Homemade Panforte image

Panforte a delicious Italian fruit cake from Siena, made with honey, nuts and candied fruit. The perfect Christmas cake to share with friends and family.

3/4 cup whole almonds roasted* ((100 grams))
3/4 cup whole hazelnuts roasted* ((100 grams))
1 1/2 cups candied fruit** ((280 grams))
1/4 cup +3 tablespoons honey ((150 grams))
1 tablespoon water
1 cup + 2 tablespoons granulated sugar ((125 grams))
1 cup + 3 tablespoons all purpose flour ((160 grams))
1 teaspoon cinnamon
3/4 teaspoon coriander powder
3/4 teaspoon ground cloves
3/4 teaspoon nutmeg
1 tablespoon powdered / icing sugar
3-4 tablespoons powdered / icing sugar

Steps:

  • Pre-heat oven to 300F (150C). Grease and flour parchment paper to fit an 8 inch (20cm) cake pan.
  • In a large bowl stir together the nuts and candied fruit. In a medium bowl whisk together the flour and spices. Set aside.
  • In a small pot stir together the honey, water and sugar, heat on medium heat stirring until mixture starts to boil, lower the heat to slow boil for about 2-3 minutes or until the sugar is completely dissolved. (There will be no gritty bits on the spoon when you are stirring).
  • Add the honey mixture to the nut mixture and stir to combine. Add the flour mixture and quickly combine well. (This is where using your slightly wet hands would probably be best).
  • Place the mixture into the prepared cake pan and with wet hands or the bottom of a wet metal spoon flatten the batter so it is even. Dust the top of the batter with a tablespoon of icing sugar before baking. Bake for about 35-40 minutes.
  • Let the cake cool for about 10-15 minutes, then run a wet knife around the outside of the cake and remove. Place on a cake stand or plate and let cool completely before dusting with icing sugar. Slice with a sharp knife and serve. Enjoy!

3 cups whole blanched almonds (roughly chopped)
1 ¾ cups whole hazelnuts (skinned or unskinned, roughly chopped)
2 cups diced candied orange peel
6 ounces dried apricots (diced)
5 ounces dried figs (diced)
1 cup unbleached all-purpose flour (or gluten-free flour blend)
2 tablespoons ground cinnamon
1 tablespoon Dutch-processed cocoa powder
1 teaspoon salt
1 teaspoon ground nutmeg
½ teaspoon ground cloves
¼ teaspoon freshly ground black pepper
1 ¾ cups granulated sugar (I used part orange sugar and part regular sugar.)
1 ¾ cups honey
6 tablespoons unsalted butter
confectioners sugar (for dusting)

Steps:

  • Position the rack in the middle of the oven and preheat oven to 325° F. Coat the pan with cooking spray, then lay a round of parchment in the bottom, and then coat the top of the parchment with cooking spray. Dust flour all the way around the sides and the bottom and tap out any extra. The panforte will be very sticky, so you want the pan to be well-prepared.
  • In the large bowl, toss together prepared almonds, hazelnuts, figs, apricots, and orange peels.
  • In the medium bowl, whisk together the flour, cinnamon, cocoa powder, salt, nutmeg, cloves, and ground pepper. Make sure all the dry ingredients are thoroughly combined. Add the dry ingredients to the fruit and nuts and toss together until everything is thoroughly coated.
  • In the medium sauce pan with the candy thermometer attached, add the sugar, honey and butter and cook over medium heat until the temperature reaches 217° F. Remove the pan from the heat and remove the candy thermometer. Quickly pour the sugar mixture over the fruit and nuts mixture and stir together with a nonstick spatula until everything is thoroughly coated.
  • Pour into the prepared baking pan and spread the mixture around evenly.
  • Bake for 15 to 20 minutes or until the surface is bubbly. Remove from the oven and allow to cool completely in the pan on a wire rack.
  • To serve, dust with powdered sugar and cut into thin slices. Wrap in parchment and plastic wrap to store.

