milk has been added remove from heat, transfer to a glass bowl and let cool completely. If not using immediately cover with plastic (make sure plastic touches the cream and refrigerate) Enjoy!

1/4 c sugar
2 egg yolks
1 egg
1/4 c cornstarch
1/3 c sugar
2 Tbsp butter
1 tsp pure vanilla extract
1 lemon peel (optional, but recommended)

Steps:

  • 1. In a heavy saucepan, stir together the milk and 1/4 cup of sugar. Bring to a boil over medium heat.
  • 2. In a medium bowl, whisk together the egg yolks and egg. Stir together the remaining sugar and cornstarch; then stir them into the egg until smooth. When the milk comes to a boil, drizzle it into the bowl in a thin stream while mixing so that you do not cook the eggs. Return the mixture to the saucepan, and slowly bring to a boil, stirring constantly so the eggs don't curdle or scorch on the bottom. Add Lemon Peel if desired.
  • 3. When the mixture comes to a boil and thickens, remove from the heat and remove lemon peel. Stir in the butter and vanilla, mixing until the butter is completely blended in. Pour into a heat-proof container and place a piece of plastic wrap directly on the surface to prevent a skin from forming. Refrigerate until chilled before using.
