ITALIAN COFFEE COOKIES
Inspired by Biscotti Regina, these cookies are soft and lightly sweetened which makes them perfect in the early morning or at night.

Steps:
- 1. In the bowl of your stand-mixer, beat oil, eggs, sugar and vanilla until smooth. Add flour 1/2 cup at a time until a nice smooth dough forms. If the dough is still sticky, pat with extra flour and form into an 10-inch log. Wrap in parchment paper and then a towel or plastic wrap. Freeze for approximately 15-20 minutes. Preheat oven to 350 degrees F. Cut dough into 1/2-inch thick slices. Place on a parchment lined cookie sheet. Bake for 12-15 minutes or until cookies and golden. Transfer to a wire rack and let cool.
ITALIAN S COOKIES / ESSE BISCOTTI
Steps:
- In a small bowl beat slightly the egg yolks, whole egg, zest and vanilla.
- In a large bowl add the flour, make a well in the middle and add the butter, sugar, salt and egg mixture. With a fork mix until almost combined, then move to a lightly floured flat surface. Knead gently to combine (don't over knead). Dough will be soft. Wrap in plastic and refrigerate one hour.
- Pre-heat oven to 400 F (200 C). Line 2 cookie sheets with parchment paper.
- Remove dough from the fridge and break off small pieces of dough, soften the dough slightly between your finger and roll into approximately 4-6 inches, form into an S shape. Place on prepared cookie sheets and bake for 10 minutes, reduce heat to 320F (150C) and bake for another 10-15 minutes or until lightly golden. Let cool completely before serving. Enjoy.

- Heat oven to 350°F. In large bowl, beat granulated and brown sugars, butter and egg with electric mixer on medium speed, or mix with spoon, until creamy. Stir in flour, 1 tablespoon coffee granules, the baking soda and salt. Stir in pecans and chocolate chunks.
- Drop dough by 1/4 cupfuls about 2 inches apart onto ungreased large cookie sheet.
- Bake 12 to 15 minutes or until golden brown and edges are set. Cool 4 minutes; remove from cookie sheet to wire rack. Cool completely, about 30 minutes.
- Meanwhile, in small bowl, dissolve 1/2 teaspoon coffee granules in water. Stir in powdered sugar until smooth and thin enough to drizzle. Drizzle cooled cookies with Coffee Drizzle.

- Begin this recipe by preheating the oven to 350 degrees F. and line a large baking sheet with parchment paper. In a medium bowl, whisk together the flour, baking soda, salt, and set aside.
- In a small bowl, stir together the instant espresso powder and warm water until the instant espresso has completely dissolved.
- Using a stand mixer or hand mixer on low speed, mix together the sugar, butter, egg, and vanilla extract until fully combined. Add in the coffee mixture and the flour mixture and mix to combine, careful not to over mix.
- Turn the mixture off and gently fold in the chocolate and spoon the cookie dough onto the prepared cookie sheet, in 1 heaping tablespoon of cookie dough, spaced at least an inch apart.
- Place into the oven and allow the cookies to bake 10 to 12 minutes, until the edges are set and the cookies are soft and puffy.
- Remove the cookies from the oven and allow them to cool for 5 minutes on the cookie sheet before removing. Serve the cookies warm or once they have cooled completely.

- Preheat the oven to 350°F/175°C. Position rack to middle.
- Line a large baking sheet with parchment paper.
- In a large mixing bowl, sift together flour, baking powder and salt. Set aside.
- In the bowl of a stand mixer fitted with the whisk attachment, whisk the eggs on medium-high speed until nice and frothy (about 3-4 minutes).
- Slowly add sugar. Continue to whisk until well combined and slightly thickened (about 2 minutes).
- Add the oil, extract, and zest. Combine well.
- Remove bowl from stand.
- Add the sifted dry ingredients and mix with a wooden spoon until well combined, dough will be soft.
- Scoop dough with a medium-sized cookie scoop and drop on a lightly floured surface (approximately 2 tablespoon or 25 grams).
- Roll out each piece in a 4-5 inch strand about ½ inch in diameter.
- Place on a parchment-lined cookie sheet and form into an S shape.
- Brush the tops of cookies with egg yolk mixture.
- OPTIONAL: sprinkle with sugar
- Bake for 15-17 minutes or until bottoms are lightly browned (this is a pale cookie).
- Transfer cookies to a wire rack to cool.