1 cup of whole blanched hazelnuts
1 cup of whole blanched almonds
7 ounces of candied orange peel, in ⅓ inch pieces
3½ ounces of dried figs, stemmed and chopped into ⅓ inch pieces
Grated zest of one large organic orange
1¾ cups plus 3 tablespoon of all purpose flour
1 cup Dutch-processed cocoa
2 tsp. ground cinnamon
1 tsp. ground ginger
½ tsp. ground cardamon
½ tsp. ground cloves
½ tsp. freshly grated nutmeg
½ tsp. sea salt
½ tsp. freshly ground black pepper
5½ ounces of 70% dark chocolate, roughly chopped
¾ cup plus 1 tablespoon of honey
¾ cup plus 1 tablespoon of granulated sugar

Steps:

  • You can either use a 9 inch springform pan or an 8 inch square pan, in both cases grease well and line with parchment paper, grease the parchment paper. Using the square pan is recommended if you are cutting the Panforte into pieces to add to a cookie tray or wrap and give as holiday gifts.
  • Preheat the oven to 350 º.
  • Spread the hazelnuts and almonds on a baking sheet and roast for about 10 minutes or until they are light brown and fragrant. Reduce the temperature of the oven to 250 º and allow the nuts to remain in the oven if you are proceeding with the Panforte at this time. If not, remove the toasted nuts, reserve and warm when you are ready to proceed with the recipe.
  • Place the chopped candied orange peel, figs and orange peel in a large bowl and combine with a wooden spoon or with your hands.
  • Sift together the flour, cocoa powder, spices, salt and pepper twice, the second time sift directly over the fruit. Combine the dry ingredients well with the fruit to insure that the fruit is evenly coated.
  • Placed the chopped chocolate in a small heatproof bowl over a pan of barely simmering water, making sure that the bottom of the bowl does not touch the water - standard procedure for melting chocolate. Stir every so often to insure that all of the chocolate is melted. Once the chocolate has melted, turn off the flame however leave the bowl on top of the hot water to keep the chocolate warm.
  • Have a candy thermometer ready at the stove. Place the sugar and honey in a small saucepan over low heat, stirring from time to time. As soon as the sugar dissolves stop stirring and increase the heat to high. Allow the mixture to simmer until the syrup has reached 237º, the soft boil stage. The syrup comes to the correct temperature rather quickly, so keep a close watch. If the temperature rises about 237º, the recipe will still work but the panforte will be firmer.
  • Carefully pour the hot syrup over the chopped fruit and dry ingredients, add the warmed nuts straight from the oven. Adjust the oven temperature once again to 350º.
  • Pour the warm melted chocolate over the fruit and nuts and immediately stir everything together. Having the nuts warm will help the mixture come together as this is a very dense batter. The mixture will be thick and rather difficult to combine, have faith it will be fine.
  • Turn the mixture into the prepared pan with a large wooden spoon or spatula. Dampen your fingers and pat down so that it is even.
  • Bake for 18 minutes until the Panforte is set but not too hard. Remove from the oven and cool completely in the pan before slicing it into segments or bars. The Panforte keeps quite well, wrapped in plastic and stored in a cool dry place. It is actually better after a week when the flavors begin to develop. This is a very rich sweet and thin slices or small segments are all that is needed.

1 cup Italian 00 or all-purpose flour ((140g))
1 cup sugar ((200g))
3 cups mixed nuts (we used almonds and hazelnuts (300g))
1 heaped cup candied mixed peel ((200g))
½ cup runny honey ((150g))
¼ tsp ground cloves
¼ tsp ground coriander
1 tsp ground cinnamon
a pinch of nutmeg
powdered sugar ((icing sugar))

Steps:

  • Preheat the oven to 320°F (160°C).
  • Line a 7-8 inch cake pan with parchment paper making sure you line both the bottom and the sides. To help the baking parchment stick to the cake pan you can rub a little butter or spray a little oil on the cake pan first.
  • Mix the flour, spices, nuts and candied peel in a large mixing bowl, set aside.
  • In a large pot or Dutch Oven add the sugar and honey on a medium heat and stir until the sugar has dissolved and the mixture is slightly bubbling.
  • Turn the heat down low and add the flour and nut mixture to the honey, stir it quickly until it is thoroughly combined. It will be very sticky so a silicone spatula works best for this.
  • Once combined, spoon the mixture into the cake pan and smooth it out as you best you can.
  • Put in the oven and bake the panforte for 35 minutes, remove and allow to cool completely.
  • Once cooled remove from the cake pan and parchment paper and dust heavily with powdered sugar.
  • Slice and serve or store for later.

Just saw this on five's Cooking the Books and wanted to hang onto it. It comes from Fantastico! recipe book by Gino D'Acampo. I love the idea of a quick chocolate fix that looks elegant and doesn't require cooking! Cooking time = cooling time, 2 hours for 'cake' to set, then another hour for the topping to set. (Note: contains raw egg whites)

250 g dark chocolate
3 medium egg whites
50 g candied peel
200 g ground almonds
100 g walnuts, crushed
50 hazelnuts, crushed
200 g icing sugar
4 tablespoons amaretto liqueur
100 g dark chocolate (for topping)
70 g icing sugar, plus extra for dusting (for topping)

Steps:

  • Melt the chocolate in a large heatproof bowl over a pan of simmering water, ensuring that the base of the bowl does not touch the water
  • Use a fork to beat the egg whites in a large bowl for 2 minutes. Add in the peel, ground almonds, the nuts, icing sugar and Amaretto. Mix well, then very gently fold in the melted chocolate.
  • Line a circular flan dish measuring about 18cm across and 3sm deep with clingfilm. Pour in the mixture and set aside for 2 hours.
  • To make the topping, melt the chocolate in a heatproof bowl over a pan of simmering water, ensuring that the base of the bowl does not touch the water
  • Melt the icing sugar and 2 tablespoons of water in a small saucepan over a low heat. Stir to check the sugar has melted, then add the chocolate to make a syrup.
  • Turn out the cake onto a plate and peel off the clingfilm. Use a spatula to cover the surface with the chocolate syrup. Set aside for 1 hour until the chocolate has hardened.
  • Serve in slices, dusted with icing sugar, with a cup of your favourite tea.

1 cup Hazelnut
1.1 cup Blanched Almond
½ cup all-purpose flour
0.5 cup Mixed dry fruits(raisins, sultanas, fig)
0.1 cup Candied Citron, lemon, orange peel
1½ tbsp Unsweetened cocoa powder
½ tsp Ground cinnamon
⅔ cup Sugar
60 ml Maple syrup
100 ml Honey

Steps:

  • Preheat oven to 180 °C . Place hazelnut on a tray and bake for 15 mins until it turns light brown. Keep it aside to cool.Bake almonds for 5 mins until it turns light brown. Let it cool. Chop hazelnut and almond coarsely. In a large bowl add nuts, candied fruit, spices, flour, salt and Cocoa powder.
  • Melt chocolate in a steel bowl by double boiler method.
  • Stir the melted chocolate into the chopped fruit and nut mixture.
  • Mix well until melted chocolate is evenly coated.
  • Meanwhile grease pan well and place a parchment paper below.In a sauce pan, stir together honey, sugar and maple syrup. Stir continuously until sugar has dissolved.
  • Wash the side's of the pan with silicon brush dipped in warm water.
  • Continuously boil the mixture over medium heat without stirring until the temperature reaches 115 °C.
  • Switch off heat and stir the boiled sugar, honey and maple syrup into the chopped nut, fruits and flour mixture and mix gently.
  • Transfer the mixture immediately to the greased pan and flatten the surface with wet hands. Spread evenly as the mixture will get hard quickly
  • Preheat oven to 150 °C and bake for about 30 to 35 minutes or until the surface forms blisters. Remove from oven and let it cool on a wire rack.
  • Once it's cooled, wrap tightly in a plastic wrap and store in a cool, dry place. Well wrapped Fruit cakes will stay for several months and can be served with cup of coffee or wine or as a dessert after a meal.

Blanched almonds( peeled by scalding them)-1 cup/ 120 gm
Candied mango cubes- 1 cup/ 160 gm
Blanched hazelnuts (peeled)-1 cup / 120 gm
Ground ginger- 1/5 tsp (optional)
Ground cinnamon-1/2 tsp
Unsweetened cocoa powder- 1 ¼ tbsp
Salt- ¼ tsp
All purpose flour- ½ cup / 70 gm
Semi-sweet chocolate chips- 100 gm/ ½ cup
Honey- 2/3 cup / 160 ml
Sugar (white)- 2/3 cup / 140 gm

Steps:

  • Preheat your oven to 180 degree C / 350 F.
  • Spray spring form pan with nonstick spray & line the bottom with parchment paper.
  • Bake raw hazelnuts & almonds about 10-15 minutes until they are fragrant and the skins go away easily.
  • Place the baked nuts on a wire rack. Cover with a clean kitchen towel. Allow the nuts steam for 5-10 minutes. Rub the nuts with your hands to get rid of the skins. Let them cool completely before you will chop them coarsely. I didn't chop my hazelnuts because I just like them this way.
  • Now in a large bowl, combine flour, chopped nuts, candied mango, salt, unsweetened cocoa powder, ground cinnamon & ground ginger.
  • Melt chocolate chips over the pan of simmering water. Pour in over fruit & nut mixture.
  • In a saucepan with a candy thermometer, mix together sugar and honey. Over medium heat bring it to boil. Sugar must dissolve. Continue to boil mixture until temperature reaches 115 degree C or 240 F( don't stir).
  • Pour honey-sugar mixture (syrup) over nut & fruit mixture. Combine quickly as it will stiffen immediately.
  • Transfer into the prepared spring form, evenly spread & bake 30 minutes (180 C/ 350F).
  • Dust the top of Panforte cake with confectioners or icing sugar.
  • You can store this Panforte cake up to 2 months. This cake is very reach so I advice to serve it in thin slices.

My husband Steingrim makes this fabulous fruit and nut cake every year for the holidays, and it's one fruit cake that you won't find people using for a door stop! No, our family members tussle over pieces of this stuff. :) The cake originates from Siena, in the Tuscan region of Italy, where it is very popular and is exported to many countries. It is a perfect accompaniment to after-dinner coffee.

4 ounces almonds
4 ounces hazelnuts
2 ounces dried apricots
2 ounces candied pineapple
2 ounces candied citrus peels (orange and lemon)
2/3 cup flour
2 tablespoons cocoa powder
1 teaspoon good ground cinnamon
2 ounces semisweet baking chocolate
1/3 cup sugar
1/2 cup honey
powdered sugar (for sprinkling)

Steps:

  • Chop almonds, hazelnuts, apricots, pineapple, orange and lemon peel.
  • Mix well with flour, cinnamon, and cocoa.
  • Put sugar and honey in a saucepan, stirring over medium heat until sugar is dissolved.
  • Bring to a boil, then reduce heat and simmer for 5 minutes.
  • Add chocolate to saucepan, stir until melted, and remove from heat.
  • Combine with fruit and nut mixture; cut parchment paper circle to fit bottom of 8" well-buttered round cake pan, then butter the paper and evenly spread the batter into the pan.
  • Bake at 300 degrees F for 35 minutes.
  • Let cool in pan.
  • Remove cake from pan, wrap in foil, and let stand overnight.
  • Sprinkle with powdered sugar and cut into thin wedges.
  • Wrapped in aluminum foil to stay air-tight, it will keep for weeks, refrigeration not needed.
  • Note: the Julesong photo accompanying this cake was taken about a month after it was made, because this cake can keep for so long and we forgot to take pics when it was newly done and the powdered sugar was still all pretty. :) Please excuse the slightly messy nature of the cake in the photo - we'll replace it with a good one, next year.
